WINE JELLY

This jelly is a lovely accompaniment to crackers and cream cheese. You can use any kind of wine, red or white.

3 ½ cups wine
½ cup fresh lemon juice
1 (2 ounce) package dry pectin
4 ½ cups white sugar

Steps:

  • Combine wine, lemon juice, and pectin in a large saucepot. Bring to a boil, stirring frequently. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam off top, if necessary.
  • Ladle hot jelly into hot, sterilized jars, leaving 1/2 inch headspace. Tighten 2 piece lids. Process for 5 minutes in boiling water bath.

WINE JELLY

This is a variation from another of my favorite cookbooks, The Encyclopedia of Creative Cooking edited by Charlotte Turgeon. The original recipe calls for Burgundy wine. I've made it with Cabernet Sauvignon and Zinfandel. I've also made it with a white wine, and it works just as well. This is another of those county fair blue ribbon winners. ****Important Note - I'm assuming here that you know how to sterilize and prepare jars and lids for canning/jelly/jam making, so this is not included here. I'm also "guesstimating" on the time, as it's been a while since I've made it. Use times as guidelines, not gospel. The idea is to cook out as little of the alcohol content of the wine as possible. The yield may also vary, again because it's been a while, but I seem to remember making 6 to 8 pint jars though.

6 cups sugar
4 cups red wine
1 bottle liquid pectin

Steps:

  • Combine sugar and wine in a large saucepan.
  • Mix well.
  • Cook over medium heat, stirring continuously, until sugar is dissolved.
  • Remove from heat.
  • Add liquid pectin and mix well.
  • Skim off any foam and discard.
  • Pour immediately into hot, sterilized jars and seal.
  • Let cool.

PORT WINE JELLY

Fredricksburg Texas has some of the best Texas wineries close by. While experimenting with a great port I found there, I came up with this beautiful, jeweled jelly. It's easy to make for a gift basket.

4 cups port wine
1 (2 ounce) package powdered fruit pectin
4 ½ cups white sugar
½ teaspoon butter
5 half pint canning jars with lids and rings

Steps:

  • Pour the port into a large saucepan, and sprinkle in the pectin. Bring to a boil over high heat, stirring frequently. Once boiling, pour in the sugar, and stir until dissolved. Return the mixture to a boil, and stir in the butter until melted. Continue boiling for 1 minute, skimming and discarding any foam the forms on the surface.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pour the jelly into the hot, sterilized jars, filling the jars to within 1/2 inch of the top. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

ROSEMARY MINT WINE JELLY

2 1/2 cups firmly packed fresh mint leaves
1/4 cup fresh rosemary leaves
2 cups dry white wine
1/4 cup fresh lemon juice plus additional if needed
3 1/2 cups sugar
a 3-ounce pouch liquid pectin

Steps:

  • In a food processor or blender blend together the mint, the rosemary, and 1 cup of the wine until the herbs are chopped fine and transfer the mixture to a bowl. In a small saucepan bring the remaining 1 cup wine to a boil, add it to the herb mixture, and let the herb mixture stand, covered, for 45 minutes. Strain the herb mixture through a sieve lined with several layers of rinsed and squeezed cheesecloth set over a large measuring cup, pressing hard on the solids,and add 1/4 cup of the lemon juice. (There should be exactly 2 cups liquid; if there is less add enough of the additional lemon juice to measure 2 cups liquid.) Transfer the liquid to a kettle, stir in the sugar, stirring until the mixture is combined well, and bring the mixture to a rolling boil over high heat, stirring constantly. Stir in the pectin quickly, bring the mixture again to a full rolling boil, stirring constantly, and boil it, stirring constantly, for 1 minute. Remove the kettle from the heat, skim off any foam with a large spoon, and ladle the mixture immediately into 4 sterilized 1/2-pint Mason-type jars, filling the jars to within 1/8 inch of the tops. Wipe the rims with a dampened cloth and seal the jars with the lids. Invert the jars for 5 minutes and turn them upright. (Instead of being inverted, the jars may be put in a water bath canner or on a rack set in a deep kettle. Add enough hot water to the canner or kettle to cover the jars by 1 to 2 inches and bring it to a boil. Process the jars, covered, for 5 minutes, transfer them with tongs to a rack, and let them cool completely.) Store the jars in a cool, dark place.

