Fresh peaches with a cookie crumb crust, cream cheese layer, and whipped topping.

1 (11.3oz) pkg. Pecan Sandies, finely crushed
1 8 oz pkg. cream cheese, softened
1 cup sugar
2 Tbsp milk
1 tsp vanilla
10 fresh peaches, peeled and sliced
1 pt. whipping cream
1/2 cup sugar
1/2 tsp vanilla

Steps:

  • Place about 2/3 of the crumbs in a 9×13 pan, set aside.
  • Beat cream cheese and sugar together in a mixing bowl until smooth. Beat in the milk and vanilla.
  • Drop by spoonfuls over the crumbs. Spread carefully using a spoon dipped in hot water. Keep dipping the spoon in the water so the mixture doesn't stick to it. The crumbs will slide around, but that is okay. It doesn't need to be perfectly smooth.
  • Arrange the sliced peaches over the top.
  • Whip the cream and add the sugar and vanilla. Spread over the peaches. Sprinkle the last half of crumbs over top.
  • Cover and chill for 2-3 hours, or over night.

1 1/2 cups plain flour
1/2 cup pecans, Chopped
1/4 cup brown sugar, Packed
1/2 cup butter, melted
8 ounces cream cheese, softened
8 ounces whipped topping
2 cups peaches
1 3/4 cups powdered sugar
1/2 teaspoon almond flavoring

Steps:

  • FOR CRUST: Combine flour, sugar and pecans.
  • Add the butter.
  • Mix well and press mixture in bottom of 13 x 9 baking dish.
  • Bake at 350F for 18-20 minutes.
  • Cool.
  • FOR FILLING: Beat cream cheese and powdered sugar at medium speed until light and fluffy.
  • Fold in whipped topping and almond flavoring.
  • Drain peaches and add to whipped topping mixture.
  • Spoon over cooled crust and chill for several hours.

1/4 cup sugar
3 cups chopped fresh peaches
1 1/2 cups all-purpose flour
1/4 cup firmly packed brown sugar
1/2 cup chopped pecans
1/2 cup butter or 1/2 cup margarine, melted
1 (8 ounce) package cream cheese, softened
1 3/4 cups powdered sugar
1 (8 ounce) container Cool Whip, thawed
1/2 teaspoon almond extract

Steps:

  • Put the chopped peaches in a bowl, sprinkle sugar over the peaches, let sit for 30 minutes.
  • In another bowl, add the flour, brown sugar, and pecans; stir to mix.
  • Add in the melted butter; stir to combine.
  • Press the mixture onto the bottom of a 13x9 inch baking dish.
  • Bake at 350° for 18-20 minutes; set baking dish on a wire rack to cool.
  • In another mixing bowl, add the cream cheese and powdered sugar.
  • Using an electric mixer, beat at medium speed until texture is fluffy.
  • Fold in Cool Whip and almond extract.
  • Drain peaches; gently fold peaches into the cream cheese mixture.
  • Spoon evenly over crust.
  • Cover and let chill for 3-4 hours.
