Delicious! Grilling it in slices creates a crispy shell and seals in all the flavor. You don't even need butter or salt and pepper--great on its own.

1 butternut squash, sliced into rounds and seeded
1 teaspoon olive oil

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Brush both sides butternut squash with olive oil.
  • Cook on the pre-heated grill, flipping as needed, until softened and browned, 15 to 20 minutes.

Barilla Whole Grain Penne with Asparagus, Butternut Squash and Oven-Dried Tomatoes image

1 box Barilla Whole Grain Penne
1 pint cherry tomatoes, halved and seeded
3 tablespoons extra virgin olive oil
1 small butternut squash, largely diced
2 garlic cloves, pressed
1 bunch asparagus, sliced on a 1/2 inch diagonal
salt, to taste
black pepper, to taste
1/2 cup Romano cheese, grated

Steps:

  • PREHEAT oven to 225 degrees F.
  • PLACE cherry tomatoes on a baking sheet. Dry tomatoes in the oven for 2 hours.
  • BRING a large pot of water to a boil. Heat olive oil in a large skillet over medium heat.
  • COOK pasta according to package directions.
  • Meanwhile, ADD squash and sear until brown, about 3-4 minutes. Add garlic and saute for an additional 2 minutes.
  • ADD asparagus to the skillet. Saute for 2 minutes.
  • REMOVE garlic from the skillet. Add oven-dried tomatoes and season with salt and pepper.
  • DRAIN pasta and add to the skillet. Mix well.
  • TOP with cheese before serving.
  • Note: Instead of oven drying tomatoes, for faster preparation time, tomatoes may be sauted for 1-2 minutes in skillet prior to removing garlic.

Butternut Squash and Chicken Pasta image

The butternut squash somewhat melts into a delicious sauce coating the chicken and the pasta with all its lovely goodness. I got the idea from Everyday Italian's Giada DeLaurentis but left out the shrimp, eggplant and use chicken instead.

1/4 cup extra virgin olive oil
1 large onion, chopped
3 large garlic cloves, finely chopped
2 lbs chicken breasts, cut into 1 inch peices
1 small butternut squash, peeled, seeded, and cut into 1/2-inch pieces
1 teaspoon fresh rosemary
3 1/4 cups chicken broth
12 ounces pasta

Steps:

  • Heat the oil in a heavy large nonstick frying pan over medium heat. Add onion and saute until tender, about 5 minutes. Add the garlic and saute for just a minute. Add the cubed chicken and cook through. Add squash, rosemary and saute for 8 to 10 minutes. Add the broth and bring to a simmer over medium-high heat. Decrease the heat to medium-low and simmer until the squash is tender and the liquid is reduced by about half, stirring occasionally, about 10 minutes. Season, to taste, with salt and pepper.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring often. Drain pasta.
  • Toss the pasta and squash mixture in a large bowl until the liquid thickens slightly and coats the pasta. Transfer the pasta mixture to a wide shallow bowl and serve.
