1 (8 ounce) package light cream cheese, softened
1 tablespoon taco seasoning
1/2 cup picante sauce or 1/2 cup salsa
1 (2 1/4 ounce) can sliced black olives, drained
1 (4 ounce) can chopped green chilies (optional)
1/2 cup shredded taco cheese (or cheddar cheese)
3 tablespoons red bell peppers, chopped
3 tablespoons green bell peppers, chopped
1/4 teaspoon cayenne pepper (optional)
1 teaspoon chopped garlic (optional)
7 (8 inch) whole wheat tortillas

Steps:

  • In a medium bowl, mix together cream cheese, taco seasoning and picante sauce. Stir until smooth and well blended. Fold in black olives, green chiles(if using), cheese, peppers, and cayenne and garlic(if using).
  • Place one tortilla on a plate; spread a thin layer of cream cheese mixture onto the tortilla. Fold sides of tortilla in, fold bottom of tortilla up, and roll to opposite end. Cut into ½ -inch slices and place pinwheels on a festive serving platter.
  • Repeat with remaining tortillas. Serve immediately or cover and chill until serving time. Enjoy!

4 (8-inch) whole-wheat tortillas
1/4 cup extra-virgin olive oil
1 1/2 teaspoons adobo or Creole seasoning (recommended: Bruno's Dry Adobo Seasoning)
Vegetable oil cooking spray

Steps:

  • Preheat the oven to 350 degrees F. Lightly brush the tortillas, front and back, with olive oil. Season generously with adobo seasoning.
  • Cut each tortilla round into 8 triangular wedges with kitchen scissors or a very sharp knife. Spray 2 or 3 baking sheets lightly with vegetable oil cooking spray. Evenly spread the tortilla chips in a single layer pm a large baking sheet. Bake, turning halfway through the cooking time, until crisp and golden brown, about 15 minutes. Serve warm or at room temperature.

Two 8-ounce blocks cream cheese, softened
1/4 cup jarred pesto
2 burrito-size spinach tortillas
2 burrito-size whole wheat tortillas
2 burrito-size jalapeno-Cheddar tortillas
1 cup spinach leaves, chopped
One 6-ounce jar marinated artichoke hearts, chopped
1/4 cup sliced green olives
1/4 cup sliced sun-dried tomatoes
4 slices Swiss cheese
8 large slices pepperoni
8 large slices salami
8 large slices spicy capicola
4 slices pepper jack cheese
1 cup arugula
6 mini sweet peppers, slice thin
1/2 cup chopped hot cherry peppers

Steps:

  • For the base spread and tortillas: Mix together the cream cheese and pesto until well combined. Lay out the spinach, whole wheat and jalapeno-Cheddar tortillas and divide the cream cheese mixture among them. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.
  • For the veggie pinwheels: Evenly distribute the spinach over the top of the base spread on the spinach tortillas. Arrange the artichokes, green olives and sun-dried tomatoes over the spinach. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the meaty pinwheels: Shingle the cheese, pepperoni, salami and capicola onto the base spread on the whole wheat tortillas, slightly favoring one side. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the spicy pinwheels: Divide the pepper jack between the jalapeno-Cheddar tortillas topped with the base spread. Divide the arugula, sliced peppers and chopped cherry peppers between the tortillas. Roll up the tortillas tightly and individually wrap in plastic. Refrigerate the rolled tortillas for at least 2 hours and up to 12 hours.
  • Unwrap and slice each tortilla into 1-inch segments/pinwheels. Arrange on a platter and serve.

2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons olive oil
1/2 cup warm water (more or less as needed)

Steps:

  • Combine flour, baking powder, and salt.
  • Add olive oil and stir until well combined.
  • Add in warm water a few tablespoons at a time and until the dough can be gathered into a ball.
  • On a floured surface, knead dough by hand for about 10-15 minutes Cover and let rest for 15 minutes.
  • Divide dough into 10 balls.
  • Roll each ball to form a circle. (Make sure surface is floured or else dough will stick).
  • Cook each tortilla on a ungreased skillet over medium-high heat for about 1 minute (30 seconds on each side) until puffy.
  • Freeze or eat right away!
