These easy, flavorful turkey burgers can be cooked on the grill or stovetop. Fresh herbs, a bit of dark turkey meat, and a little olive oil keep them juicy.

2 tablespoons extra virgin olive oil
1/2 medium red onion, minced
4 garlic cloves, minced
2 pounds ground turkey meat (preferably dark meat, not breast meat)
1/2 teaspoon salt
1 teaspoon black pepper
1/2 cup loosely packed chopped parsley
1 tablespoon minced fresh rosemary
1 tablespoon minced fresh sage
2 teaspoons chopped fresh thyme
To serve:
Burger buns
Toppings like sliced onions, lettuce, sliced tomatoes, bacon , mayonnaise , mustard, relish, and/or ketchup

Steps:

  • Sauté the onions and garlic: Sauté the chopped onion in olive oil for 3 minutes over medium heat. Add the garlic and sauté for another 2 minutes, or until the garlic begins to brown. Remove from heat. Transfer the onions, garlic, and oil to a large bowl to cool down.
  • Make the burger mix: Once the onions are cool to the touch, add the ground turkey, salt, pepper, and herbs into the bowl. Using your hands, gently mix everything until well combined. You want the herbs mixed in without overworking the meat (which would make the burgers tough).
  • Form the meat into patties: Use your fingers to form a slight indentation in the middle of the patties. When burgers cook, the meat contracts from the edges. If the middle part is slightly thinner than the edges it will help the patties finish with a more even shape and less of a bulge in the middle.
  • Cook the burgers: Cook on a hot grill or in a hot cast iron frying pan for 5 to 6 minutes per side, until cooked through (165°F if using a meat thermometer). If using a grill , first pre-heat the grill on high for 10 minutes and coat the grates with a little vegetable oil. If using a frying pan , put a little oil in the pan first to help keep the burgers from sticking. A trick my mother uses when making burgers in a cast iron frying pan is to sprinkle the bottom of the pan with a little salt. The salt acts sort of like ball bearings, keeping the patties from sticking when you go to flip them.
  • Serve the burgers: Toast the buns and serve the burgers with the accompaniments of your choice-sliced onions, lettuce, sliced tomatoes, bacon, mayonnaise (especially good with mayo), mustard, relish, and/or ketchup.

2 tablespoons garlic, minced
2 tablespoons fresh sage, minced
1/2-1 teaspoon salt, as desired
fresh ground pepper
fresh lime juice
4 whole grain buns or 4 rolls

Steps:

  • Mash garlic, salt and sage together in a cup or with a mortar and pestle. Knead into the turkey, and grind in the pepper.
  • Form into 4 patties and place in a covered platter. Refrigerate for 1/2 hour so the flavors will blend.
  • Using a non-stick skillet, fry the patties until firm aand dark brown. Check for doneness, cooking until all pink is gone.
  • Serve with toasted rolls and a squeeze of lime.

1 1/4 pounds ground dark-meat turkey
1 1/4 cups coarsely grated aged provolone cheese (about 5 ounces)
1/4 cup Roasted Garlic for Turkey Burgers
2 1/2 teaspoons finely chopped fresh sage
Coarse salt and freshly ground pepper
Vegetable oil, for brushing
4 small ciabatta rolls, split
1 tablespoon olive oil, plus more for brushing rolls
Juice of 1/2 lemon
1 small bunch watercress, trimmed
3/4 cup Grilled-Tomato Sauce

Steps:

  • Using your hands, gently combine turkey, cheese, roasted garlic, sage, and 1/2 teaspoon each salt and pepper in a medium bowl (do not overwork meat). Shape into 4 patties (about 5 inches in diameter). Refrigerate, covered, until cold, about 1 hour (or overnight).
  • Preheat grill to medium-high (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Brush grill and burgers with vegetable oil. Grill, flipping once, until cooked through, 3 to 4 minutes per side. Toast rolls, cut sides down, on grill; brush cut sides with olive oil.
  • Whisk lemon juice and 1 tablespoon olive oil in a medium bowl; season with salt and pepper. Add watercress; toss.
  • Spread grilled-tomato sauce on bottom half of each roll. Top each with a burger, one-quarter of the watercress salad, and top half of roll.

My family has been trying to eat better. I am a diabetic and I also had open heart surgery to repair my Mitral Valve a few years ago, so we are trying to use more chicken and turkey in our diet. We really loved turkey burgers that we got in a fast food resturant, be we felt that we could do better at home. The problem was that the turkey burgers were really dry when we tried to make them ourselves. This recipe is the result of a lot of experimenting, until we found a way to make the burgers moister and not so heavy. Bread crumbs and an egg weren't enough so we added the vegetables and that did the trick.

1/2 medium onion
1 small bell pepper (red or green)
5 medium mushrooms
2/3 cup Italian seasoned breadcrumbs
2 teaspoons garlic, minced
4 teaspoons Worcestershire sauce
1 egg
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Mince the vegetables very fine, place in a medium bowl. Add the turkey, Worcestershire sauce, egg, bread crumbs and garlic. Mix well so that everything is incorporated. Divide into 6 patties. Place in fridge until ready to cook. Spray grill or skillet (cast iron works really well, but any skillet will do), with cooking spray. Cook patties until the internal temperature reach 165 degrees when a meat thermometer is place in the side of the patty and goes to the middle of the meat. Remove from heat and let rest 5 minutes.

2 tablespoons avocados, chopped
1 tablespoon fresh cilantro, chopped
2 slices white bread

Steps:

  • Combine the tomatillo salsa, avocado, and cilantro in a small bowl; set aside.
  • Place bread slices in a food processor; pulse 10 times or until coarse crumbs measure 1 cup.
  • Heat a large nonstick skillet over medium high heat and spray with nonstick spray.
  • Add onion and bell peppers; sauté for 5 min or until tender.
  • Stir in 1/2 tsp fajita seasoning and 1/8 tsp salt. Cool.
