ARTICHOKE & WILD MUSHROOM PIE

This rustic savoury pie shows just how modern vegetarian dishes can excite and thrill all appetites

3 tbsp olive oil
2 large onions , finely sliced
300g grilled artichoke hearts, halved
300g mixed mushrooms , halved if large
1 garlic clove , crushed
1 tsp fresh thyme leaves
500g pack ready-made shortcrust pastry
1 egg , a pinch of salt and 1 tbsp water, beaten together to glaze
large handful flat leaf parsley leaves, very roughly chopped
142ml carton soured cream , to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat half the oil in a medium frying pan, then gently fry the onions for 12-15 mins until softened and lightly browned. Tip the onions into a bowl and mix with the artichoke hearts, season if you like and set aside. Heat the remaining oil in the same pan (there's no need to clean it) over a high-ish heat. Add the mushrooms, then stir-fry for 2-3 mins until soft, throw in the garlic and thyme and continue to cook for a minute. Remove from the heat, season well and allow to cool.
  • On a floured surface, roll out the pastry into a rough circle about 40cm in diameter and drape over a large baking sheet.
  • Pile the onions and artichokes into the middle of the pastry and spread them out evenly, leaving a 10cm border around the edge, then pile the mushrooms on top.
  • Bring the edges of the pastry up over the filling. Brush the exposed pastry edge with the egg glaze. Bake for 20-25 mins until the pastry is crisp and golden brown. Sprinkle with parsley and serve immediately with the sour cream and relish.

4 cups water
1 cup yellow cornmeal
1/3 cup mascarpone
2 teaspoons kosher salt
Freshly ground pepper to taste
1 ounce dried porcini
4 cups water
3 pounds mixed wild mushrooms (like portobello, shiitake and cremini), cut into large dice, stems reserved
1/4 cup olive oil
3 shallots, peeled and minced
1 cup sherry
2 teaspoons kosher salt plus more to taste
Freshly ground pepper to taste
2 eggs
1/3 cup chopped Italian parsley

Steps:

  • To make the crust, bring the water to a boil in a medium saucepan. Whisking constantly, add the cornmeal in a very thin, steady stream. Turn the heat as low as possible. Cook for 1 hour, stirring vigorously every 10 minutes.
  • Meanwhile, combine the porcini and water in a large saucepan. Simmer for 30 minutes. Drain, reserving the mushrooms and broth. Coarsely chop the porcini and set aside. Return the broth to the pan, add the wild-mushroom stems and simmer slowly until reduced to 1 cup, about 25 minutes. Strain and set aside.
  • Heat 1 tablespoon of oil in a large skillet over medium heat. Add the shallots; saute 2 minutes. Add 1 tablespoon of oil and 1/3 of the mixed wild mushrooms; saute until browned and softened, about 5 minutes. Place in a bowl. Repeat until the remaining oil and mushrooms are used.
  • With no mushrooms in the skillet, add the sherry and simmer, scraping the bottom of the skillet with a wooden spoon, until reduced to 1/2 cup. Add the mushroom broth, all of the mushrooms, the salt and pepper. Bring to a simmer, cover and cook for 20 minutes. Taste and adjust seasoning. Whisk the eggs in a bowl and whisk in 1 cup of the mushroom mixture. Stir the egg mixture into the skillet. Set aside.
  • Preheat the oven to 350 degrees. While the cornmeal mixture is hot, stir in the mascarpone, salt and pepper. Generously brush a 10-inch springform pan with olive oil. Place the polenta in the pan, cover with a sheet of plastic wrap and press it evenly over the bottom and 3/4 of the way up the sides of the pan. Discard the plastic. Spoon the mushrooms into the pan.
  • Bake the pie for 1 hour. Garnish with the parsley. Serve hot or, for neater slices, at room temperature.

1 tsp canola oil
4 bacon strips, cut into 1/2" pieces
1 lb sliced assorted fresh mushrooms
1/4 cup finely chopped sweet onion
3 eggs
1 pkg (8 oz) cream cheese
1/2 tsp salt
1/4 tsp pepper
1 sheet refrigerated pie pastry
1 cup (4 oz) shredded sharp cheddar cheese
2 Tbsp grated parmesan cheese
1/8 tsp paprika

Steps:

