Yield 2 loaves.

Number Of Ingredients 10

1-1/2 cups water, divided
3/4 cup milk
1 cup All-Bran
6 tablespoons butter, cubed
1/3 cup dark molasses
3 tablespoons sugar
4 teaspoons salt
2 packages (1/4 ounce each) active dry yeast
2 cups whole wheat flour
3-1/4 to 3-3/4 cups all-purpose flour

Steps:

  • In a saucepan, combine 1 cup water and milk; bring to a boil. Remove from the heat; stir in the cereal, butter, molasses, sugar and salt. Cool to lukewarm. Heat remaining water to 110°-115°; pour into a large bowl. Sprinkle with yeast; stir until dissolved. Add cereal mixture and whole wheat flour; beat well. Add enough all-purpose flour to make a stiff dough. Turn out onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch the dough down. Shape into two loaves and place in greased 8x4-in. loaf pans. Cover and let rise until doubled, about 1 hour. Bake at 400° for 25-30 minutes.

This is a very tasty, moist bread. This recipe is the final result of experiments in trying to get a perfect whole wheat bread with my family as judges.

1 1/2 cups water
2 tablespoons powdered milk
1 teaspoon kosher salt
2 tablespoons honey
2 tablespoons molasses
2 tablespoons canola oil or 2 tablespoons walnut oil
1 tablespoon gluten
3 1/2 cups whole wheat flour
1/4 cup oat bran
1 tablespoon soy flour
2 teaspoons yeast

Steps:

  • Measure ingredients in order listed into bread machine pan.
  • I use a Grain setting and for 1 1/2 pound loaf.
  • If the dough seems too dry when first mixing I add 1 T.
  • coffee or water.

1 ½ cups warm water (110 degrees F/45 degrees C)
2 tablespoons dry milk powder
2 tablespoons vegetable oil
2 tablespoons molasses
2 tablespoons honey
1 ½ teaspoons salt
2 ¼ cups whole wheat flour
1 ¼ cups bread flour
1 cup whole bran cereal
2 teaspoons active dry yeast

Steps:

  • Place ingredients in order indicated by your manufacturer. Select the whole wheat or whole grain setting.

Posted in reply to a message board request. Recipe is from the Fleischmann's Yeast Book. This recipe makes a very good whole wheat bran bread. Prep time includes the 2 hours of rising time.

Number Of Ingredients 11

1 cup water
3/4 cup milk
1 cup 100% all-bran cereal
3 tablespoons sugar
4 teaspoons salt
6 tablespoons margarine or 6 tablespoons butter
1/3 cup dark molasses
1/2 cup warm water (105°-115°F)
2 tablespoons active dry yeast
3 cups whole wheat flour
2 1/2-3 cups unbleached all-purpose flour

Steps:

  • In a sauce pan combine 1 cup water and milk, bring to a boil.
  • Stir in cereal, sugar, salt, margarine and molasses.
  • Let cereal mixture cool until lukewarm.
  • Measure 1/2 cup warm (105°-115°F) water into a large warm bowl.
  • Sprinkle yeast into the warm water, stir until dissolved.
  • Add the warm cereal mixture and whole wheat flour to the yeast; beat until smooth.
  • Add enough white flour to make a stiff dough.
  • Turn dough onto a lightly floured board, and knead until smooth and elastic, about 8 to 10 minutes (dough should be slightly sticky).
  • Place dough in a greased bowl, turning the dough to grease the top.
  • Cover bowl, and place in a warm draft free place to rise until doubled in bulk (about 1 hour).
  • Punch dough down.
  • Turn dough onto a lightly floured board and divide dough in half.
  • Roll each half into a 12 x 8-inch rectangle.
  • Starting with the 8-inch side, roll the dough up like you would for a jelly roll.
  • Place each rolled loaf into a greased 8 1/2 x 4 1/2 x 2-inch loaf pan.
  • Cover pans and let rise in a warm draft free place until doubled (about 1 hour).
  • Bake in a preheated 400°F oven for about 30 minutes, or until done (loaves should sound hollow when lightly tapped).
  • Remove from pans and cool on wire racks.

This is a recipe from my great-grandma with simple ingredients. This bread is moist, healthy, and delicious. You can easily cut back on the sugar and switch out ingredients depending on taste or dietary restrictions. I love to use dried cranberries instead of raisins, reducing the sugar by several tablespoons when I do.

1 cup raisins
1 cup water
2 cups rolled oats
1 cup bran cereal (such as Kellogg's® All-Bran®)
1 cup whole wheat flour
¾ cup white sugar
1 teaspoon salt
1 teaspoon baking soda
1 cup milk
1 ½ teaspoons lemon juice
1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch loaf pan.
  • Bring raisins and water to a boil in a small saucepan, reduce heat to medium, and boil 5 minutes; set aside to cool.
  • Mix rolled oats, bran cereal, whole wheat flour, sugar, and salt in a bowl. Mix milk with lemon juice in a small bowl and let stand 1 or 2 minutes to sour. Stir baking soda into sour milk until dissolved. Pour milk mixture into dry ingredients; beat egg into the mixture. Stir raisins and their liquid into the batter. Pour batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the middle comes out clean, about 1 hour. Cool in pan for 15 minutes before removing to finish cooling on a wire rack.

I did a google search and found this recipe prefaced with a lot of different names. Since all of the recipes were identical I thought I would give it a try to deplete my large supply of raisin bran cereal. It made a small loaf but turned out quite yummy! Enjoy!

2 1/4 teaspoons bread machine yeast
2 cups bread flour
1 1/2 cups Raisin Bran cereal, right from the box
1/2 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon cinnamon
4 tablespoons brown sugar, packed
2 tablespoons butter
1 cup warm water (or cool if recommended by your machine)
1 tablespoon warm water (or cool if recommended by your machine)

Steps:

  • Add all ingredients in the order recommended by your bread machine.
  • The original recipe recommends the white bread setting. I used my whole wheat setting to warm the ingredients prior to mixing.
  • Press "START".

1 1/2 cups Miller wheat bran or wheat germ (available at natural foods stores and some supermarkets)
2 1/2 cups whole-wheat flour
1 teaspoon salt
1 1/2 teaspoons baking soda
1/4 cup firmly packed dark brown sugar
2 cups buttermilk
1/2 cup unsulfured molasses
1/2 cup raisins if desired

Steps:

  • In a bowl combine the bran, the flour, the salt, the baking soda, and the brown sugar. In another bowl stir together the buttermilk and the molasses, stir the mixture into the flour mixture until the batter is combined well, and stir in the raisins. Spoon the batter into a lightly greased loaf pan, 8 by 4 by 3 inches, and bake it in the middle of a preheated 350°F. oven for 1 hour to 1 hour and 10 minutes, or until the bread sounds hollow when tapped. Let the bread cool in the pan on a rack for 15 minutes, invert it onto the rack, and let it cool completely.
