3 pounds (1.4 kg) bone-in, skin-on chicken thighs and/or breasts
Salt and freshly ground black pepper
2-3 whole heads of garlic, cloves separated (40 cloves), peeled
Extra virgin olive oil
1 1/4 cups (300 ml) dry white wine, such as a Sauvignon Blanc (can sub with chicken stock and a teaspoon of lemon juice)
6 large sprigs of fresh thyme

Steps:

  • Trim and salt the chicken: Trim the chicken pieces of excess fat. Sprinkle them lightly with salt. Let sit at room temp while you peel the garlic.
  • Peel the garlic cloves: Lightly smash the garlic cloves with the side of a heavy chef's knife, just enough to break the cloves. Peel.

WHITE ZINFANDEL CHICKEN

Everybody loves this simple and delicious chicken. If you don't have white Zinfandel available, you can use another wine, whiskey, bourbon, or even balsamic vinegar. This recipe is very versatile!

4 skinless, boneless chicken breast halves
2 teaspoons sesame oil
½ teaspoon dried rosemary
½ teaspoon dried basil
½ teaspoon dried thyme
½ teaspoon garlic powder
salt and pepper to taste
1 tablespoon olive oil
1 tablespoon butter
2 shallots, chopped
½ cup white Zinfandel wine

Steps:

  • Place the chicken breasts in a shallow dish. Combine the sesame oil, rosemary, basil, thyme, garlic powder, salt, and pepper in a small bowl and mix well. Pour the herb mixture over the chicken breasts; cover and marinate 20 minutes.
  • Heat the olive oil in a large skillet over medium heat. Place the chicken breasts in the skillet and cook until lightly browned, about 5 minutes on each side. Melt the butter in the skillet, and add the shallots. Cook the shallots until softened and browned, about 5-8 minutes.
  • Increase the heat to medium-high, and stir the wine into the chicken-shallot mixture. Cook all ingredients for 5 minutes longer, allowing the wine to reduce. Check the chicken for doneness: it is cooked when the juices run clear when pierced with a fork.

WHITE ZINFANDEL JELLY



White Zinfandel Jelly image

We make Christmas baskets every year and fill them with homemade "goodies". I am always looking for something fun and unusual to put in them. This jelly was well received and everyone liked it. You can substitute the white zinfandel with champagne, rose wine or sangria if you like. The original recipe came from the Sure-jell website. (Cooking time includes, prep, cooking and processing).

Number Of Ingredients 4

3 cups white zinfandel wine
1 (1 3/4 ounce) box sure-jell fruit pectin
1/2 teaspoon butter or 1/2 teaspoon margarine (optional)
4 cups sugar, measured into separate bowl

Steps:

  • Bring boiling water canner, half-full with water, to simmer.
  • Wash jars and screw bands in hot soapy water, rinse with warm water.
  • Pour boiling water over the flat lids in saucepan off the heat.
  • Let sand in hot water until ready to use.
  • Measure the wine into a 6 or 8 quart saucepan.
  • Stir pectin into wine in the saucepan.
  • Add butter (if desired) to reduce foaming.
  • Bring mixture to a full rolling boil (a boil that does not stop bubbling when stirred) on high leat, stirring constantly.
  • Stir in all sugar quickly.
  • Bring to full rolling boil and allow to boil exactly 1 minute, stirring constantly.
  • Remove from heat.
  • Skim off any foam with metal spoon.
  • Ladle quickly into prepared jars, filling to within 1/8" of rim.
  • Wipe jar rims and threads.
  • Screw bands tightly.
  • Place jars on elevated rack in canner.
  • Water must cover jars by 1 to 2 inches, add boiling water if needed.
  • Cover, bring to a gentle boil and process for 5 minutes.
  • Remove jars and place upright on a towel to cool completely.
  • After jars cool, check seals by pressing middle of lid with finger, if it springs back, it did not seal completely and refrigeration would be necessary.

Breaded chicken breasts are sauteed until golden, then baked with Jack cheese, mushrooms, and a white wine sauce. This delicious chicken dish was taught to me by my mother. It calls for white Zinfandel wine, and has an amazing flavor. It is guaranteed to be one of your favorites, too. This dish goes well with asparagus, and some kind of pasta side (we like to make angel hair pasta with garlic herb butter). Enjoy!!

1 ½ cups grated Parmesan cheese
3 eggs, beaten
1 ½ cups Italian-style seasoned bread crumbs
3 tablespoons vegetable oil
4 skinless, boneless chicken breast halves
2 cups white Zinfandel wine
2 cups sliced fresh mushrooms
3 cups shredded Monterey Jack cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.
  • Place Parmesan cheese, eggs, and bread crumbs in three separate small bowls. Heat the oil in a large skillet over medium-high heat. Dip each piece of chicken into the Parmesan cheese, then into the egg, then into the bread crumbs. Brown the chicken on both sides in the hot skillet, and then transfer them to the prepared baking dish.
  • Pour wine into skillet, and scrape up the browned bits. Add mushrooms and cook for 5 minutes, or until tender. Top each chicken breast with even amounts of Monterey Jack cheese, then spoon mushrooms over the cheese. Pour the remaining wine from the skillet over all. Cover dish with aluminum foil.
  • Bake 30 to 35 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

1/4 cup butter
1/4 cup olive oil
1 recipe - 4 skinless, boneless chicken breast halves, pounded 1/2-inch thick
8 ounces mozzarella cheese, cut into 1/4-inch thick slices
1/4 cup fresh parsley, chopped
1 recipe (or to taste) 16 capers
2 tablespoons cornstarch
1/2 cup water
6 cloves garlic, minced
3/4 cup white Zinfandel wine
1 1/3 cups heavy cream
1 recipe (to taste) salt and ground black pepper

Steps:

  • Preheat an oven to 200 degrees F (95 degrees C).
  • Melt the butter with the olive oil in a large skillet over medium-high heat. Pan fry the chicken breasts until golden brown on both sides, 5 to 7 minutes per side.
  • Place 2 ounces of mozzarella cheese on each chicken breast, then sprinkle parsley and capers on top. Reduce heat to medium, cover pan, and allow cheese to melt, about 3 minutes.
  • Transfer the chicken to a large baking dish, and cover with aluminum foil. Keep it warm in the preheated oven while you finish the sauce.
  • Whisk together the cornstarch and water in a small bowl; set aside. Cook and stir the garlic over medium-low heat in the same skillet used to cook the chicken until fragrant, scraping up any bits of chicken and cheese, about 1 minute. Pour in the white Zinfandel wine, and simmer for 2 to 3 minutes.
  • Add the heavy cream and bring to a simmer, stirring constantly, until the sauce begins to thicken. Gradually stir the cornstarch mixture into the cream sauce until thickened. Season with salt and black pepper.
  • To serve, pour the cream sauce over the chicken.
  • Note: To warm French bread, cover the loaf tightly with aluminum foil, and allow to warm in the oven while you finish the recipe.