  • Place garlic on a double layer of heavy-duty foil, drizzle with oil, wrap and bake at 425 for 15-20 min until softened. Remove and cool. In a large skillet, cook bacon until crisp. Remove and drain on paper towels reserving 2 tsp drippings in skillet. Saute mushrooms and onion in drippings until tender. In a large bowl, beat eggs until foamy. Add softened cream cheese and beat well. Mix in salt, pepper, mushroom mixture and softened garlic. Unroll pastry in 9" pie plate; trim and flute edge. Fill with cheddar cheese and bacon. Pour egg mixture over the top. Sprinkle with parmesan cheese and paprika. Bake at 375 for 30-35 min until a knife inserted in the center comes out clean. Let rest for 15 min. LAMB AND WILD MUSHROOM SHEPHERD'S PIE

DH and I made this delicious shepherd's pie a few nights ago and really enjoyed it. We used two pounds of lamb chopped of from a big leg of lamb, rather than using blade chops. I also used salted butter with no problems. Even though I used a 9 inch pie dish as directed, my pie spilled over the sides into the oven while cooking, so be careful. The only problem was the bit of mess in the oven, the pie looked and tasted fine. The recipe is from Williams-Sonoma.

2 lbs shoulder blade lamb chops, trimmed of fat, boned
1 lb assorted wild mushroom (such as cremini, portabello, and shiitake)
2 tablespoons all-purpose flour
3/4 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
1/2 teaspoon ground allspice
3 tablespoons olive oil
3 large shallots, minced
3 large garlic cloves, minced
1 turkish bay leaf, minced
1 3/4 cups beef stock
1 tablespoon tomato paste
6 small yukon gold potatoes, peeled, sliced into rounds 1/4 inch thick (about 1 1/2 lb total)
1/3 cup milk
4 tablespoons unsalted butter
1/2 teaspoon kosher salt
fresh ground pepper, to taste
1/4 cup chopped fresh chives

Steps:

  • To make the filling, cut the lamb into 1/2-inch pieces. Stem and cut the mushrooms into 3/4-inch pieces.
  • In a large bowl, mix together the flour, salt, pepper, and allspice. Add the lamb and toss to coat evenly.
  • In a large nonstick fry pan over medium-high heat, warm 2 Tb of the olive oil. Add the lamb and saute until well browned, about 10 minutes. Transfer to a bowl.
  • Add the remaining 1 Tb oil to the pan. Add the shallots and garlic and stir for 1 minute.
  • Add the mushrooms and the bay leaf and saute until well browned, about 6 minutes.
  • Return the lamb to the pan, stir in the stock and tomato paste and bring to a boil. Reduce the heat to medium-low, cover and simmer until the lamb is tender, about 45 minutes.
  • Uncover and simmer until the juices thicken, about 2 minutes. Transfer the filling to a 9-inch pie dish.
  • Preheat the oven to 350°F.
  • To make the topping, pour water to a depth of 1 inch into a large pot and bring to a boil over high heat.
  • Peel and slice the potatoes into rounds 1/4 inch thick. Put the potatoes into a steamer basket and set the basket over boiling water. (The water should not touch the bottom of the steamer basket).
  • Cover and steam until the potatoes are tender when pierced with a small knife, about 12 minutes. Transfer the potatoes to a large bowl.
  • Add the milk, butter, salt, and pepper. Mash well with a potato masher. Stir in half of the chives. Spoon the potatoes on top of the lamb mixture to cover it completely.
  • Bake until the pie is heated through and the potatoes begin to brown, about 35 minutes.
  • Sprinkle with remaining chives and serve immediately.

2 carrots , chopped
½ swede , chopped
12 pearl onions , peeled and left whole
1 garlic clove , crushed
1 rosemary sprig
1 tsp tomato purée
1 tsp yeast extract, such as Marmite
200g can chopped tomatoes
50ml white wine
175ml vegetable stock
500g fresh penny buns/ceps or mixed wild mushrooms , roughly chopped
200g vacumn-packed chestnuts , halved
3 potatoes , diced
2 parsnips , diced
2 carrots , diced
300g celeriac , diced
100g butter
50ml milk

Steps:

  • Heat the oil in a large frying pan, add the carrot, swede and onions, and cook for 8 mins. Add the garlic, rosemary, tomato purée and yeast extract, and cook for a further 5 mins. Add the tomatoes and white wine and scrape all the goodness off the bottom of the pan. Pour in the stock, add the mushrooms and chestnuts, then simmer for 8 mins until the sauce is reduced and thickened. Remove from the heat and allow to cool slightly.
  • Meanwhile, to make the topping, put all the vegetables in a large pan of salted water and bring to the boil. Cook for 12 mins or until the vegetables are tender. Drain, then allow to steam-dry for 5 mins. Roughly mash the roots with the butter, milk and some seasoning.
  • Heat oven to 190C/170C fan/gas 5. Pile the mushroom mixture into an ovenproof dish, top with the mash, then cook for 30 mins until golden and bubbling. Serve with some buttered greens, if you like.

