I'm always looking for creative ways to jazz up pizza. I came up with this "pizza turnover," to incorporate my love of buffalo chicken wings and created this scrumptious buffalo chicken calzone. -Ruth Ann Riendeau, Twin Mountain, New Hampshire

1 can (8 ounces) pizza sauce
2 teaspoons plus 1/2 cup hot pepper sauce, divided
1-1/4 pounds boneless skinless chicken breasts, cubed
3 celery ribs, chopped
3 tablespoons butter
Dash Cajun seasoning
2 tubes (13.8 ounces each) refrigerated pizza crust
1-1/2 cups shredded Monterey Jack cheese
1 cup crumbled blue cheese
Cornmeal

Steps:

  • In a small bowl, combine pizza sauce and 2 teaspoons hot pepper sauce; set aside. In a large skillet, cook chicken and celery over medium heat in butter for 3-5 minutes or until chicken is no longer pink; drain if necessary. Stir in Cajun seasoning and remaining hot pepper sauce; cover and simmer for 10-15 minutes or until heated through. , Unroll pizza dough; divide each portion in half. On a floured surface, roll each into an 8-in. circle. Spread pizza sauce mixture over half of each circle to within 1 in. of edges. Top with chicken mixture and cheeses. Fold dough over filling; pinch edges to seal., Sprinkle greased baking sheets with cornmeal. Place calzones over cornmeal. Bake at 400° for 10-12 minutes or until golden brown.

This recipe is tasty and very easy to make. Great to slice up for a party or for Sunday football. Serve with blue cheese dressing for dipping sauce.

1 pound skinless, boneless chicken breast halves
2 tablespoons butter
¼ cup Buffalo wing sauce
1 refrigerated pizza dough
2 tablespoons vegetable oil, divided
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 410 degrees F (210 degrees C). Grease a pizza pan.
  • Place chicken into a large pot and cover with salted water; bring to a boil. Cook the chicken breasts until no longer pink in the center and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a bowl and shred with two forks.
  • Melt butter in a skillet over medium-high heat. Cook and stir chicken and Buffalo wing sauce in the hot butter until chicken is coated and heated through, 2 to 4 minutes.
  • Turn pizza dough out onto a generously floured surface. Roll dough into a 12-inch round. Brush dough with 1 tablespoon vegetable oil and spread 1 cup mozzarella cheese in the center of the dough, leaving a 1-inch border. Spread chicken mixture over cheese; top chicken mixture with remaining 1 cup cheese.
  • Fold pizza dough in half and pinch edges together to seal. Transfer calzone to prepared pizza pan and brush top with remaining 1 tablespoon oil.
  • Bake in the preheated oven until crust is golden brown, 17 to 20 minutes.

1 recipe calzone cheese (recipe below)
6 ounces pizza dough (recipe below)
6 ounces fresh chicken breast
1 cup flour
1 large egg
2 cups Locatelli Romano
3 cups Durkee red hot sauce
1/4 cup melted butter, plus more for brushing calzone
1 teaspoon fresh garlic, minced
2 teaspoons fresh jalapeno, roasted, seeded, and chopped
1/4 cup blue cheese, crumbled
2 1/2 pounds shredded Provolone cheese
21/2 pounds shredded whole milk mozzarella cheese
1 cup dried parsley
2 tablespoons dried basil
2 cups grated Locatelli Romano cheese
4 garlic cloves, minced fine
1 cup minced onions
3 eggs
7 1/2 cups high gluten flour (Conagra Hy-Jump or Dakotana)
3 tablespoons sugar
1 ounce vegetable shortening
1/4 teaspoon salt
3 cups water (lukewarm to slightly warm)
1 1/2 tablespoon active, dry, granulated, yeast
Pinch sugar

Steps:

  • Place cheeses in bowl, add parsley, basil, Romano and mix well. In separate bowl, place garlic and onion and crack 3 eggs on top. Mix well and add to cheese mixture until well incorporated. Set aside.
  • For the Pizza Dough: Place flour, sugar, shortening and salt in bowl of mixer. Place water in separate bowl, add yeast and sugar, let stand for 5 to 8 minutes until yeast rises to top of water. With kneading hook on the mixer, start mixer and add water. Mix for 10 to 12 minutes. Remove from bowl and place on floured sheet pan. Knead slightly adding flour if needed to form a large dough ball. Refrigerate for 45 minutes before using various recipes. Special note: Flour must be high gluten. Yeast must be granulated.
  • Assembly: Cut chicken into strips. Coat with flour, then egg, and then Romano cheese. Make sure that cheese is well coated on the chicken. Place on oiled sheet pan in a preheated 500 degree oven for 5 minutes. While chicken is cooking, mix red hot sauce, butter, garlic and jalapeno and cook over low heat for 5 minutes. Place pizza dough on peel and spread into a circle. Place calzone cheese on 1 half of the circle. Remove chicken from the oven and place in mixing bowl. Cover with sauce and coat well. Place chicken on top of calzone cheese, cover with a little sauce and blue cheese, fold, brush with butter and bake in a preheated 400 degree oven for 15 minutes or until golden brown. Remove from the oven, slice and serve with extra wing sauce on the side.

