HONEY CHILI CHICKEN WINGS

Steps:
- Coat chicken wings in flour that has been seasoned with salt. Heat enough vegetable oil in a large skillet on stovetop to fry wings until crisp. Remove wings from skillet, drain on paper towels and set aside. (Wings can also be baked in the oven without the flour.)
- Heat 1 tablespoon vegetable oil in frying pan and add ginger, cook for 1 minute. Add in honey and stir for an additional minute. In a separate bowl, combine corn flour, water, hot sauce, lemon juice, and soy sauce, then add mixture to pan. Stir until sauce boils and thickens. Add in chicken wings and combine with sauce until thoroughly heated. Add shallots and cook for 1 more minute.
- Serve Buffalo Wings with blue cheese dressing, carrots and/or celery sticks.
SWEET THAI CHILI CHICKEN WINGS

- In a bowl whisk together peanut oil, rice vinegar, 2 teaspoons soy sauce, garlic, ginger and chili oil (if using). Place chicken wings in marinade and toss to coat. Cover and refrigerate for at least 1 hour.
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Place marinated chicken wings on top, cook 20 - 25 minutes or until chicken is cooked through and skin has darkened. Turning once.
- In another bowl whisk together sweet Thai chili sauce, 1 teaspoon of sriracha and remaining teaspoon of soy sauce. Taste and add more sriracha if desired.
- Transfer hot wings to the bowl and toss to coat.
- Serve with plenty of napkins.

Steps:
- Cut each chicken wing into 3 pieces. Discard wing tips or reserve for stock.
- Heat oil in wok or skillet and fry joints on high heat for 3-4 minutes, or until browned.
- Add soy, honey, wine or sherry, garlic and ginger, stir well.
- Reduce heat to low, cover and simmer about 30 minutes or until tender.
- Stir frequently towards end of cooking and make sure the sweet does not burn.
- Serve warm (the book says or at room temperature - I prefer them warm), either with white rice (serves 4) or as a main course for two (served with a cool beer in front of the TV).
- Note: This recipe can use a whole chicken, cut up, instead of only the wings.
HONEY SOY CHICKEN WINGS
These are great for parties, Super Bowl weekends and barbeques. I once made a batch with 200 wings for a party and there wasn't a single wing left at the end of it!

Steps:
- Combine one set of the scallions, soy sauce, hoisin, sesame oil, honey, ginger, vinegar, mustard, cayenne pepper and garlic in a large bowl.
- Add the wings, tossing to coat.
- Cover and refrigerate up to 1 day (24 hours).
- Preheat oven to 375 degrees F.
- Remove the wings from the marinade and throw away the marinade.
- Arrange the wings in a single layer on baking sheets.
- Bake for 15 minutes, turn, baste, and bake for another 15 minutes.
- Increase the temperature to 450 degrees and bake for another 15 minutes, or until crispy and browned.
- Remake the marinade and pour it into a saucepan.
- Bring the mixture to a boil.
- Boil for 5 minutes or until slightly thickened.
- Pour into a serving bowl and use as a dipping sauce.

- Cut wings intp three pieces (save tips for making stock).
- Heat oil in wok and fry the larger joints on high heat for 3-4 minutes or until browned.
- Add Soy, Honey, Wine, Garlic and Ginger, stir well.
- Reduce heat to low, cover and simmer for 30 minutes or until the wings are tender.
- Towards the end watch the wings carefully, stir frequently to make sure the glaze does not burn.
- Serve warm or at room temperature.

Chicken wings are always great for parties, I served these recently with my hot hot hot chicken wings, and it was a nice balance of flavours. (Australian Tablespoon is 4 teaspoons)

Steps:
- Cut tips off chicken and discard. Place wings in a non reactive shallow dish.
- In a small bowl combine remaining ingredients, and mix well.
- Refrigerate overnight, or a few hours.
- Cook on a lightly oiled bbq grill for about 5 minutes each side on a med-high heat. (Adjust cooking time depending on your bbq) or until chicken is tender and cooked through.
