Whole Wheat Hamburger and Hot Dog Buns (Bread Machine) image

This is from Bread Machine Magic. The best bun we ever had. When barbecuing, I usually divide the dough in half and make 4 burger buns and 6 hot dog buns.

Number Of Ingredients 9

1 cup water
1 egg
2 cups all-purpose flour
1 cup whole wheat flour
3/4 teaspoon salt
1/4 cup shortening
1/4 cup sugar
3 teaspoons yeast
1 tablespoon vital wheat gluten (optional)

Steps:

  • Place all ingredients in bread pan, select Dough setting, and press Start. (Vital Wheat Gluten is optional but the bread will rise higher with it.).
  • When dough has risen enough, the machine will beep. Remove bread pan, and turn out dough onto a floured countertop. Gently roll and shape the dough into a 12-inch rope.
  • With a sharp knife, divide dough into 8 pieces for hamburger buns or 12 pieces for hot dog buns.
  • Grease a baking sheet. Roll pieces of dough into balls and flatten for hamburger buns or shape into 6-inch rolls for hot dog buns. Place on prepared baking sheet. Cover and let rise in warm oven 10 to 15 minutes until almost doubled.
  • Preheat oven to 400°F Bake 10 to 12 minutes until golden brown (be careful mine cook pretty fast). Remove from oven and cool on racks. When ready to use, split buns horizontally. These will keep in plastic bag in the freezer for 3 to 4 weeks.

Number Of Ingredients 9

2 packages (1/4 ounce each) active dry yeast
1-3/4 cups warm water (110° to 115°)
1-1/4 cups whole wheat flour
1/4 cup nonfat dry milk powder
3 tablespoons sugar
2 teaspoons salt
2 teaspoon lemon juice
5 tablespoons butter, melted, divided
3-1/2 to 4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water; let stand 5 minutes. Add wheat flour, dry milk, sugar, salt, lemon juice, 3 tablespoons butter and 1 cup all-purpose flour. Beat until smooth. Add enough of the remaining all-purpose flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 10 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in warm place until doubled, about 1 hour. , Punch down dough. Shape into 14 buns, about 3-1/2 in. in diameter. Place on greased baking sheets; brush with 1 teaspoon of remaining butter. Cover and let rise until doubled, about 30 minutes. Bake at 375° for 14-16 minutes. Remove from baking sheets; brush with remaining butter. Cool on wire racks.

Number Of Ingredients 8

2 cups warm water
1/4 cup corn oil or 1/4 cup canola oil
2 teaspoons salt
1/2 cup cooked oatmeal
1/4 cup flax seed, ground
1/2 cup honey
6 cups whole wheat flour (you can replace 2 of the cups with white flour if you like)
2 tablespoons active dry yeast

Steps:

  • In a large mixing bowl place all ingredients except flour and yeast.
  • Mix, adding 4 cups whole wheat flour(or 2 cups white flour, 2 cups whole wheat, if desired)and 2 tbls. yeast.
  • Whip with a wooden spoon 5 minutes. Slowly, add the rest of the flour. Turn out on a floured board and knead till smooth.
  • Spray a large bowl with cooking spray and place dough in it. Put in a warm place to rise, covered with a towel, about 1 hour.
  • When the dough has doubled in size, divide into 12 pieces. Roll into smooth balls. Flatten with the palm of your hand and place on a baking sheet.
  • Let rise till doubled, about 45 minutes to an hour.
  • Bake at 350*F. 20-25 minutes.
  • Remove from oven. Cool on wire rack.

OPTIONAL:
1 cup milk
1/2 cup water
1/4 cup butter
1 3/4 cups whole wheat flour (King Arthur Flour recommended)
2 1/2 cups all-purpose flour* (or bread flour. King Arthur Flour recommended)
1 (.25 ounce) package instant yeast (I used Fleischmann's Rapid Rise Yeast)
2 tablepoons white sugar
1 1/2 teaspoons salt
1 egg
1 egg, whisked
1 to 2 tablespoons poppy or sesame seeds

Steps:

  • In a small saucepan, heat milk, water and butter until very warm, 120°F (50°C). In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Variation: You can mix all the ingredients in a Kitchen Aid Stand mixer- with the dough attachment. Knead until the dough is elastic and smooth-- 5 to 8 minutes. Divide dough into 10 to 12 equal pieces. Shape each piece into a square. Don't worry about perfection. To shape the hamburger roll, grab one corner and fold it in, repeat with all four corners. Grab the center, and twist. Place onto a lightly floured surface and gently roll around (folded side down) and then gently shape the sides into a round shape. TIP: Turn your oven on WARM for 2 to 3 minutes and then shut off. This will help to speed up the "proofing" of your dough. Place the rolls onto a parchment covered baking sheet (or greased). Found this recipe in a magazine a long time ago. Have been making them almost weekly ever since! I have made some alternate versions as well. They're easy, most of the time listed is rising time not actual working time. And they never fail to impress! You can also add 1 tsp. chopped garlic (or more!) and use olive oil instead of the butter but they seem to need a little extra flour for easier handling with the olive oil.

1/2 cup warm water (110-115 degrees F)
1/2 teaspoon sugar
1 (1/4 ounce) package bread machine quick-acting active dry yeast
1/2 cup milk, warm (110-115 degrees F)
2 tablespoons butter, melted, cooled
1 1/2-2 cups bread flour, divided
2 tablespoons fresh rosemary, chopped
1 teaspoon salt
1/2 cup whole wheat flour
1 egg white, lightly beaten
6 tiny sprigs fresh rosemary

Steps:

  • Place water, sugar and yeast in large bowl of a stand mixer wih paddle attachment. Let stand 2-3 minutes or until yeast is dissolved.
  • Add milk, butter and 1 cup of the bread flour; beat at low speed until combined.
  • Add salt and rosemary; beat until combined.
  • With mixer running, slowly add whole wheat flour and enough of the bread flour to form a soft dough.
  • Beat at medium-low speed 5 minutes or until smooth and elastic. (Can be made by hand. Knead 10 minutes if doing by hand).
  • Place in a greased medium bowl, cover with plastic wrap and a towel. Let rise in a warm place until doubled in size.
  • Gently punch down dough to deflate; place on a lightly floured surface. Divide into 6 pieces. Form each piece into a ball; place on a parchment paper lined baking sheet. Cover with towel; let stand 3 minutes. Flatten into 3 3/4" rounds. (should weigh about 4 ounces each) Cover with a towel; let rise another 15 minutes.
  • At this point, you can place another light-weight cookie sheet on top of the buns to keep the buns flatter but I don't think it's necessary. Let them rise another 25 minutes or until almost doubled in size (dough should hold slight indentation when gently pressed).
  • Preheat oven to 375 degrees. Lightly brush the tops of the buns with egg white; lightly press a rosemary sprig onto the center of each bun. Bake 20 minutes or until golden brown and bottoms sound hollow when gently tapped. Cool completely on wire rack.

I found this fantastic hamburger bun recipe on www.cooks.com, tweaked the instructions to make it easier to understand. These buns smell great, taste amazing, and have easy prep in my Kitchen Aid mixer! Waiting for them to rise is the only bummer, but expected with good yeast breads. Keep in mind the buns will rise a bit while cooking, so you don't have to wait for them to be the size you'd like before baking them. Enjoy!

2 (1/4 ounce) packets fast rise yeast
1/4 cup water (lukewarm)
2 cups hot water
4 tablespoons non-fat powdered milk
1 teaspoon salt
3 cups white flour (you may have to add an additional c. to get a "doughy" consistency)
1/4 cup oil
1/4 cup honey
2 1/2 cups whole wheat flour

Steps:

  • Dissolve yeast and lukewarm water in a cup.
  • Pour the hot water over the whole wheat flour and stir; add dry milk, oil, honey, and salt; stir well. Let cool and then add the yeast mixture; beat with electric beater or place in processor for 3 minutes.
  • Knead in the remaining white flour to make a soft dough.
  • Let rise until light and double in bulk (about 30-45 minutes). Punch down and let rise again.
  • Place on floured table and roll out about 1/2 inch thick. Cut with floured doughnut cutter without the "hole" or a small can the size of a bun. Let rise again and bake at 375 degrees F. 25 minutes. When done, brush the tops with oil or butter. Cut in half, serve warm.
