1 lb red onion, cut into 1/8-inch slices
3 tablespoons lemon juice
1 tablespoon minced gingerroot
1 tablespoon olive oil
2 large lemons
3 tablespoons fresh cilantro (or 2 Tbs.. coriander)
salt and pepper

Steps:

  • In large bowl, combine onions with lemon juice and ginger. Arrange a few onion slices on the bottom of a baking dish(reserve some). Rinse Tilapia, pat dry with paper towel, brush outside with oil, lay fish on top of the onion mixture.
  • Cut off about 1/2 inch from each of the lemons. Stuff the fish cavity with reserved onions, lemon ends and half of the cilantro. Cut remaining lemons into thin slices; tuck slices around base of fish and sprinkle remaining cilantro over onions and lemons in dish.
  • Bake, uncovered, in a 400°F oven until fish temperature reaches 135°F and flesh in opaque and flaky. Gently pull off skin and serve fish with onions and a fresh lemon slice. Add salt and pepper to taste.
  • I think this may take 30-40 minutes*** I have not made this but my gf has :).

Whole Tilipia wrapped in foil, seasoned and grilled. Delicious and healthy. Impressive to serve a whole grilled fish. You could use red snapper, black bass or similar fish, this is just what was available to me.

2 whole tilipia fish (about 1 1/2 pounds)
aluminum foil
1 lemon, sliced
2 teaspoons seafood seasoning or 2 teaspoons lemon pepper seasoning
2 teaspoons butter
1/4 cup flat-leaf Italian parsley, chopped
2 cloves, garlic, minced
1/2 teaspoon kosher salt
1/2 lemon, juiced
1/4 cup olive oil, extra virgin

Steps:

  • To prepare the fish for the grill, lightly grease the foil. Wash the fish and place each fish on a square of heavy duty aluminum foil. Season cavity and sides of fish with the Seafood seasoning of your choice, or Lemon Pepper seasoning. Dot with butter and put lemon slices in cavity. Seal aluminum foil around fish. Grill over a med-high heat for approximately 25 minutes - or until done. After 20 minutes or so check the fish to see if it is flaky and tender. Open up the foil packets to check each one.
  • For the sauce: In a small serving dish combine the parsley, garlic, salt, lemon juice and extra virgin olive oil. Mix well. Serve this over the fish, or on the side.
  • For a whole fish 1 1/2 pounds to 2 pounds.
  • Charcoal Grill 10 to 12 minutes per side over direct heat.
  • Gas-Grill 12 to 14 minutes per side, direct heat.
  • Fish should flake easily when tested with a fork.
  • Garnish with parsley, and lemon slices.

I found this recipe on a package of frozen Tilapia filets. Haven't tried it yet but it sounds really good.

Number Of Ingredients 12

4 tilapia fillets
TOPPING
1 c pineapple juice
1/2 c coconut milk, unsweetened
2 tsp lime juice
1 Tbsp cornstarch
2 Tbsp pineapple juice
1/4 c toasted coconut
ON THE SIDE, OPTIONAL
1/2 c fresh pineapple chunks
1/2 c fresh papaya chunks
1/2 c fresh kiwi chunks

Steps:

  • 1. Preheat oven to 325 degrees. Lightly spray a baking dish with canola oil spray (or other cooking oil spray).
  • 2. Place fish in baking dish, and season with salt & pepper to taste. Loosely cover with foil & bake 12 to 15 minutes, until fillets are opaque.
  • 3. In small bowl, combine the 1 Tbsp cornstarch and 2 Tbsp pineapple juice, set aside. In a sauce pan, bring pineapple juice, the lime juice & coconut milk to a boil. Add cornstarch mixture & simmer, stirring constantly, until thickened. Serve over warm tilapia.
  • 4. Top with toasted coconut, and serve with fruit chunks on the side, if desired.
