SPINACH SALAD WITH POMEGRANATE DRESSING AND CRISPY WON TON "CROUTONS"



Spinach Salad with Pomegranate Dressing and Crispy Won Ton

Yield 8 servings (serving size: 1 1/4 cups)

Number Of Ingredients 14

1/3 cup fresh orange juice
2 tablespoons pomegranate molasses
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1/8 teaspoon black pepper
Croutons, recipe follows
12 cups torn spinach (about 6 ounces)
1 cup thinly sliced red onion
Two 11-ounce cans mandarin oranges in light syrup, drained
2 teaspoons ground cumin
2 teaspoons ground coriander
1/2 teaspoon salt
12 ounces won ton wrappers, cut into 1/4-inch strips
2 teaspoons vegetable oil

Steps:

  • To prepare salad, combine juice, molasses, olive oil, salt, and pepper in a small bowl, stirring with a whisk. Combine Croutons, juice mixture, spinach, onion, and oranges; toss well to coat. Serve immediately.
  • Preheat oven to 400 degrees.
  • To prepare croutons, combine first 3 ingredients in a small bowl. Place won ton strips and vegetable oil in a large zip-top plastic bag; seal and toss to coat. Open bag. Sprinkle with cumin mixture; seal and toss to coat.
  • Place won ton strips in a single layer on 2 baking sheets. Bake at 400 degrees for 8 minutes or until crisp; turn strips once. Cool.

Spinach and Endive Salad with Lemon-Ginger Dressing and Crisp Won Ton Strips image

Number Of Ingredients 9

1 1/2 tablespoons fresh lemon juice
1 tablespoon finely grated peeled fresh gingerroot
1 teaspoon sugar
1 tablespoon water
3/4 teaspoon Asian sesame oil
2 Belgian endives
1 1/2 cups lightly packed small spinach leaves
1 1/2 cups lightly packed tender watercress sprigs
Accompaniment:Crisp Won Ton Strips

Steps:

  • In a bowl whisk together dressing ingredients and salt and pepper to taste. Cut enough endive crosswise into 1/2-inch pieces to measure 2 cups. In a large bowl toss together endive, spinach, watercress, dressing, and salt and pepper to taste.
  • Serve salad topped with won ton strips.

This is a great salad that is often served at luncheons. The crisp won tons with the green salad are a nice combination. Prep time will include frying won tons.

2 cups cubed cooked chicken (sometimes I leave the chicken out)
6 teaspoons sesame seeds (toasted -optional)
6 green onions, chopped
1 can sliced water chestnuts, drained
1 package wonton wrapper, cut into fourths & deep fried (make as many as to taste-we like lots)
1 head green leaf lettuce, torn into bite size pieces
1 can mandarin orange, drained
1/2 cup sugar
1/2 cup vegetable oil
1/4 cup vinegar
2 teaspoons Accent seasoning
2 teaspoons salt

Steps:

  • Mix salad ingredients in a large bowl.
  • Mix dressing ingredients in a mixer or with wire whisk.
  • Toss salad with dressing and won tons just before serving.

STRAWBERRY SPINACH WON TON SALAD

My sister's friend caters, and gave her this recipe. I've yet to have someone try it and not rave about it! You can substitute raspberries for the strawberries as well. I've also sprayed my won-tons with olive oil and baked them at 400* for 5 minutes instead of deep frying them.

1 lb spinach
5 -6 pieces bacon, cooked and crumbled
3/4 cup slivered almonds, toasted
1/2 cup freshly grated parmesan cheese
2 cups sliced strawberries or 2 cups raspberries
3 -4 ounces wonton wrappers, diagonally cut and fried
1/2 cup red wine vinegar
1/2 teaspoon dry mustard
1 teaspoon salt
1/2 cup sugar
1/2 cup strawberries or 1/2 cup raspberry jam
3/4 cup oil

Steps:

  • Directions:
  • Set oil at 350* and deep fry the won tons until lightly brown and crisp. Or spray with olive oil spray and bake 400* for 5 minutes.
  • Cook bacon and crumble, or buy pre-cooked bacon and cut into pieces.
  • Put the almonds in a frying pan over medium heat, and continue to move around until lightly browned, and set aside until cooled.
  • Slice strawberries.
  • For Dressing, mix red wine vinegar, mustard, salt, sugar and raspberry jam. Then add oil and shake or mix well. Refrigerate after serving.
  • Layer salad ingredients. Serve dressing on the side.

12 wonton wrappers
1 cup of lettuce leaves
4 hard boiled eggs
2 tablespoons diced celery
3 strips bacon, fried crispy and crushed
1/4 cup mayo or more if needed
1/4 teaspoon salt, pepper to taste

Steps:

  • Preheat oven to 375 degrees F. Spray the inside of a muffin tin with nonstick spray. Fit one wonton wrap into each muffin hole. Give wonton wraps another quick spray of the nonstick spray so they turn glossy. Bake for 8 minutes, or until lightly browned. Remove from oven and let cool completely. Peel your eggs and finely chop them. Add chopped eggs and all other ingredients to a bowl. Mix and mash lightly, stirring to incorporate. Taste and adjust salt as needed. Tear small pieces of lettuce and add to each cup. Add egg salad on top of lettuce to fill cup and serve. Tip: Can easily double the batch if serving a crowd.