A yummy calzone. I make this up after getting tired of paying for one at my local pizza store! This can be made lighter by not breading the chicken.

2 boneless chicken breasts, cut into large chunks
1/2 cup breadcrumbs
1/2 cup milk or 1/2 cup egg wash, your preference
18 ounces pizza dough
1 cup shredded cheese, I use a blend of mozzarella and cheddar
1/4 cup hot sauce
oil (for frying)

Steps:

  • Heat oil to med heat in frying pan.
  • Dip chicken pieces into milk or egg wash, then coat in bread crumbs.
  • Fry them in pan, turning occasionally for approximately 5 minutes or until done (when juices are clear).
  • Drain on paper towels.
  • Roll out pizza dough to size of a pizza pan.
  • Place chicken on one side of dough.
  • Sprinkle hot sauce over chicken.
  • Cover with cheese and add more hot sauce if desired.
  • Fold other half of pizza dough over chicken.
  • Press down at edges to seal.
  • If desired, top pizza dough with some extra cheese.
  • Bake at 350°F for approximately 25-30 minutes or until pizza dough is browned.
  • Cut into pizza shaped wedges, serve with ranch or blue cheese dressing.

Everything you love about hot wings, but with loads of cheese and a crispy crust - and of course no bones! One of the beautiful things about this calzone (aside from being addictively delicious) is that it can be a very quick assembly, or an entirely made-from-scratch creation. I used store-bought dough (1/2 ball) , pre-breaded chicken tenders, jarred chunky blue cheese dressing, but opted to grate the white cheddar and mozzarella cheeses myself. So easy, so very very good...........

1 lb pizza dough, divided in half if making two small calzones
10 breaded chicken tenders
1 cup grated cheddar cheese
1 cup grated mozzarella cheese
1/2 cup buffalo wing hot sauce
1/4 cup chunky blue cheese dressing
cornmeal for dusting on baking sheet

Steps:

  • Start by cooking your breaded chicken tenders - store bought will take about 20 minutes. When they are done, turn the oven up to 450 degrees.
  • Stretch out your room temperature pizza dough to a round shape and let rest for about ten minutes.
  • When the dough has puffed up a bit, slather chunky blue cheese dressing on one half. You may want to put the dough on a non-stick baking sheet sprinkled with cornmeal BEFORE adding fillings when making a small one - you will definitely want to if making a large!
  • Toss the crispy chicken tenders in hot sauce of choice (I love Frank's).
  • Put your sauced chicken tenders on top off the blue cheese dressing. If you don't want to use the chicken tenders whole, cut them in smaller pieces before tossing in the hot sauce.
  • On top of the saucy fingers, pile on the grated mozzarella and white cheddar cheese.
  • make sure your top edge goes OVER and under the bottom edge - just pushing down on top will not do it. Push down your folded over edge all along the side.
  • Make two or three small air holes on top of the calzone.
  • Put the calzone into the oven for 12-15 minutes - check at 12 minutes, and sprinkle some grated cheese on top. When you remove from the oven, let it cool down for at least 5 minutes.

1 -2 tablespoon olive oil, to taste
4 garlic cloves, minced
1 medium red bell pepper, diced (about 1/2 cup)
5 large sun-dried tomatoes, diced
1 teaspoon thyme
1/4 teaspoon chili powder, to taste
salt and pepper
1 (10 ounce) can refrigerated pizza dough
2 chicken breasts, cooked and shredded (about 1/2 pound)
2 -4 ounces havarti cheese, in slices (quantity to taste)
12 leaves fresh basil
olive oil
1 (10 ounce) can refrigerated pizza dough

Steps:

  • Preheat the oven at 400°F.
  • Sauté garlic and red bell pepper, in olive oil, for about 3 minutes (just enough to "combine" the flavors). Put aside to cool.
  • In a bowl combine sun-dried tomatoes, thyme, chili and red pepper mixture. Toss until well mixed. Season with salt and pepper.
  • Unroll pizza dough onto clean work surface.
  • Pat out to 15x11-inch rectangle; cut in half lengthwise, then in half crosswise to form 4 rectangles.
  • Place the dough pieces on a floured surface.
  • Spread a 1/4 of the shredded chicken on one side of each dough piece. Be sure to leave 1/2 inch of the dough border free.
  • Place one slice of cheese over each portion.
  • Spread the vegetable mix over the cheese.
  • Add 3 leaves fresh basil to each calzone.
  • Brush the dough borders with little water and cover the filling with the dough (using the side without filling) and seal edges with fork.
  • Place on baking sheet sprayed with cooking spray and cook for about 20 minutes or as desired until golden brown/middle down.
  • Serve warm or cold as sandwiches.
