Yield 2 1/4 cups mixed nuts

Number Of Ingredients 6

2 1/4 cups (18-ounces) assorted unsalted nuts, including peeled peanuts, cashews, Brazil nuts, hazelnuts, walnuts, pecans and whole unpeeled almonds
2 tablespoons coarsely chopped fresh rosemary leaves
1/2 teaspoon cayenne pepper
2 teaspoons dark brown sugar
2 teaspoons Maldon or other sea salt
1 tablespoon unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F.
  • Toss the nuts in a large bowl to combine and spread them out on a baking sheet. Toast in the oven until light golden brown, about 10 minutes.
  • In a large bowl, combine the rosemary, cayenne, sugar, salt and melted butter.
  • Thoroughly toss the toasted nuts in the spiced butter and serve warm. And once you eat these, you will never want to stop.

From the Best of Food and Wine. This is a savory-sweet mix of pecans, almonds and walnuts. These would make a great gift.

Number Of Ingredients 8

2 cups pecans
2 cups almonds
2 cups walnuts
1/4 cup pure maple syrup
2 tablespoons extra virgin olive oil
2 tablespoons mixed herbs (rosemary, sage, savory and thyme, mixed and finely chopped)
1/4 teaspoon cayenne pepper
salt & freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees. In a bowl, toss the nuts with the maple syrup, olive oil, herbs and cayenne.
  • Spread the nuts on a rimmed baking sheet and bake for 15 minutes. (I place them on parchment paper for easy clean-up), stirring occasionally, until browned.
  • Season the nuts with salt and pepper and toss frequently until cooled.

SUNNY'S SMOKY BAR NUT MIX



Sunny's Smoky Bar Nut Mix image

Number Of Ingredients 9

3 tablespoons olive oil
1/2 teaspoon liquid smoke (I like hickory here)
3 to 4 stalks fresh rosemary
1 clove garlic, smashed
1/2 cup almonds
1 cup pecan halves
1 cup walnut halves
1/2 cup dried cranberries
Kosher salt and freshly ground black pepper

Steps:

  • Flavor the oil. In a large pan on medium-low heat, add the olive oil, liquid smoke, rosemary and garlic. Cook until the oil is fragrant and the rosemary is crispy, about 5 minutes. Remove the rosemary to a paper towel-lined plate. Remove and discard the garlic.
  • Toast the nuts. First, add the almonds to the pan and stir to coat in the oil, then toss to heat them until a taste of one reveals a tender creamy almond, 4 to 5 minutes. Add the pecans and them cook for 4 to 5 minutes. Finally, add the walnuts and let cook for 5 additional minutes. Each nut takes a different amount of time to toast, so this order is crucial.
  • Finish. Add the cranberries to the nut mixture and season with salt and pepper. Crinkle in the rosemary, then use a slotted spoon to remove the mixture to a bowl. Serve warm or chilled.