CRANBERRY ROSEMARY WINE JELLY

4 (12-ounce) bags fresh or frozen cranberries (14 cups; do not thaw)
3 cups sugar
2 cups dry white wine
2 (5-inch) fresh rosemary sprigs
3 2/3 cups cold water
1 tablespoon plus 2 teaspoons unflavored gelatin (from three 1/4-ounce envelopes)
Special Equipment
a 6-cup nonreactive mold (see cooks' note, below) or glass loaf pan

Steps:

  • Bring cranberries, sugar, wine, rosemary, and 2 2/3 cups water to a boil in a 6- to 8-quart pot, stirring until sugar is dissolved, then reduce heat and simmer, partially covered, stirring occasionally, until all berries have burst, 8 to 10 minutes. Pour into a large colander lined with dampened paper towels and set in a deep bowl, then let stand until all juices have drained through, 10 to 15 minutes, and discard solids. If you have more than 4 cups cranberry liquid, boil in a small saucepan until reduced; if less, add water to bring total to 4 cups.
  • Stir together gelatin and remaining cup water in a clean small saucepan and let stand 1 minute to soften. Heat over moderate heat, stirring, until gelatin is dissolved. Stir gelatin mixture into cranberry liquid until combined. Pour cranberry mixture into lightly oiled mold (see cooks' note, below), skimming off any foam. Cool to room temperature, then cover with plastic wrap and chill until firmly set, at least 12 hours.
  • To unmold, run tip of a thin knife between edge of mold and jelly. Tilt mold sideways and tap side of mold against a work surface, turning it, to evenly break seal and loosen cranberry jelly. Keeping mold tilted, invert a plate over mold, then invert cranberry sauce onto plate.

RED WINE JELLY

375ml red wine , such as Chinon
200g jam sugar
1 star anise
1 clove
2.5cm piece cinnamon stick
pinch of allspice
½ split vanilla pod , seeds scraped out

Steps:

  • Put the red wine, sugar, star anise, clove, cinnamon stick, allspice, vanilla pod and seeds in a medium saucepan. Stir together, then heat gently to dissolve the sugar. Turn up the heat and boil for 20 mins until reduced and syrupy. Strain into a small, sterilised jam jar and leave to cool completely. Will keep in the fridge for up to 1 month.

RED WINE JELLY
750 ml bottle of red wine like cabernet, pinot noir, or merlot
3 1/2 c sugar
1 small box sure gel
3 Tbsp lemon juice
1/2 tsp butter
WHITE WINE JELLY
750 ml bottle white wine like pinot grigio, chardonay, riesling
the rest of the ingredients are the same as red wine jelly

Steps:

  • 1. Bring 1 1/4 cups of the wine to a boil in a small saucepan turn heat to med. Cook until reduced to 1/3 cup about 15 to 20 minutes.
  • 2. Add remaining wine and sugar to large saucepan. Bring to a boil. Stir in the sure gel, lemon juice and butter. Return to a vigorous boil stirring constantly for 1 minute. Remove from heat and stir in the reduced wine. Let cool a bit and ladle into sterilized jars leaving a 1 inch head space in each jar.
  • 3. Place in a boiling water bath with the water at least 1 inch above the jars. Let jars sit in water bath for 15 minutes. Remove and let sit on counter until all are sealed.
  • 4. The directions are the same with either red or white wine

PLUM-PORT WINE JELLY

Rich plums play along with the fruity rich flavors of a port wine in this jelly condiment.

3 pounds underripe red plums
3 cups water
Port wine
6 cups sugar
6 tablespoons liquid pectin

Steps:

  • Pit the plums. Tie the pits in a cheesecloth bag. Cut the fruit into quarters. Simmer the plums, pits and water in a covered saucepan over medium heat for one hour, or until the fruit is almost reduced to a pulp. (To hasten the process, mash the fruit coarsely after it has cooked a while.) Discard the pits and force the pulp through a coarse sieve or a food mill. Place the purée in a jelly bag and let it drip overnight. (If you do not have a jelly bag, line a colander with 4 thicknesses of cheesecloth and set over a bowl.) The next day, measure the juice and add enough port wine to make 3 cups of liquid altogether. Combine the liquid and sugar in a large pot and bring to a full rolling boil over high heat. Add pectin and continue to boil hard, stirring constantly, for 1 minute. Skim the top and pour into hot, sterilized jelly glasses. Cover with a thin layer of melted paraffin. When the paraffin has hardened, cover the glasses and store.

