BANANA BREAD WITH WALNUTS AND ORANGE ZEST
Dusting the top prior to baking with Demerara sugar, will make a caramelized topping. You can sub the pecans for the walnuts. Got this recipe from a Williams-Sonoma cookbook.

- Preheat oven to 350°F Butter and flour a 9X5 loaf pan.
- In a small bowl using a fork, mash the bananas. You should have 11/3 cups. In a separate bowl, stir together the all purpose flour, whole-wheat flour, baking powder baking soda, salt, nutmeg, orange zest and nuts, set aside.
- In a large bowl, whisk the eggs until blended. Stir the brown sugar, butter, and milk. Add the dry ingredients in 3 batches alternatively with the mashed bananas in 2 batches, beginning and ending with the dry ingredients, just until moistened. Be careful not to overmix!
- Pour the batter into the prepared pan smoothing the top with a rubber spatula. Bake for 55-60 minutes or until toothpick inserted into center comes out clean. If the top begins to brown too much, cover with a sheet of aluminum foil the last 15 minutes of baking.
- Transfer to a wire rack and let cool in the pan for 5 minutes. Turn out into wire rack and let cool completely, before slicing.
ORANGE PEEL BREAD
Grandma-Ag's Orange Bread - This bread is a fond memory of my childhood, visiting Agnes Frances Primm, my Grandma-Ag. As a young adult, I tried to duplicate the recipe, and unable. I went back and begged her for the secrets of it. When I asked her how long it had taken to develop the tricky recipe, she flattened my ego by telling me she'd gotten it out of a magazine years before! I like to make it for Christmas.

Steps:
- Place the orange zest into a saucepan and add water to cover; bring to a boil and cook 5 minutes. Strain the zest through a mesh strainer and return to the saucepan along with 1/2 cup white sugar and 1/4 cup of water. Return to a boil, then reduce heat to medium-low; cook, stirring constantly, until the water has evaporated. Allow to cool until lukewarm.
- Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
- Whisk the flour, baking powder, and salt together in a bowl; set aside. Whisk the egg and 1 cup of sugar in a bowl. Stir in the butter, milk, and cooled orange zest until blended; stir in the flour mixture until just moistened then pour into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 55 to 65 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

- Combine all ingredients in large mixing bowl.
- Stir until dry particles are moistened, about 75 strokes.
- Pour batter into greased bread pan.
- Sprinkle with topping.
- Bake at 350 degrees for 60-65 minutes until toothpick inserted in center comes out clean.
- Not recommended for use with self-rising flour.

100% WHOLE WHEAT BREAD
I got this recipe from a book for my Oster bread machine and I simply reworded the directions. This is a good selection if you like a nice heavy bread.

Steps:
- Add the liquid ingredients to the bread machine pan.
- Add the dry ingredients (not the yeast) tap the sides of the pan to settle the dry ingredients some and use your finger to push some into the corners.
- Make a well in the center with your finger to add the yeast (remember the yeast can NEVER touch the wet ingredients when you measure it in!) select the whole wheat setting on the bread machine and select your crust color preferences press start!
- When the bread has finished baking remove it from the machine and allow it to cool for about 15 minutes before you slice it.
