8 beef ribs (about 3 ½ pounds)
2 tablespoons flour
1 teaspoon salt substitute
1/8 teaspoon pepper
2 tablespoons bacon grease or 2 tablespoons lard
2 vidalia onions or 2 sweet onions, diced
1/2 lb tomatoes
1 jalapeno pepper, chopped
3 cloves garlic
4 fluid ounces dry sherry
4 fluid ounces chili sauce
4 tablespoons maple syrup
2 tablespoons vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon ground mustard
1 teaspoon ground cumin
1/4 teaspoon allspice
1 teaspoon oregano
3 tablespoons flour

Steps:

  • Mix 2 tablespoons flour, salt, and pepper, and coat the ribs in the flour mixture.
  • Brown the ribs in the bacon grease.
  • Put the onions in the crockpot, followed by the ribs, and finally followed by everything else EXCEPT the 3 tablespoons flour.
  • Cook on low for six to eight hours.
  • Pull about a half cup of liquid from the pot and let cool.
  • Dissolve the 3 tablespoons flour in the liquid, and pour back into pot.
  • Cook on high for fifteen minutes or until thickened.

WICKLEWOOD'S GLUTEN FREE SCOTCH EGGS

Scotch eggs are another favourite of mine that I can no longer enjoy since being diagnosed with coeliac disease., however, I have combined my two favourite scotch egg recipes and developed a whole new gluten free version...As usual ordinary breadcrumbs and sausage meat can be used if making a non gf version. The double dipping adds an extra layer of breadcrumbs and therefor more crunch. To make the whole process a little less messy, try placing sausage meat mixture portion on some Clingfilm, flatten it out slightly and use the Clingfilm to cover the egg in the sausage. For the seasoning, simple salt and pepper works fine, however, I always use my own seasoning mix recipe #440608. For a healthier alternative try omitting the frying and cook completely in the oven, however, don't forget to increase the cooking time an extra 5 mins to compensate.

4 free range eggs, hard boiled and shelled
2 free range eggs, beaten
10 ounces gluten free sausage meat
2 teaspoons fresh thyme leaves, chopped
2 tablespoons fresh parsley, chopped
3 tablespoons fresh chives or 1 spring onion, finely chopped
seasoning
2 ounces rice flour, seasoned
4 ounces gluten free breadcrumbs
oil (for frying)

Steps:

  • Preheat oven to 180c.
  • In a bowl, mix the sausage meat with the herbs and season well and divide into four portions.
  • Prepare 3 shallow bowls, one containing the seasoned rice flour, one for the beaten eggs, and the other breadcrumbs.
  • Take a boiled egg; roll it in the flour,.
  • Cover the egg in a sausage meat portion.
  • Roll it in the beaten egg and then in the breadcrumbs.
  • Repeat this process for all the boiled eggs, set aside for five minutes.
  • Double dip the eggs in the beaten egg and breadcrumbs one more time for extra texture.
  • In a heavy based pan, heat the oil and, place the eggs in the oil and fry gently, turning regularly, for 5-6 mins or until they are golden brown and crispy
  • Transfer to a baking sheet and cook in a preheated oven for a further 10 minutes.
  • Serve hot or cold.

2 stalks lemongrass, with rough outside husks removed and tender inner stalks thinly sliced
3 tablespoons sugar
2 tablespoons chopped shallots
2 tablespoons minced garlic
2 tablespoons fish sauce
2 tablespoons soy sauce
2 tablespoons sesame oil
2 tablespoons peanut oil
2 tablespoons five-spice powder
1 teaspoon chili bean paste
3 lbs baby back ribs

Steps:

  • Put everything (except ribs) in food processor and finely puree.
  • Separate ribs, rinse and pat dry.
  • Thoroughly coat each rib with sauce.
  • cover and let stand at room temperature for 1 hour or refrigerate for 24 hours.
  • Prepare a medium hot charcoal fire.
  • Grill about 6 inches from coals, turning frequently until ribs are nicely browned and cooked through about 15-20 minutes.
  • Serve immediately.

If you like baby back ribs that leave your fingers sticky this is the recipe for you! They are sweet and so delicious! I just put some ingredients together and everyone who has them just loves them and wants the recipe. Hope you enjoy them! (FYI: They are done on the BBQ--not the oven and I did not know how many ribs to put so I just put 32oz...use what you want-it wouldn't let me just say a package of ribs..lol)!

32 ounces pork ribs
2 (12 ounce) cans Coke, to add to boiling water
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
4 tablespoons brown sugar (I use Splenda)
1/2 cup maple syrup (I use ED Smith Sugar Free)
1 cup barbecue sauce

Steps:

  • Boil ribs in water on oven for 1.5 - 2 hours. Add coke to the water and some soy sauce. I really recommend you boil them. Boil them until they are almost falling off the bone.
  • Mix together rest of the ingredients and set aside for basting the ribs on the BBQ.
  • When ribs are done boiling put on BBQ on LOW heat. Baste the ribs on each side every 3 min with the sauce. You can flip the ribs over and over and they will not get "tough". They get sticky from the sauce. Do this for about 1/2 hour. Use all the barbecue sauce up.
  • Eat and enjoy!

4 lbs country-style pork ribs, seperated into individual ribs
3 tablespoons butter
1 cup ketchup
1 cup pineapple juice
1/2 cup brown sugar
1 small onion, minced
3 tablespoons molasses
1 tablespoon paprika
1/2 teaspoon garlic powder

Steps:

  • For sauce, melt butter in a 2 quart saucepan. Add ketchup, pineapple juice, brown sugar, onion, molasses, paprika and garlic powder. Boil for 5 minutes. Transfer to a large bowl and cover. Set aside.
  • Place ribs in a large stockpot. Cover with water. Bring to a boil. Reduce heat and simmer for 20 minutes or until cooked through and no longer pink.
  • While ribs are simmering, prepare a charcoal grill. When coals are hot, push them to one side of the grill.
  • Drain ribs. Using tongs, dunk ribs in sauce to coat. Place on grill. DO NOT PLACE THE MEAT DIRECTLY OVER THE HOT COALS. Cover grill and cook for 10 minutes. Using tongs, dunk each rib in sauce again and grill covered for an additional 10 minutes.
  • Serve with plenty of napkins.