ROASTED GARLIC AND WHITE WINE JELLY

2 cups white wine
1/4 cup roasted garlic, finely chopped*
3 cups sugar
1 (85 ml) envelope liquid Certo

Steps:

  • * To roast garlic: Cut off top of bulb, drizzle with a little olive oil and wrap tightly in foil. Bake at 350 for 25-30 minutes until soft.
  • Place wine and garlic in a large saucepan.
  • Add sugar and mix well.
  • Bring to a full boil on high heat and boil hard for 1 minute, stirring constantly.
  • Remove from heat and stir in pectin.
  • Stir for a few minutes until pectin starts to set and the garlic is distributed evenly.
  • Pour into warm, sterilized jars, filling up to 1/4 inch and seal with sterilized snap lids.

SUMMER FRUITS TERRINE OR BODACIOUS BERRIES IN WINE JELLY!



Summer Fruits Terrine or Bodacious Berries in Wine Jelly! image

This is one of my favourite recipes, when the soft fruit season arrives, I try to make this at least once......and it is STUNNING if served as the finale to a dinner party. This is an unashamed copy of a recipe by Delia Smith, with very few modifications of my own, as she gives such great ideas and suggestions on how to make this elegant and LOW fat dessert. The directions may seem long-winded, but they are really just useful tips on how to weight the terrine down overnight. Serve this in slices with a red berry coulis and crème fraîche or cream. Fruit juice can be used if this is being served to children or to anyone who does not drink alcohol - I suggest a red fruit juice.

15 fluid ounces sparkling rose wine
2 ounces caster sugar
2 (1/4 ounce) sachets unflavored gelatin
1 tablespoon fresh lime juice
12 ounces small strawberries
8 ounces raspberries
12 ounces red currants or 12 ounces blueberries

Steps:

  • In addition to the ingredients, you will also need two 2 lb (900 g) loaf tins, 7½ x 4¾ inches x 3½ inches deep (19 x 12 cm x 9 cm deep), preferably non-stick but anyway with a good surface.
  • First, prepare the fruit: remove the stalks and halve the strawberries if they are any larger than a quail's egg. Then mix the fruits together in a large bowl, being very gentle to avoid bruising them.
  • In a small saucepan heat half the rosé wine until it begins to simmer, then whisk the sugar and gelatine into it. Make sure that everything has dissolved completely before adding the remaining wine and the lime juice. Then pour the liquid into a jug and allow it to cool. While that is happening, lay the mixed fruit in one of the loaf tins - and it is worth arranging the bottom layer with the smallest, prettiest-shaped fruit as this will be on top when the terrine is turned out.
  • Next, pour all but 5 fl oz (150 ml) of the liquid over the fruit. Now lay a sheet of clingfilm over the tin, place the other tin directly on top, then put two unopened tins of tomatoes or something similar to act as weights into the top tin and put the whole lot into the fridge for about 1 hour, or until it has set. Then warm up the remaining 5 fl oz (150 ml) wine mixture and pour it over the surface of the terrine. Re-cover with clingfilm and return to the fridge overnight to set firm.
  • When you are ready to serve, turn out the terrine by dipping the tin very briefly in hot water and inverting it on to a plate. Use a very sharp knife (also dipped first into hot water) to cut it into slices. Serve with red berry coulis, chilled pouring cream, crème fraîche or Greek yoghurt.

1 cup white wine (A Riesling will be my choice)
1 tablespoon unflavored gelatin (unflavored, powdered)
1 cup water
1 tablespoon lemon juice
1/4 cup sugar
1/2 cup strawberry (sliced)
1/2 cup peach (sliced)
1/2 cup cherries (pitted)

Steps:

  • Put 1/2 cup water into a sml saucepan, add gelatin & allow to soak for a few minutes.
  • Place saucepan over a low heat & stir till the gelatin dissolves. Stir in the lemon juice & sugar.
  • Continue stirring till the sugar dissolves & remove the pan from the heat.
  • Add the remaining 1/2 cup of water & the wine. Refrigerate till the mixture develops a syrup consistency.
  • Add fruits, mix gently & spoon the jelly into a 1 qt mold or smaller molds of choice.
  • Refrigerate & chill thoroughly till well-set. Unmold & serve.
  • SERVING SUGGESTIONS: For brunch, serve w/scones, bagels or English muffins. As a salad course, serve atop greens & use a poppy seed or other complimentary dressing. As a dessert, serve w/cheese & crackers -- or -- baguette slices topped w/cheese of choice & the jelly as a dessert bruschetta. A sml dish of choc mints would make a nice combo w/either choice.
  • NOTE: IMO, the fruits used are suggestions & others can be subbed. I will prob use a combo of green & red grapes in place of the cherries. Kiwi segments could also be used.

1 cup dry red wine
4 orange peel strips (3x1 inches each)
1 tablespoon orange juice
1 cinnamon stick (3 inches)
3 whole cloves
1/2 cup powdered fruit pectin
3/4 teaspoon baking soda
1-1/3 cups sugar
1-1/3 cups light corn syrup
COATING:
1/4 cup sugar

Steps:

  • In a small saucepan, combine wine, orange peel, juice, cinnamon stick and cloves; bring just to a simmer (do not boil) over medium-low heat. Reduce heat; simmer gently, uncovered, 10 minutes to allow flavors to blend. Let stand 1 hour., Line a 9x5-in. loaf pan with foil; coat foil with cooking spray. Strain wine mixture, discarding orange peel and spices. Return mulled wine to saucepan; stir in pectin and baking soda. Heat over medium-high heat., Meanwhile, in a large saucepan, combine sugar and corn syrup; bring to a full rolling boil over high heat, stirring constantly. Stir in wine mixture. Continue to boil 1 minute, stirring constantly. Remove from heat; skim off foam, if necessary. Immediately pour into prepared pan. Let stand until set, about 5 hours or overnight., For coating, sprinkle 2 tablespoons sugar over a 14x12-in. sheet of parchment. Invert candy onto sugar. With a knife dipped in warm water, cut candy into 1-in. squares; coat with remaining sugar., Transfer candies to a wire rack. Let stand, uncovered, at room temperature overnight. Store in airtight containers up to 1 week.

2 1/2 c red wine - i used pinot noir
3 1/2 c sugar
1/2 box sure-jell fruit pectin (25 grams)
8 half-cup jelly jars and lids

Steps:

  • 1. Sterilize jelly jars and lids by boiling them for 10 minutes. Keep warm on a towel-lined tray in the oven on 200°F.
  • 2. Measure exact amount of wine into a medium stockpot. I added 1/2 cup grape juice to mine so I would have the full 2 1/2 cups. Stir in the Sure-Jell fruit pectin and bring mixture to a full rolling boil on high heat, stirring constantly. Then stir sugar into the mixture and return to a full rolling boil. Boil exactly 1 minute, then remove from heat.
  • 3. Ladle immediately into the prepared jars, filling each to within 1/4-inch of the top. Wipe jar rims and threads with a clean damp paper towel or cloth. Cover with lids and screw on the bands.
  • 4. To make these jars shelf-safe, process them in a boiling water bath in a canner, on a rack and covered by at least 1-2 inches of water. Process for 5 minutes. Remove jars and place on a towel to cool. Check for seals and let stand at room temperature for 24 hours. Refrigerate any jars that did not form a complete seal, and use within a few weeks.
  • 5. Since this makes such a small amount, I seldom use a water bath process. I just put a couple of the jars in the refrigerator for immediate use, and place the rest in the freezer. It never seems to affect the quality when thawed.

POMEGRANATE WINE JELLY

1 cup pomegranate juice
1/2 cup lemon juice

5 (1/4 ounce) envelopes unflavored gelatin
2 cups cold water
4 cups boiling water
4 1/2 cups sugar
2 cups white wine
1 lemon, juice of, and strained
2 oranges, juice of, and strained

Steps:

  • Soften gelatin in cold water for 5 minutes.
  • Bring hot water and sugar to a boil. Remove from heat, add gelatin and blend well. Cool.
  • Stir in wine, lemon juice, and orange juice. Pour into a mold or individual glasses. Refrigerate until firm, about four to six hours.
  • Serving suggestions: Serve on toast or a cracker. Spoon wine jelly into goblets, cover with custard, and top with whipped cream. Also great used to glaze a cake.

