WICKLEWOOD'S GLUTEN FREE STOLLEN



Wicklewood's Gluten Free Stollen image

Stollen is a German fruitbread traditionally eaten at Christmas, the design of the loaf is said to represent the baby Jesus wrapped in swaddling, which I find so sweet, but not as sweet as the delicious marzipan that runs through the centre of the loaf... I have adapted this recipe to make it gluten free, and I am currently working on a recipe for sugar free marzipan to make a low carb version.

17 ounces gluten, free flour blend
1 sachet dried yeast
1 ounce butter, melted
10 -12 fluid ounces warm milk
1 ounce caster sugar
6 ounces mixed dried fruit
1 teaspoon mixed spice
6 ounces marzipan
4 ounces icing sugar
1 tablespoon lemon juice
1 ounce flaked almonds, toasted

Steps:

  • Preheat oven to 200°C.
  • In a large bowl, mix together the flour and the yeast.
  • Add the caster sugar, mixed fruit and mixed spice, stir in the melted butter and warm milk to form soft but not too sticky dough.
  • Turn the dough out onto a lightly dusted surface and knead until smooth and the fruits are evenly distributed.
  • Lightly roll the dough into a rectangle.
  • Roll the marzipan into a sausage shape and lay it down the middle of the dough.
  • Roll the dough around it and squeeze the ends to neaten the shape.
  • Place it on a lightly oiled baking sheet, cover and leave it to prove in a warm place for approx 30 minutes.
  • Bake for about 20-25 minutes until golden brown, Allow to cool slightly.
  • Sift the icing sugar into a bowl and mix with just enough lemon juice to form a stiff icing, spread this along the top of the stollen while it is still warm.
  • Decorate with the toasted flaked almonds.

100 g parmigiano-reggiano cheese
50 g flour
10 g butter (melted)
1 tablespoon freshly ground black pepper

Steps:

  • I make this without measuring, so I'm guessing on the quentities, experiment!
  • Mix all ingredients thoroughly.
  • If sticky add a little more flour.
  • Heat a very heavy based frying pan with NO OIL!
  • Place a tbsp full of mixture in the pan and spread out to make a thin biscuit.
  • cook until it has solidified (the cheese melts and the butter evaporates).
  • Serve with"Vegetables and Pesto" or any other meal that needs a bit of a crunchy texture with it.

Ordinary gf breadcrumbs are fine for this recipe, but gf panko breadcrumbs are so deliciously crunchy and so easy to make(check out #167729)

10 ounces whole fresh mushrooms
1 cup rice flour
1/2 cup cornstarch
3/4 teaspoon gf baking powder
1/4 teaspoon garlic salt
1 cup water
2 cups panko breadcrumbs (see Homemade Panko Bread Crumbs)

Steps:

  • In a large bowl mix flour, baking powder and salt. Add water and mix until a smooth batter has formed.
  • With a dry paper towel, gently wipe the mushrooms to clean off any debris.
  • Dip mushrooms into the batter and coat evenly, allowing any excess batter to drip off.
  • Roll the mushrooms in breadcrumbs until coated thoroughly.
  • Repeat until all mushrooms are coated.
  • Heat oil to 365 degrees. Deep fry mushrooms in batches until golden brown. Drain on paper towels.

I have always made my savoury sauces using the traditional roux method, and I always will because I am a traditionalist. HOWEVER, this method is so easy and so painless, and as long as you allow it to continue to cook for several mins after it thickens (to remove the raw flour taste) it tastes like you spent ages making a roux.

2 ounces butter

Steps:

  • Place all the ingredients in a saucepan.
  • Whisking continuously, bring to a boil.
  • Reduce heat but continue to whisk and cook for 2 minutes.
  • Add preferred flavouring such as cheese or parsley.
  • Season to taste and serve as desired.

Dumplings or dough balls, can be the finishing touch to any stew or soup, it is completely down to personal taste as to which herb to use, but mixed herbs are pretty fool proof. Gluten free suet is available on the market, but it is only grated vegetable fat,,,so why not use grated vegetable fat and save the pennies.

5 ounces gluten free plain flour
2 ounces gluten free vegetable fat or 2 ounces lard, grated
2 tablespoons low fat natural yogurt
1 teaspoon dried mixed herbs
1 1/4 teaspoons baking powder
1/4 teaspoon salt
freshly ground black pepper
water, to mix

Steps:

  • In a bowl mix the flours, lard, yogurt, herbs, baking powder and seasoning.
  • Add enough water to bind together.
  • Shape the mixture into dumpling mixture into 7-8 balls, and gently drop simmering stew or casserole.
  • Cover and cook until they rise to the surface, approximately 15 minutes.
  • Remove cover and allow to brown. (Optional).
