Easy gourmet flavored muffins - perfect for dinner parties or holiday buffets. For family meals, you can substitute apple juice with Cheddar cheese. This recipe is from my envelope of newspaper clippings.

Number Of Ingredients 6

2 cups baking mix (Bisquick)
2/3 cup white wine
2 tablespoons vegetable oil
1 egg
1 cup grated swiss cheese or 1 cup gruyere cheese (4oz)
2 teaspoons chopped fresh chives

Steps:

  • Preheat oven to 400°F.
  • In a medium bowl, combine baking mix, wine, oil and egg.
  • Using a fork, beat the mixture for 30 strokes.
  • Stir in the cheeses and chives.
  • Divide the mixture between 12 (2 1/2 x 1 3/4 inch).
  • muffin cups, greased or lined with paper cups.
  • Bake 15-20 minutes or until a toothpick inserted in the center comes out clean.

MULLED WINE MUFFINS



Mulled Wine Muffins image

This is a very wintery, spicy muffin recipe that is perfect for entertaining during the holiday season. It has a fruity orange aroma with hints of cloves and cinnamon, which pairs really well with the added chocolate chunks and cookie crumbs. If you cant find spekulatius cookies where you live, substitute any crunchy spicy (e.g. gingersnaps) cookie or make your own. If you use a different cookie, you might want to up the spices and/or add additional ginger and nutmeg.

Number Of Ingredients 15

1 orange, zest of (please make sure to use an organic orange for this)
150 ml red wine (can use dark grape juice instead of the wine)
150 g sugar
1 cinnamon stick
2 whole cloves
4 tablespoons port wine
100 g spekulatius cookie crumbs (or other hard cookie crumbs)
250 g flour
2 teaspoons baking powder
1 pinch salt
additional spices (if using)
100 g dark chocolate, chopped
2 eggs, beaten
5 tablespoons oil
150 g plain yogurt

Steps:

  • In a saucepan combine orange zest, cloves, cinnamon, sugar and red wine. Bring to a boil and simmer for 5 minutes stirring constantly. Remove from heat, allow to cool slightly (2 min.) and then add the 4 tbs of port wine. Remove the cinnamon stick and the cloves using a slotted spoon.
  • In a big bowl combine flour, baking powder, cookie crumbs, salt, additional spices (if using) and chopped chocolate.
  • In a second bowl combine cooled mulled wine, eggs, oil and yogurt. Add this to the dry ingredients and stir until just combined.
  • Pour into prepared muffin tins and bake in the preheated oven at 180°C/350°F for 20-25 minutes.

Number Of Ingredients 11

1 1/2 cups plus 1 tablespoon all-purpose flour, divided
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
2/3 cup granulated sugar
2 tablespoons granulated sugar, divided
2 large eggs
1 tablespoon orange zest
2/3 cup sweet wine (such as Rieisling or Muscata)
1 cup seedless red grapes

Steps:

  • Place a rack in the middle of the oven, and preheat to 375 degrees F.
  • Whisk together flour, baking powder, baking soda, and salt.
  • Beat butter with 2/3 cup sugar using an electric mixer on medium speed, until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in zest.
  • Add flour mixture in two batches, alternately wtih wine, beginning and ending flour, mixing until just incorporated.
  • Toss grapes with remaining tablespoon flour, then fold into batter.
  • Divide batter among muffin cups. Sprinkle with remaining 2 tablespoons sugar. Bake until golden and springy to the touch, 18-20 minutes. Cool in pan 5 minutes, then loosen with a knife, and remove. Cool to warm, 5-10 minutes more. Dust with confectioners' sugar before serving.