4 envelopes unflavored gelatin
2 cups cold water
3 cups white or red grape juice
1 cup sugar
1 cup medium dry white wine
Sweetened whipped cream

Steps:

  • Sprinkle gelatin on cold water in medium bowl to soften.
  • Heat grape juice to boiling. Stir grape juice and sugar into gelatin mixture until gelatin is dissolved. Stir in wine.
  • Pour into 6-cup mold. Refrigerate about 4 hours or until firm. Unmold onto serving plate. Serve with whipped cream.

RED-WINE MINT JELLY

1 (750-ml) bottle red wine
1 cup sugar
3 (0.25-ounce) packages powdered gelatin
3 tablespoons water
1 shallot
3 peppercorns
1 large bunch mint (about 1 cup of packed leaves) plus leaves, finely chopped, for garnish
1 lemon, juiced
Extra-virgin olive oil
Sea salt and freshly ground black pepper

Steps:

  • In a saucepan, combine wine and sugar and simmer over medium heat for 10 to 15 minutes to cook off some of the alcohol.
  • In a large mixing bowl combine gelatin with 3 tablespoons of water to bloom the gelatin. Let stand for 5 minutes and stir. Pour hot red wine mixture into the bowl to combine with gelatin and whisk. Add the chopped shallot, peppercorns, mint leaves, and lemon juice.
  • Allow to steep for 15 to 20 minutes. Strain out solids and pour into an oiled mold. Allow to set up overnight in the refrigerator. To serve, unmold onto a plate and drizzle with extra-virgin olive oil, salt and freshly ground black pepper. Garnish with some chopped fresh mint.

WINE AND HERB JELLY

Yield 1 1/4 cups, or 5 quarter-pint jars

Number Of Ingredients 6

1 3/4 cups gewürztraminer or other full-bodied wine
8 stalks fresh thyme or other strongly flavored herb or spice
1 tablespoon fresh lemon juice
2 tablespoons traditional powdered pectin (Certo, Ball or Sure-Jell are widely available)
2 1/2 cups sugar
1/2 teaspoon butter

Steps:

  • Heat wine and thyme until simmering. Turn off heat, cover and steep for 30 minutes.
  • Put a rack or a folded kitchen towel in a large pot, fill with water and bring to a boil. Add 5 quarter-pint canning jars and boil for 10 minutes. Jars may be left in the warm water until ready to be filled. (Alternatively, sterilize jars by running them through a dishwasher, leaving them inside until ready to fill.)
  • Place canning rings in a small saucepan, cover with water and bring to a boil. Turn off heat and add lids to soften rubber gaskets. Rings and lids may be left in water until jars are filled.
  • Remove thyme from wine. It will smell spicy and herbal. In a large heavy, nonreactive pot, stir together wine, lemon juice and pectin. Bring heat to medium high and stir often as mixture comes to a boil.
  • When the mixture reaches a boil that cannot be stirred down, add sugar while stirring constantly.
  • Heat jelly again to strong, hard boil to reduce the foam. Boil hard for exactly one minute to set the pectin. Turn off heat.
  • Add butter and stir well to continue reducing the foam. Remove any remaining foam with a clean spoon.
  • Ladle hot jelly into warm jars, leaving 1/2-inch headspace. Wipe jar rims clean with a damp towel. Place lids on jars, screw on rings and lower jars back into pot of boiling water. Return to full boil and boil jars for 5 minutes. Transfer jars to a folded towel and cool for 12 hours; you should hear them ping as they seal. Sealed jars are shelf stable for one year.
  • Once cool, test seals by removing rings and lifting jars by their flat lids. If the lid releases, the seal has not formed. Unsealed jars should be refrigerated and used within a month, or reprocessed. (Rings and jars may be reused, but a new flat lid must be used each time jars are processed.) To reprocess, reheat to boiling then continue as before.

Steps:

  • Heat sugar and Port wine in top of double boiler over rapidly boiling water, stirring constantly, until sugar is dissolved, about 3 minutes.
  • Remove from heat. Quickly stir in 1/2 bottle liquid pectin.
  • Immediately pour jelly into hot sterilized jars, leaving 1/2-inch headspace. Wipe rims of jars.
  • Seal as directed.
