Steps:

  • Quarter, core and very thinly slice 1 small head green cabbage; transfer to a large bowl. Pour 4 cups salted boiling water over the cabbage and toss with tongs until wilted. Let sit 15 minutes. Drain, rinse and pat dry. Whisk 1/4 cup each white wine vinegar and olive oil, 2 teaspoons sugar, 1 teaspoon kosher salt and a few grinds of pepper in the bowl. Add the cabbage and toss well.

1 medium head cabbage, shredded
1 onion, chopped
1 clove garlic, minced
½ cup tarragon vinegar

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, crumble and set aside. Reserve bacon fat.
  • Add the onion and garlic and fry in the bacon fat until browned.
  • Add the vinegar. Bring to a simmer and add the cabbage and bacon. Saute briefly and serve warm.

1 1/2 heads red cabbage
1/2 cup olive oil
2 red onions, halved and thinly sliced
4 garlic cloves minced to a paste
1 T herbes de Provence or dried thyme
1 teas fennel seed
1/3 cup cider vinegar
1 heaping T sugar
1/2 lb. feta cheese
1/2 cup chopped fresh parsley
Salt and freshly ground pepper to taste

Steps:

  • Remove any wilted outer leaves from the cabbage heads. Quarter the heads and cut out the white core. Slide the quarters into thin strips. Heat the oil in a large pot over medium-high heat. Add the onions and saute until tender....about 3 minutes. Add the garlic and saute another minute. Add the herbes de Provence, fennel seed and cabbage and toss well to coat the strips with hot oil. Sprinkle the vinegar and sugar over the cabbage and continue cooking it, tossing it in the pot until the cabbage is wilted, about 6 minutes. Remove the cabbage to a larger bowl. Crumble the feta cheese into the cabbage, add teh parsley and toss well to combine. Season to taste with salt and pepper. Serve warm or at room temp.

I saw this recipe in a magazine and made a couple of changes. I like having the cabbage mix with the carrots because it adds color. Onions could also be added to this. I have had it in the fridge for several days and the cabbage has stayed nice and crunchy. It is a nice change from regular coleslaw.

1 pkg cabbage and carrots for coleslaw
1/4 c white wine vinegar
1/4 c oil--i used vegetable oil
2 tsp sugar
1 tsp kosher salt
1/8 tsp pepper--a few grinds if using a pepper mill

Steps:

  • 1. Put cabbage mix into a large bowl.
  • 2. Pour 4 cups of boiling salted water over the cabbage and toss with tongs until starting to wilt. Let sit 15 minutes. I used about 2 tablespoons of kosher salt in the water.
  • 3. Drain and rinse and pat dry.
  • 4. Whisk the vinegar, oil sugar, salt and pepper in the bowl Add the cabbage and toss well. Let cool and put in the fridge.

3 tomatoes, diced
12 radishes, finely diced