2 T dried sherry

Steps:

  • Preheat oven to 400. In saucepan, mix milk and cream of chicken soup. Beat until smooth. Whisk over medium heat until just begins to boil. Remove from heat and set aside. Spray heavy skillet with butter cooking spray and heat over medium heat. Add mushrooms. Sauté until brown and crispy. Remove from skillet. Spray pan again. Add onions, carrots and celery. Sauté until onions are tender. Whisk sherry and parsley into milk mixture. Season to taste with salt and pepper. Add mushrooms and onion mixture. Add chicken. Mix well. Divide into individual, ovenproof dishes. Sprinkle liberally with thyme. Top with phyllo scraps to cover. Spray with butter cooking spray. Bake 25-30 minutes.

I may bulk up the filling with additional dried cepes, morels and black trumpets I have on hand. The presentation with the perpendicular skewers coming out at the top warrants a special dish and the skewers with brass critter handles! Marinate for a day so start ahead of time.

350 g diced venison
150 ml red wine
80 g carrots, diced
1 small onion, diced
1 bay leaf
1 juniper berries
20 g butter
1 medium onion, sliced
1 sprig thyme
2 teaspoons sugar
15 g flour
1 tablespoon tomato paste
300 ml vegetable stock
20 g wild mushrooms
1 sheet puff pastry, to cover the 18cm pie dish with a 1cm overhang
1 egg yolk, for glazing

Steps:

  • Marinate the venison in the wine, carrots, onion, bay leaf and juniper for 24 hours.
  • Preheat oven to 180C/gas mark 4 Remove the meat from the marinade (reserve the marinade). Melt the butter in a large, heavy-bottomed saucepan, add the drained venison and gently brown. Add the sliced onion, thyme and sugar, reduce the heat and continue to cook slowly until the onion pieces are soft.
  • Add the flour and tomato paste and cook for a couple of minutes. Next add the reserved marinade and stir while slowly adding the stock. Bring to the boil and simmer until the venison is cooked and falling apart, and the sauce is well reduced - 20-25 minutes. Stir in the mushrooms and check the seasoning.
  • Place the venison mixture in the bottom of the pie dish and allow it to cool. Then top it with the puff pastry, cutting off the excess to leave a 1cm overhang. (A pair of skewers inserted crossways into the pastry will keep it from sagging.) Brush with the egg yolk and bake for 15 to 20 minutes until the pastry is crisp and golden and the filling is hot. Serve with braised red cabbage and winter salad leaves.

10 tablespoons unsalted butter, chilled, cut into pieces
4 1/2 tablespoons ice water (about)
3/4 ounce dried porcini mushroom (about 3/4 cup)
2 tablespoons unsalted butter
1/2 cup shallot, finely chopped
2 1/2 teaspoons garlic, minced
10 ounces fresh mushrooms (such as crimini, chanterelles and/or stemmed Shiitake, thickly)
3 large eggs
1/3 cup half-and-half
1/2 teaspoon dried basil, crumbled
1/4 teaspoon dried thyme, crumbled
2 cups Swedish Fontina cheese (about 8 oz) or 2 cups Danish Fontina cheese, grated (about 8 oz)
to taste fresh parsley sprig

  • FOR CRUST:
  • Mix flour and salt in medium bowl.
  • Add butter and rub with fingertips until mixture forms coarse meal.
  • Mix in enough water by Tbsp to form moist clumps.

  • Bake until crust is set and begins to color, piercing bottom with fork if puffy, about 15 minutes more. Transfer to rack and cool.
  • FOR FILLING: Place porcini in small bowl.
  • Add enough hot water to cover.
  • Let soak 30 minutes.
  • Drain mushrooms.
  • Melt butter in heavy large skillet over high heat. Add shallots and garlic and saute 1 minute. Add fresh mushrooms and saute until tender and liquids evaporate, about 5 minutes.
  • Add porcini and saute 2 minutes.
  • Season to taste with salt and pepper.
  • Set aside. Whisk eggs, half and half, basil and thyme in medium bowl until blended.
  • Season with salt and pepper.
  • Sprinkle half of cheese on crust. Top with mushroom mixture and remaining cheese. Carefully pour egg mixture over mushrooms.
  • Bake until center is set, about 40 minutes.
  • Transfer to rack and cool slightly.
  • Garnish with parsley.
  • Cut into wedges and serve. NOTE: such as crimini, chanterelles and/or stemmed Shiitake, thickly sliced
