WILD RICE QUICHE

Wild rice is very abundant in our state, so that's why I think this dish is appropriate for a regional recipe contest. This is an excellent brunch item that I usually serve with fresh muffins and fruit. When you add a steaming cup of Norwegian egg coffee, you have a super Minnesota meal.

Number Of Ingredients 10

1 unbaked pastry shell (9 inches)
1/3 cup chopped Canadian bacon or fully cooked ham
1 small onion, finely chopped
1 tablespoon butter
1 cup shredded Monterey Jack cheese
1 cup cooked wild rice
3 large eggs
1-1/2 cups half-and-half cream
1/2 teaspoon salt
Snipped parsley, optional

Steps:

  • Bake crust at 425° for 5 minutes. Remove from the oven and set aside. Reduce heat to 325°. , In a skillet, saute Canadian bacon or ham and onion in butter until onion is tender. Spoon into the crust. Sprinkle with cheese and wild rice. , In a small bowl, beat eggs, cream and salt. Pour over all. Bake at 325° for 35 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting. Garnish with parsley if desired.

This is a nice change from ordinary quiche. Full of ham, wild rice, mushrooms, red bell peppers, and flavored with a touch of Dijon mustard, this quiche is fabulous for breakfast, lunch, or dinner. And the meat & veggie mixture is terrific simply scrambled with eggs for a quickie meal!

¾ cup water
¼ cup uncooked wild rice
1 (9 inch) unbaked pie crust
1 cup cubed cooked ham
⅓ cup finely chopped red bell pepper
¼ cup thinly sliced green onion tops
1 (4 ounce) can sliced mushrooms, drained
3 eggs, beaten
1 cup sour cream
1 tablespoon Dijon mustard
½ teaspoon salt
⅛ teaspoon black pepper
2 cups shredded Swiss cheese

Steps:

  • In a small pot, bring the water and wild rice to a boil. Cover, reduce heat to low, and simmer 45 minutes.
  • Preheat oven to 425 degrees F (220 degrees C). Bake the pie crust 10 minutes, or until golden brown. Reduce heat to 400 degrees F (200 degrees C).
  • In a bowl, mix the cooked rice, ham, red bell pepper, green onion tops, and mushrooms. In a separate bowl, mix the eggs, sour cream, mustard, salt, and pepper.
  • Sprinkle the bottom of the pie crust with 1 cup Swiss cheese. Spread the rice, ham, and vegetable mixture over the cheese, and cover with the egg mixture. Top with remaining Swiss cheese.
  • Bake 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

  • In a greased 10-in. pie plate, layer the sausage, rice and cheese. In a bowl, combine the milk, baking mix and eggs; beat until smooth. Pour evenly over cheese. , Bake at 400° for 30-35 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.

3 c eggs,divided
1 1/2 c hot cooked wild rice
3 oz cheese grated,divided (cheddar or your choice)
1/2 tsp salt and pepper
3 Tbsp milk
2 1/2 c thawed frozen spinach,drain
1 c mushrooms,sliced

Steps:

  • 1. Beat one egg; stir in rice, half the cheese, and salt.Press firmly into an even layer on the bottom of a 9 inch pie pan.
  • 2. Beat remaining eggs,stir in spinach,milk,salt, pepper,mushrooms and remaining cheese.
  • 3. Spoon into pan.Bake at 375 for 30 minutes or until cooked through.

TURKEY AND WILD RICE QUICHE

With lots of left-over turkey and wild rice on hand, I looked for a recipe that would use both. This was adapted from several recipes but lightened up a bit.

1 pkg pie crust shell, prepared as directed
1½ cups co c cooked wild rice
1 c chopped turkey
1/2 c onion, chopped
1 Tbsp butter
1/4 c fresh parsley (or 2 tb dried)
4 c fresh spinach or ½ package frozen chopped spinach, thawed and squeezed dry
1/2 tsp salt - or to taste
1/4 tsp ground pepper
1/2 c shredded cheese of your choice
4 eggs, lightly beaten
1 c evaporated milk (i use 2%)

Steps:

  • 1. Preheat the oven to 425 degrees.
  • 2. If using fresh spinach, quickly saute in hot pan until wilted.
  • 3. Sauté onion in butter. Combine with wild rice, turkey, parsley, spinach, salt, pepper and cheese. Add eggs and evaporated milk. Mix well.
  • 4. Pour the filling into the prepared pie crust. Bake for 10 minutes.
  • 5. Reduce heat to 325 degrees and continue baking for 30 minutes, until knife inserted near the center comes out clean. Cover with foil if it's browning too much on top. Let stand 15 minutes before slicing. Serve with a dollop of sour cream, if desired.

SPINACH WILD RICE QUICHE

1 cup half-and-half cream
1 cup Vegetable Wild Rice or cooked wild rice

3 bacon strips, cooked and crumbled
1/2 cup frozen chopped spinach, thawed

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes. Remove foil; bake 5 minutes longer. Remove from the oven; reduce heat to 350°., In a bowl, beat the eggs and cream. Add rice, cheese, bacon and spinach; mix well. Pour into prepared crust. Cover edges of pastry with foil. Bake for 30-35 minutes or until a knife inserted in the center comes out clean.

The Easy Wild rice Quiche is our Signiture dish at the Franklin Victorain B&B. Our guest love and ask for the recipe so now it is posted on our website. It can be made with or without bacon bits. Yummy!!

1 c cooked, wild rice
6 large beaten eggs
1 can(s) cream of mushroom soup
1 1/2 c shredded sharp cheddar cheese
1 c bacon bits (i used the package of recipe style real bacon bits).
1 Tbsp onion- (dried)
salt and pepper and any seasoning if you wish.

Steps:

  • 1. With mixer beat eggs, then add soup, cheese, rice, meat and minced onion. Add salt and pepper. Mix will with mixer. Pour into quiche dish or 9-10 in pie plate sprayed with PAM. Bake at 375' for 35-40 minutes or until a knife inserted in center comes out clean. Let stand a few minutes before serving. Can be prepared the night before and baked the next morning. Oven temps. may vary

1/3 cup of julianne strips Canadian bacon
1 small onion, diced
1 unbaked pie shell (I cheat and buy the frozen)
1 cup shredded monterey jack cheese
1 cup cooked wild rice
3 eggs
1 1/2 cups light cream
1/2 teaspoon salt
1 dash hot pepper sauce

Steps:

  • Heat Oven to 350.
  • Fry Canadian Bacon and onion until onion is cooked through.
  • Spread mixture evenly in pie shell.
  • Sprinkle with cheese and Wild Rice.
  • Whip eggs, cream, salt and hot pepper sauce until well blended.
  • Pour over Wild Rice mixture.
  • Bake for 50 minutes or until center of Quiche is set.

1 1/2 cups cooked wild rice
6 eggs
1/2 cup milk
Cream of mushroom soup
6 slices bacon cooked and crumbled
1 cup shredded cheddar cheese
1/4 cup onion
1/4 cup green, red or yellow peppers
1 cup sliced fresh mushrooms

Steps:

  • Saute onion, peppers and mushrooms in small amount of olive oil so that the mushrooms release moisture and vegetables are tender crisp. In large bowl whisk eggs, add milk, soup and whisk together, stir in cheese, rice, bacon and vegetable mixture. Pour into quiche pan sprayed with Pam. Cover with foil and refrigerate overnight. Take out and let come to room temperature or so and then remove foil bake at 375 degrees for 45 minutes or until center is done.
