A bread machine takes the guesswork out of making bread. But it is hard to find a delicious & nutritious 100% White Whole Wheat Bread recipe for a bread machine. This recipe works great on the popular Panasonic SD-YD250 Bread Bakery. This recipe is for 1-1/2 lb loaf (size M). For 2 lb loaf (size L) change the servings below to 1.25 loaf and for 2-1/2 lb loaf (size XL) change the servings to 1.5 loaf.

3 cups white whole wheat flour
1 tablespoon vital wheat gluten
1/4 cup wheat germ
1/4 cup flax seed (optional)
1 1/2 teaspoons salt
2 tablespoons olive oil
1/4 cup honey
1 1/4 cups cold water
1 1/2 teaspoons dry yeast

Steps:

  • Place all dry ingredients in bread pan (except dry yeast).
  • Pour water slowly into the bread pan.
  • Add honey and oil.
  • Fill the yeast dispenser with dry yeast.
  • Program for whole wheat bread.
  • Press start or set timer.
  • Add millet, sesame or sunflower seeds instead or combined with flax seeds.
  • The directions are for Panasonic SD-YD250 if your machine doesn't have a yeast dispenser please follow instructions when to add yeast.
  • You can also set the machine to basic white bread and you'll get a softer crust.
  • Actual baking may vary depending on machine and ambient temperature.

Kaiser Rolls- Semi Whole Wheat or White (Bread Machine) image

This is based on a great recipe called "Wonderful Homemade Kaiser Rolls!" found here on recipezaar from ChipoltleChic. I made some modifications so I could make the recipe in my bread machine and swapped out the original Crisco for Butter and some Whole Wheat flour for some of the White flour

Number Of Ingredients 12

1 1/4 cups water
1 tablespoon butter (softened)
1 1/2 egg whites (beaten until stiff)
1 1/2 teaspoons sugar
1 teaspoon salt
2 -2 1/4 cups bread flour
1 cup whole wheat flour (you can substitute white and leave out the wheat gluten below)
1 tablespoon vital wheat gluten (aids in rising, not necessary)
1 tablespoon bread machine yeast
1 egg white
2 tablespoons milk
poppy seeds (optional) or sesame seeds (optional)

Steps:

  • Combine all ingredients EXCEPT 1 Egg White and 2 tablespoons milk, those are for the egg wash. Place in machine in the order listed above or as described by your bread machine manual.
  • Set machine to "DOUGH" cycle.
  • After machine cycle stops take dough out and divide into eight balls on a lightly oiled surface. Shape dough into rolls by rolling flat and imprinting with a Kaiser stamp or by using this easy roll and knot technique from King Arthur Flour- http://www.kingarthurflour.com/blog/2008/02/28/all-tied-up-shaping-kaiser-rolls/. Transfer rolls to baking sheet.
  • Cover with a warm lightly damp towel and allow to rest for thirty minutes. Preheat oven to 4255 degrees F.
  • Glaze tops of rolls with egg white mixture and top with seeds (optional).
  • Bake for 15-20 minutes at 425 degrees F or until golden brown.

1 5/8 c water
3 Tbsp nut oil or olive oil
1/3 c pure maple syrup
4 1/3 c white whole wheat flour
1 1/2 Tbsp wheat gluten
2 tsp salt
2 1/2 tsp saf yeast, or 1 pkg. regular active dry yeast or 1 tbsp of bread machine yeast

Steps:

  • 1. In this recipe from the King Arthur Flour Co., white whole wheat flour makes an incredibly light-textured whole grain bread that almost has you believing it is a white flour bread. If you use olive oil, be sure to use a light, flavorless one. Since this has the sweet addition of maple syrup, it is perfect for toasting.
  • 2. Place all the ingredients in the pan according to the order in the manufacturer's instructions. Set crust on dark and program for the Basic or Whole Wheat cycle: press Start. (This recipe MAY be used with the Delay Timer.)
  • 3. When the baking cycle ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.

BREAD MACHINE PIZZA DOUGH WHITE WHOLE WHEAT

The original recipe that was given to me called for all white whole wheat flour. I found that to be too heavy and switched out 1 1/2 cups with bread flour. The result is a delicious dough that yields a thin-medium just a little bit chewy crust. Freezes very well, too.

1 3/4 cup(s) water, ice cold
1/4 cup(s) olive oil
1 1/2 cup(s) bread flour
3 cup(s) white whole wheat flour
1 tablespoon(s) garlic powder
1 tablespoon(s) italian herb mixture
1 teaspoon(s) instant yeast
1 3/4 teaspoon(s) salt
- olive oil for coating

Steps:

  • Add water to bread machine.
  • Add 1/4 cup olive oil.
  • Add bread flour and one cup of the white whole wheat flour.
  • Sprinkle garlic powder and italian herbs over top of flour in bread machine.
  • Add remaining white whole wheat flour.
  • Run bread machine on dough setting.
  • When dough is finished, removed to a floured board. Cut into six pieces and shape each piece into a ball. Coat each ball with olive oil and slip into a sandwich bag.
  • Let dough rest in the refrigerator overnight or at least 12 hours.
  • When you are ready to make pizza, remove desired amount of dough from refrigerator and let sit for one hour. Keep covered with a damp cloth to prevent drying out.
  • Stretch dough out very thin before topping as you wish.
