WHOLE WHEAT CHOCOLATE CHIP COOKIES

Whole Wheat Chocolate Chip Cookies image

This healthier version of the original chocolate chip cookie is still chewy and full of flavor. I came up with this recipe on my own so that I could feel a little less guilty about snacking on my favorite sweet treat. Unfortunately, I think they are so delicious that I tend to eat more than I should!

WHOLE-WHEAT CHOCOLATE CHIP COOKIES

Whole-Wheat Chocolate Chip Cookies image

Huge, craggy, chewy, and delicious, these cookies are guaranteed to become classics in your kitchen. The whole-wheat flour gives them a rich nuttiness; the heft, caramel glow, and generous chunks of hand-chopped chocolate make them irresistible.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes about 20

Number Of Ingredients 10

3 cups whole-wheat flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
8 ounces (2 sticks) cold unsalted butter, cut into 1/2-inch pieces
1 cup dark brown sugar
1 cup sugar
2 large eggs
2 teaspoons pure vanilla extract
8 ounces bittersweet chocolate, roughly chopped into 1/4- and 1/2-inch pieces

Steps:

  • Place 2 racks in upper and lower thirds of oven and preheat to 350 degrees. Line 2 baking sheets with parchment. You can butter the sheets instead, but parchment is useful here because the large chunks of chocolate can stick to the pan.
  • Sift dry ingredients into a large bowl, pouring back into bowl any remaining bits of grain or other ingredients in sifter.
  • Add butter and sugars to bowl of a standing mixer fitted with a paddle attachment. With mixer on low speed, mix until butter and sugars are just blended, about 2 minutes. Use a spatula to scrape down sides of bowl. Add eggs one at a time, mixing until each is combined. Mix in vanilla. Add flour mixture to bowl and blend on low speed until flour is barely combined, about 30 seconds. Scrape down sides and bottom of bowl.
  • Add chocolate all at once to batter. Mix on low speed until chocolate is evenly combined. Use a spatula to scrape down sides and bottoms of bowl, then scrape batter onto a work surface and use your hands to fully incorporate all ingredients.
  • Scoop mounds of dough about 3 Tbsp. in size onto baking sheet, leaving 3 inches between them, or about 6 to a sheet.
  • Bake cookies for 16 to 20 minutes, rotating sheets halfway through, until cookies are evenly dark brown. Transfer cookies, still on parchment, to counter to cool and repeat with remaining dough. These cookies are best eaten warm from oven or later that same day. They will keep in an airtight container for up to 3 days.

WHOLE-WHEAT ALMOND-BUTTER SANDWICH COOKIES

Whole-Wheat Almond-Butter Sandwich Cookies image

You'll go nuts for these scrumptious treats, made with almond butter and toasted almonds for an update on the beloved peanut-butter sandwich cookie. The make-ahead icebox dough is cut into thin rounds that are perfect for pairing and filling. Martha made this recipe on "Martha Bakes" episode 809.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Time 1h25m

Yield Makes 30 sandwich cookies

Number Of Ingredients 11

1 1/4 cups whole-wheat pastry flour
1 teaspoon baking soda
3/4 teaspoon coarse salt
1 stick (1/2 cup) unsalted butter, room temperature
1/2 cup smooth natural unsalted almond butter, well stirred
1 cup packed light-brown sugar
1 large egg
1 cup sliced almonds, toasted and finely chopped
16 ounces cream cheese, room temperature
1/4 cup honey
1/2 teaspoon pure vanilla extract

Steps:

  • In a bowl, whisk together flour, baking soda, and salt. In another bowl, with an electric mixer, beat butter on medium-high, 1 minute. Add almond butter; beat until smooth. Beat in brown sugar, then egg, until well mixed. Reduce speed to low and gradually add flour mixture until just combined. Stir in almonds.
  • Form dough into an 11-inch-long log, 1 3/4 inches in diameter. Wrap in parchment and freeze until firm, about 1 hour (or up to 3 months).
  • Preheat oven to 350 degrees. Using a chef's knife, slice log into scant 1/4-inch-thick rounds, using one quick motion for each slice. (For easier slicing, keep log frozen between batches of cookies.) Arrange rounds 1 1/2 inches apart on parchment-lined baking sheets, pressing back into shape as needed.
  • Bake, rotating sheets halfway through, until cookies are light golden on edges, 8 to 10 minutes. Let cool completely on sheets on wire racks. Cookies can be stored, covered, up to 5 days.
  • With an electric mixer, beat cream cheese, honey, and vanilla on medium until combined. Spread 1 tablespoon each on the bottoms of half of the cookies, then sandwich with remaining cookies, pressing gently to spread filling to edges. Filled cookies are best the same day.

WHOLE WHEAT PEANUT BUTTER OATMEAL COOKIES

Whole Wheat Peanut Butter Oatmeal Cookies image

I love these cookies. They are crunchy and chewy and creamy and warm and good. I have been known to let the kids have them for breakfast when I want to sleep in on a Saturday morning. But that is a secret, so don't tell anyone. ;-)

Provided by Roosie

Categories     Dessert

Time 32m

Yield 2 dozen, 12 serving(s)

Number Of Ingredients 9

1/2 cup margarine, softened
1/2 cup peanut butter
3/4 cup brown sugar
1 egg
1/2 teaspoon vanilla
1/4 teaspoon salt
1/2 teaspoon baking soda
1 1/4 cups rolled oats
3/4 cup whole wheat flour

Steps:

  • In a large bow combine the softened margarine and peanut butter.
  • I measure the peanut butter by packing it tightly into a metal measuring cup.
  • Then I scrape it out with my fingers.
  • Add the sugar or Sucanat and the egg to the bowl.
  • Mix it up really good until it is smooth, fluffy and glossy.
  • I do this with a wire whisk.
  • You could use a big spoon if you prefer.
  • Add the vanilla and stir it in a little.
  • Add the salt, baking soda, oatmeal, and flour.
  • Stir it all up really well.
  • You need a spoon to stir in the dry ingredients.
  • A whisk just won't work for this part because the batter is so thick.
  • Drop the dough by spoonfuls onto an ungreased cookie sheet.
  • These cookies don't spread very well so flatten the cookies with a fork or the flat bottom of a cup which has been dipped into flour.
  • Bake at 350°F for about 12 minutes.
  • Half a cup of chocolate chips may be added to the batter if desired.

WHOLE WHEAT OATMEAL COOKIES WITH EVERYTHING

Whole Wheat Oatmeal Cookies With Everything image

Based on Quaker Oats' Vanishing Oatmeal Cookies Recipe. I made them a few times, and I never thought they were quite good enough. They weren't fluffy enough and they didn't have nearly enough oatmeal! I found out one day when I ran out of white flour, that whole wheat tastes great in oatmeal cookies. I like to pulse the oats in the food processor a few times so they're extra fluffy, but instant oatmeal works very well.
