2 1/2 pounds country-style spareribs
1 large onion, chopped
4 large garlic cloves, chopped
2 14 1/2-ounce cans beef broth
2 cups long-grain white rice
1 15- to 16-ounce can chick-peas (garbanzo beans), drained
2/3 cup water
1/3 cup red wine vinegar
2 tablespoons chopped fresh cilantro
1 tablespoon paprika
1 tablespoon dried oregano, crumbled
1 4-ounce jar sliced pimientos, drained

Steps:

  • Preheat oven to 350°F. Season spareribs with salt and pepper. Brown spareribs in heavy large Dutch oven over high heat. Transfer ribs to plate. Add onion and garlic to pot and sauté until onion is translucent, about 5 minutes. Add all remaining ingredients except pimientos to pot. Bring to boil, scraping up browned bits. Return ribs and any collected juices to pot. Push ribs into rice mixture. Season with salt and pepper. Spread pimientos evenly over top. Cover pot and bake until meat and rice are tender and all liquids are absorbed about 50 minutes.

2 c uncooked wild rice
6 c water
6 bacon strips
6 Tbsp margarine,divided
17 leftover pork spareribs,removed the bones
3 tsp red pepper flakes
1 tsp garlic powder
1 tsp black pepper
1 red onion,chopped
1 c sliced white mushrooms
1/2 c all purpose flour
3 1/2 c half and half
2 pkg cream cheese,softened
1 (18 ounce) can cream of mushroom soup
3/4 c shredded parmesan cheese
1 (2 ounce) jar jalapeno slices,liquid reserved
1 c chopped almonds

Steps:

  • 1. Place wild rice and water in a pot and bring to a boil.Reduce heat to low,cover and cook 45 minutes.
  • 2. Preheat oven to 350 degrees F.
  • 3. Place bacon in a large skillet over medium-low heat and cook until evenly brown.Drain,crumble and set aside.
  • 4. Add 2 tablespoons maragrine in a same skillet with bacon drippings and place boneless spareribs in the skillet,saute for 5 minutes,season with red pepper flakes,garlic powder and black pepper.Remove from the skillet,transfer into a plate and set aside.
  • 5. Reduce skillet heat to medium and add 2 tablespoons margarine.Stir in onions and mushrooms,and cook until tender;set aside.
  • 6. In a large saucepan,mix flour and remaining margarine until smooth.In a medium bowl,combine half and half,cream cheese and reserved jalapeno liquid,mix well.
  • 7. Pour into the saucepan and cook until thickened.Stir in soup and parmesan cheese.
  • 8. Mix in 6 cups cooked rice,cooked bacon,sauteed spareribs,jalapeno slices,almonds,onions and mushrooms.Transfer to a 9x13 inch casserole dish.
  • 9. Bake for 40 minutes in the preheated oven.

1 cup uncooked wild rice
2 cups boiling water
1 pound sliced fresh mushrooms
1 medium onion, chopped
2 tablespoons butter
3/4 cup uncooked long grain rice
1/2 cup sliced almonds
3 cups chicken broth
1-1/2 cups heavy whipping cream
1 teaspoon salt
1/8 teaspoon pepper
3 tablespoons grated Parmesan cheese

Steps:

  • Place wild rice in a large bowl and cover with boiling water; soak for 1 hour. Drain and set aside. , In a large skillet, saute mushrooms and onion in butter until tender. In a large bowl, combine the mushroom mixture, wild rice, long grain rice, almonds, broth, cream, salt and pepper., Transfer to a greased 2-1/2-qt. baking dish. Cover and bake at 350° for 75 minutes. Uncover; sprinkle with cheese. Bake 10 minutes longer or until rice is tender.

3 pounds pork back bones, sometimes called country-style ribs
1 cup chopped onion
1/2 cup (1 stick) butter
1 teaspoon ground red pepper
1 teaspoon ground black pepper
3 bay leaves
1 tablespoon salt, or to taste
8 cups water
3 cups raw white rice
1/2 cup chopped green onion

Steps:

  • In a stockpot, combine the backbones, onion, butter, and seasonings. Add the water, bring to a boil, cover, and cook at a low boil for 40 minutes. Add the rice to the pot and return to a boil, stirring well. Boil for 10 minutes, then reduce the heat, add green onions, cover the pot, and simmer for 10 minutes or until rice is done. Remove the bay leaves and serve.

2 (14.5 ounce) cans chicken broth
1 cup uncooked wild rice
½ cup water chestnuts, sliced
¼ cup butter
1 teaspoon salt
½ pound fresh mushrooms, sliced
½ cup onion, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring chicken broth to a boil in a medium saucepan.
  • In a 1 1/2 quart baking dish, mix chicken broth, uncooked wild rice, water chestnuts, 2 tablespoons butter and salt.
  • Cover, and bake in the preheated oven 30 minutes.
  • While rice mixture is baking, melt remaining butter in a medium skillet over medium heat. Place mushrooms and onion in skillet, and slowly cook and stir until tender. Stir mushrooms and onion into the wild rice mixture, cover, and continue baking 30 minutes, or until liquid has been absorbed.

2 tablespoons Dijon mustard
2 tablespoons blackstrap molasses
1 1/2 tablespoons Chinese five-spice powder
1 teaspoon smoked salt or sea salt
2 1/2-3 pounds pork spare ribs rack
1 small head of red cabbage (about 2 pounds), shredded
2 unpeeled Fuji apples, cut into 1/2-inch cubes
6-8 green onions, diced
1/4 cup dried unsweetened cherries (optional)
1/4 cup apple cider vinegar
1/4 cup ghee or lard, melted
1/2 tablespoon sea salt
Special Equipment:
6-quart Dutch oven or a large casserole with lid

Steps:

  • Preheat the oven to 400°F.
  • In a medium bowl, make the marinade by whisking together the mustard, molasses, five-spice powder, and salt.
  • Pat the ribs dry, remove the membrane, and cut the rack in half. Place the ribs in a baking pan and rub with the marinade on both sides.
  • In the Dutch oven, toss the cabbage, apples, green onions, cherries, cider vinegar, ghee, and salt.
  • Place the ribs on top of the vegetables, meaty side up, cover, and cook for 1 hour.
  • Carefully remove the lid so the steam does not burn you, and switch the oven to broil; broil the ribs for another 10 minutes or until they are brown. Remove from the oven and let the ribs rest for 10 minutes before serving.
  • Keeps well in the refrigerator for up to 5 days or in the freezer for up to 3 months.
