GROUND BEEF AND WILD RICE CASSEROLE
If you like quick and easy comfort food, then this one might be for you. It's not gourmet by any means but it is pretty tasty with minimal ingredients. You can add any additional ingredients that you might enjoy to it. (That's the beauty of casseroles!)

Steps:
- Preheat oven to 350'.
- Butter well a 2 quart or larger casserole dish.
- In a skillet add ground beef and onions and brown until meat is no longer pink.
- Drain off fat.
- While beef is browning, prepare rice mix as directed (including seasoning packet)except omit butter.
- When most of the liquid is cooked down and rice is becoming tender, remove from heat and stir into meat mixture.
- Add Soup, milk, pepper and 1 Cup Cheese and blend well.
- Transfer to 2 qt baking dish, bake uncovered 20-25 minutes or until bubbly and heated through.
- Top with remaining 1/2 Cup cheese and bake another 5-10 minutes or until cheese melts and turns bubbly.

Steps:
- Cook ground beef and drain.
- Add onions, rice and 1 cup water, stir.
- Cook in microwave for 3 minutes in 2-quart glass bowl.
- Add soup and mushrooms.
- In another bowl, heat butter with the 1/2 cup of water for 1 minute on high.
- Stir in stuffing cubes, blend until moist.
- Spoon stuffing mixture over meat.
- Top with almonds.
- Cook on high 12-14 minutes and then let stand and set for 10 minutes before serving.
- Enjoy!
WILD RICE AND GROUND BEEF CASSEROLE
Steps:
- Pour boiling water over wild rice. Let stand 15 minutes then drain. or cook box of Uncle Ben's rice as per directions. Add mushrooms and cans of soup as well as bouillon cubes dissolved in 1 cup boiling water. Add 1 crumbled bay leaf. Season to taste with approimately 1/4 teaspoon of each spice and salt listed. Saute celery and onion in butter until transparent and add to the rest. Brown ground beef, drain, add to mixture - put in casserole dish. Sprinkle with almonds and refrigerate until time to bake. Bake covered for 1 1/2 hours at 350 degrees. Add more bouillon if casserole becomes dry while baking.

- Pour 4 cups boiling water over uncooked wild rice and let stand 15 minutes.
- Drain rice and add mushroom soup, cream of chicken soup, mushrooms, beef bouillon cubes dissolved in one cup boiling water, celery salt, garlic powder, pepper, onion salt and paprika.
- Sauté chopped celery and onion in 2 T butter and add to the above mixture.
- Brown ground beef. Drain and add to the rest of the ingredients.
- Put in casserole dish and sprinkle with slivered almonds; refrigerate until time to bake.
- Bake covered for 1 1/2 hours at 350 degrees F.
