MOM'S 100% WHOLE WHEAT AIR BUNS (ROLLS) FOR ABM

Mom's 100% Whole Wheat Air Buns (Rolls) for Abm image

I find most 100% whole wheat buns are very dense, and let's be frank, taste like the floor of a barn. This recipe is an adaptation of my "Mom's Air Buns" #168628, and makes delicious, soft, healthy, and easy to make rolls. I think the unusual addition of vinegar is what makes the difference. Edited to include links to recipe#419620, and recipe#419622 for those of you who wish to make whole wheat loaves instead of buns...same great taste and texture! For those unfamiliar with how to shape rolls, you may find it helpful to look at the following links for instructions: http://www.recipetips.com/kitchen-tips/t--1121/shaping-rolls.asp http://www.finecooking.com/articles/shaping-dinner-rolls.aspx

1/4 cup shortening or 1/4 cup soft butter
1/4 cup sugar or 4 tablespoons honey
1 teaspoon table salt

WHOLE WHEAT BREAKFAST ROLLS

Whole Wheat Breakfast Rolls image

Made with molasses, half whole wheat half all-purpose flour, these whole wheat rolls are soft, flavorful and a great addition for your recipe book.

Provided by Milk and Pop

Categories     Bread

Time 2h40m

Number Of Ingredients 8

1 2/3 cups whole-wheat flour
1 1/3 cups all-purpose flour
1/2 tbsp salt
2 tsp instant yeast
11/4 cup whole milk, lukewarm
3 tbsp plus 1 tsp molasses
1 large egg, room temperature
3 tbsp unsalted butter, melted

Steps:

  • Add whole-wheat and all-purpose flour, salt and yeast in a large bowl (or the bowl of your stand mixer). Whisk to combine.
  • Whisk lukewarm milk with molasses, 2 tablespoons of melted butter and egg until molasses has dissolved.
  • Add the liquid mixture to the flour mixture and mix until dough starts to form and no dry flour remains. If kneading with a stand mixer, do it on low speed for 6 minutes. If doing it by hand, knead for about 10 minutes. In the end, dough will be smooth and elastic.
  • Cover the dough with plastic wrap or a damp towel and let rise for one hour or until doubled in size.
  • After the first rise, divide the dough into 8 (large), 12 (medium) or 18 (small) pieces. Shape each one into a ball by stretching dough over itself and pinching the edges together, and place them into a lined baking dish.
  • Cover and let the rolls rise for 40 minutes to 1 hour.
  • Preheat oven to 350 °F and place a rack on lower-middle position.
  • Mix the remaining butter with 1 teaspoon of molasses and use it to brush gently your rolls. If you prefer, use only half the mixture before baking, and brush the whole wheat rolls with the remaining half after baked.
  • Bake for 25 to 30 minutes, until rolls are golden brown on top.
  • Wait 10 minutes before serving.

BREAD MACHINE WHOLE WHEAT ROLLS

Bread Machine Whole Wheat Rolls image

This easy recipe is from my Welbilt bread machine manual. The molasses and honey give the rolls a delicious, but not overly sweet taste. I usually cut this recipe in half but use the same amount of yeast. These rolls are always served for our Thanksgiving meal. Leftover (day old) rolls make perfect croutons or breadcrumbs.

Categories     Breads

Time 15m

Yield 12 rolls

Number Of Ingredients 7

1 1/4 cups water
2 tablespoons oil (read NOTE*)
2 tablespoons honey
2 tablespoons molasses
1 1/2 teaspoons salt
4 cups whole wheat flour
1 tablespoon active dry yeast

Steps:

  • Place the ingredients into the bread baking pan as recommended by your bread machine's manual. Use the DOUGH cycle setting.
  • To hand shape the roll, once the dough cycle is complete remove the dough to a lightly floured cutting board. Divide the dough into 12 equal pieces and shape into balls. Place the rolls into greased muffin tins, brush lightly with melted butter or butter substitute. Cover with a piece of wax paper and a clean cloth and let rise in a warm place for about 15-20 minutes.
  • Bake the rolls at 375°F for 15-20 minutes.
  • Refrigerate leftovers.
  • *NOTE: Here's a trick to measure the honey and molasses easily. By measuring the oil first, the oil coats the measuring utensil. Then when you measure out the honey and molasses the two ingredients slide off easily into the bread machine pan.

CUMIN BREAD ROLLS (A B M)

Cumin Bread Rolls (A B M) image

From the November 1997 issue of Bon Appetit. I take a shortcut and use the dough cycle on an automatic bread machine which saves time. Whole wheat flour can be substituted for part of the white flour. Try this with chili, stew-any hearty soup!

Categories     Breads

Time 15m

Yield 24 rolls

Number Of Ingredients 11

1 cup warm milk
1/4 cup water
1/4 cup sugar
3 tablespoons butter, at room temperature
1 teaspoon salt
2 large eggs
3 3/4 cups flour
1 1/2 teaspoons active dry yeast
1/3 cup butter, melted
1 large egg, beaten
2 tablespoons cumin seeds, lightly toasted

Steps:

  • Place first 8 ingredients in bread pan in order given as indicated by your bread machine manual.
  • Set bread machine for DOUGH cycle.
  • Toast the cumin seeds for about 5 minutes in a clean, dry skillet then set aside to cool.
  • Once dough is ready, place in an lightly oiled heat-proof bowl and set in warm location. Let rise for about 45 minutes or until double in size.
  • Transfer dough to lightly floured board and knead it about 10 times. Butter muffin tins.
  • Melt 3 tablespoons of butter in a small bowl. Punch down dough and divide in half. Cut each half into 12 equal pieces. Dip each dough piece in the melted butter.
  • Now pull and stretch the dough ball into a 6"-8" long rope. (It won't be perfectly shaped, and that's okay.) Tie the "rope" into a simple knot and tuck the ends under. Repeat until all rolls are shaped.
  • Place the rolls in buttered muffin tin. Brush rolls with egg glaze. Sprinkle each roll with the toasted cumin seeds. Let rise at room temperature for 30 minutes.
  • Bake until light brown, about 14-15 minutes.
  • Remove from muffin tin and serve with a smile.

WHOLE WHEAT BREAKFAST ROLLS (A B M)

Whole Wheat Breakfast Rolls (A B M) image

I don't normally have a lot of time for breakfast in the morning. I'm also trying to move towards eating more whole grains. This recipe is my own creation to fill those needs, loosely based on some recipes I looked at for both oatmeal and anadama bread in the bread machine. I get 16 rolls out of this. They're pretty dense and filling. One of my best friends tried these, and her comment was "This is really good. But it tastes so HEALTHY." Exactly what I was trying to accomplish. These are great with some peanut butter and fruit jam for breakfast on-the-go.
