BANANA SPLIT PIE
This is an extremely rich tasting receipe. Perfect for one of those bring a dish and come to the party times. It is easy to make and everyone loves it. Extremely good for hot summer days since there is no cooking and it is almost an instant desert.

Steps:
- Beat cream cheese, powdered sugar together until fluffy.
- Spread evenly over bottom of crust.
- Drain pineapple well and spread evenly over cream cheese.
- Slice banana and cover pineapple with slices.
- Pour on pudding mixture.
- Top with frozen topping.
- Cover entire pie or garnish with strawberries, or other fresh fruit.

Steps:
- Blend together cream cheese, confectioner's sugar, and egg.
- When smooth, pour half of mixture in pie crust.
- Layer half of bananas on top of filling and press down gently with spoon.
- Layer half of pineapple on top of bananas.
- Layer half of whipped topping on top of pineapple and top with cherries and nuts.
- With your remaining ingredients, repeat the process with the second pie crust.
- Refrigerate about an hour.

BANANA SPLIT PIE FOR A CROWD....NO RAW EGGS
My neighbor Aggie is the first person to introduce me to this scrumptious recipe,she has since past away, but every time I think of the recipe I think of her. Her recipe called for the use of raw eggs, I have amended it, and my version is equally scrumptious.

Steps:
- Mix crumbs with butter and firmly pat the crumbs down on the bottom of a 9 x 13 pan.
- Place pan in a 350 degree oven for about 5-10 minutes or until a light golden brown.
- Set aside and let cool thoroughly.
- Meanwhile in a medium bowl, combine cream cheese, pudding,3/4 tub of whip cream and a dash of milk and mix well.
- Then fold in the remaining 1/4 of whip cream left. The other tub of whip cream will be used for the topping.
- Spread the mixture over the crust.
- Drain pineapple and reserved the juice for later use.
- Add pineapple over topping evenly.
- Slice bananas and dip them in the pineapple juice so that they don't discolor.
- Place bananas over the pineapple.
- Spread whip cream over bananas.
- Drizzle chocolate syrup over whip cream.
- Top with cherries.
- Keep refrigerated until ready to serve.
- Enjoy!
DIABETIC BANANA SPLIT PIE
With a family history of diabetes, we've been making adjustments to some of our favorite recipes. My daddy, who is a diabetic really likes this pie and it doesn't run his blood sugar levels up. It is quick and easy also which gives it another reason for a "thumbs up" at my house.

- Mix pudding with milk and vanilla.
- Beat until thick then pour into crust.
- Place the sliced bananas over pudding. Squeeze pineapple to remove all juice, then sprinkle it on top of bananas.
- Cover with Cool Whip.
- Sprinkle pecans on top.
- Chill for 2 hours before serving.

- 1. **Topping Ideas: Nuts, Maraschino Cherries, Chocolate Sauce, Strawberries, Caramel Sauce, Sprinkles Combine the graham cracker crumbs with the melted butter and toss until the graham crackers are fully coated. Press into the bottom of an 9×13 in dish (or two smaller serving dishes).
- 2. Next add the butter and powdered sugar to an electric mixer and cream until smooth. Add the two eggs and vanilla and beat for at least 6 minutes until the mixture is thick and smooth.
- 3. Gently spread the buttercream mixture over the graham cracker crust.
- 4. Completely drain the diced pineapple and slice your bananas long ways. Gently press the bananas into the butter cream, and top with the diced pineapple.
- 5. Spread the whipped cream over the fruit and refrigerate for at least 3 hours. (I topped mine with maraschino cherries, pecans, Hershey's chocolate sauce and sprinkles.) Enjoy!!

- In a medium saucepan, combine the sugar and cornstarch.
- Gradually whisk in the milk until blended.
- Set over medium heat and cook, stirring frequently, until the mixture comes to a boil and thickens, about 5 minutes.
- In a small bowl, whisk the egg yolks.
- Gradually whisk in 1/2 cup of the hot thickened milk.
- Whisk the egg yolk mixture into the remaining milk in the saucepan.
- Boil the custard, whisking, for 1 minute.
- Remove from the heat and whisk in the butter, 1 tablespoon at a time, until melted.
- Blend in 1 teaspoon of the vanilla.
- Set aside, whisking occasionally, until cooled to room temperature.
- Cover with a sheet of waxed paper directly on the custard and refrigerate until chilled, about 1 hour.
- Whisk again to smooth out and then stir in the chocolate bits.
- Peel the bananas and slice fairly thinly crosswise on the diagonal.
- Line the bottom and sides of the pie shell with the banana slices.
- Pour in the chocolate chip custard and smooth the top of the custard in concentric circles.
- Whip the cream lightly.
- Beat in the confectioners' sugar and the remaining 1/4 teaspoon vanilla.
- Beat until stiff.
- Spread the whipped cream decoratively over the top of the pie.
- Strawberries are to be arranged decoratively on top of the pie.
- Sprinkle the chopped walnuts on top and set the cherry in the center.
- Refrigerate until serving time.
