WHOLE WHEAT FLAX WAFFLES

Number Of Ingredients 12

1 cup whole-wheat flour
1/2 cup white whole wheat flour
1/4 cup ground flax seeds
2 Tbsp brown sugar
1 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 2/3 cups milk
1/4 cup melted butter
1 Tbsp pure maple syrup
1 large egg
1 tsp vanilla extract

Steps:

  • Combine all of the dry ingredients, and whisk together.
  • Combine all of the wet ingredients, in a separate bowl, and whisk together.
  • Combine the wet and dry ingredients, mixing until smooth.
  • Heat your waffle iron and cook the waffles according to your specific iron's directions. Top with powdered sugar, yogurt, maple syrup, and any other favorite topping.

The original recipe was made by my nana for years and years. Then my mom made it for me growing up, and now I make these waffles myself (but with a couple of healthy changes) They still taste just as good as the did when I was a kid. We serve them sometimes for breakfast, but in our family waffles have almost always been served for dinner. When you can't think of anything else to make.

Number Of Ingredients 9

1 1/2 cups whole wheat flour
1 1/2 cups white flour
1/2 teaspoon stevia or 4 tablespoons sugar
6 teaspoons baking powder
4 tablespoons flax seeds
1/2 teaspoon salt
4 eggs
3 cups milk
1/4 cup olive oil or 1/4 cup melted butter

Steps:

  • Mix dry ingredients.
  • Mix wet ingredients separately.
  • Mix dry and wet together whisk until smooth.
  • Pour about 3/4 of a cup of batter at a time onto the waffle iron.
  • You will begin to see steam coming out of the iron.
  • Cook the waffles until the steam is almost gone.
  • Any waffles we don't eat right away get put into the freezer, and we pop them in the toaster for a quick breakfast or snack.

I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.

2 eggs, beaten
1 ¾ cups skim milk
¼ cup canola oil
¼ cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
½ cup flax seed meal
¼ cup wheat germ
¼ cup all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
¼ teaspoon salt

Steps:

  • In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
  • Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

Delicious! I estimated the measurements by checking out various recipes for other non-vegan waffles and subbed the eggs for mashed banana and the flavor was wonderful. Best with fresh berries and real maple syrup.

1/4 cup flax seed
2 tablespoons sugar

3 cups soymilk
1 large banana, mashed (about 1 cup)
1/4 cup canola oil
2 teaspoons vanilla extract

Steps:

  • In a large bowl, mix together the dry ingredients. In a large measuring cup, mix the wet ingredients. Pour the wet into the dry and blend using a hand mixer on a low setting until you get a smooth batter.
  • Heat a waffle iron and spray with oil. Pour in the batter and cook until it stops steaming and the waffles are browned.
