1 1/2 sticks unsalted butter, softened
1 pound (3 2/3 cups) confectioners' sugar
1 to 2 tablespoons milk (optional)

Steps:

  • In a mixing bowl, cream butter until smooth.
  • Gradually add confectioners' sugar; beat until smooth. If too thick to spread, beat in 1 to 2 tablespoons milk.

  • In a large bowl, combine sugar, shortening, water and vanilla. Beat on low speed to combine, then beat on medium speed for a full five minutes. It won't look like Icing at first, but keep the mixer going for a full five minutes, and then you're done!
  • Note: If you're not using this for decorating, but just for icing the cake, thin the icing by adding 3 tbs. of corn syrup, or water to the icing.

1 (8 ounce) package cream cheese, softened
½ cup unsalted butter, softened
1 teaspoon vanilla extract

4 cups confectioners' sugar

1 ⅛ cups white sugar
⅓ cup brown sugar
½ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
  • In small saucepan, melt white chocolate over low heat. Stir until smooth, and allow to cool to room temperature.
  • In a bowl, beat together the cream cheese and butter until smooth. Mix in white chocolate, 1 teaspoon vanilla, and orange extract. Gradually beat in the confectioners' sugar until the mixture is fluffy. Mix in heavy cream.
  • Beat together the eggs, white sugar, and brown sugar in a bowl, and mix in the oil and vanilla. Fold in carrots and pineapple. In a separate bowl, mix the flour, baking soda, salt, cinnamon, nutmeg, and ginger. Mix flour mixture into the carrot mixture until evenly moist. Fold in 1/2 cup walnuts. Transfer to the prepared muffin cups.
  • Bake 25 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Cool completely on wire racks before topping with the icing and sprinkling with remaining walnuts.

2 1/2 cups cake flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
One 1.4-ounce box white chocolate pudding
1 cup milk
1 cup white chocolate chips
1/2 cup vegetable oil
4 large eggs, at room temperature
1 teaspoon vanilla extract
1 1/2 cups fresh raspberries
1/4 cup sugar
2 tablespoons lemon juice
1 tablespoon cornstarch
3/4 cup heavy cream
7 ounces dark chocolate, coarsely chopped
2 sticks (1 cup) butter
1 cup shortening
1 teaspoon vanilla
5 cups confectioners' sugar

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Coat two 9-inch round cake pans with cooking spray.
  • Whisk together the flour, granulated sugar, baking powder, baking soda, salt and pudding mix in a medium bowl. Set aside. Bring the milk to a boil and add the white chocolate chips. Let stand, covered, for 5 minutes, then stir until completely incorporated. Allow the white chocolate mixture to cool completely. Beat the oil, eggs and white chocolate mixture in a large bowl with an electric mixer until fully incorporated, about 2 minutes. Add the vanilla and reduce the speed to low. Gradually add the flour mixture, beating until combined, about 3 minutes.
  • Divide the batter evenly among the prepared pans. Bake until golden and a toothpick inserted into the center of the cakes comes out clean, 25 to 30 minutes. Allow the cakes to cool in the pans for 10 minutes, then turn out on wire racks to cool completely, about 45 minutes.
  • For the raspberry filling: Combine the raspberries, sugar, lemon juice and cornstarch in a small saucepan. Place over medium-high heat and slowly bring to a boil, stirring constantly until thickened. Let cool completely, about 45 minutes.
  • For the chocolate ganache: Heat the heavy cream to boiling. Pour over the chocolate in a heat-proof bowl. Stir until completely smooth. Allow to cool to room temperature, about 45 minutes.
  • For the buttercream: Beat the butter, shortening and vanilla in a large bowl with an electric mixer until combined and smooth, about 2 minutes. Add the confectioners' sugar and beat until light and fluffy, about 2 minutes.
  • To assemble the cake: Level both cakes by running a sharp knife around the top edge of each cake, scoring it, then carefully cutting through the cakes along the score lines. Fill a piping back fitted with a No.12 tip with buttercream icing. Pipe a dam around the inside of the bottom layer of cake. Inside the dam, spread a very thin layer of raspberry filling, about 3 tablespoons (for this filling, less is more). Then top with a more generous layer of chocolate ganache, about a quarter-inch thick. Stack the other cake layer on top and cover the whole cake with buttercream icing.

4 ounces white chocolate, broken into small pieces
2 cups white sugar
1 cup butter, softened
4 eggs, separated
1 teaspoon vanilla extract
2 ½ cups cake flour
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
8 ounces white chocolate, melted and cooled
2 ¾ cups confectioners' sugar
4 tablespoons hot water
4 tablespoons butter, softened
2 egg yolks
1 teaspoon vanilla extract
2 pinches salt

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease and flour three 8-inch round cake pans or line with parchment paper.
  • Place chopped white chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Cream sugar and butter together using an electric mixer until fluffy. Add 4 egg yolks, 1 at a time, beating well after each addition. Mix in vanilla extract and melted chocolate.
  • Combine flour, baking soda, and salt in another bowl. Blend into butter mixture, alternating with buttermilk, beating well after each addition.
  • Beat egg whites in a separate bowl until stiff; fold into batter. Pour batter evenly into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center of each layer comes out clean, 25 to 30 minutes. Remove from the oven and let cool completely, about 30 minutes.
  • Combine melted white chocolate, confectioners' sugar, hot water, butter, egg yolks, vanilla extract, and salt in a mixing bowl; beat into a smooth icing using an electric mixer.
  • Place 1 cake layer on a serving plate. Cover with some frosting and another cake layer. Repeat once more. Frost the top and sides of the cake with the remaining icing.

2 cups powdered sugar
1/2 teaspoon vanilla
1/2 teaspoon milk, add more to desired consistancy
1 dash salt (may substitute or omit)
1/4 cup butter (for the Buttercream Icing you would add the butter to the recipe)

Steps:

  • Mix powdered sugar and vanilla.
  • Add milk teaspoon by teaspoon until desired consistency.
  • Dash salt.
  • Note: Do NOT pour in the milk.
  • Trust me.
  • Do this as instructed, or you will have to keep adding sugar until you get a good consistency, and then you will end up with enough icing to cover surplus amout of cakes!
  • (If you are icing everything in your home, then go right ahead).

  • Stiff Consistency: In large bowl, combine 2/3 cup water and meringue powder; whip with electric mixer at high speed until peaks form.
  • Add 4 cups sugar, one cup at a time, beating at low speed after each addition.
  • Add remaining 8 cups sugar and 3 tablespoons water, shortening and corn syrup in 3 additions, blending well after each.
  • Add salt and flavorings; beat at low speed until smooth.
  • Keep bowl covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using.

18 cherries, with stems
edible glitter or red candy sprinkles
1 white chocolate baking bar

Steps:

  • Prepare, bake and cool cupcakes.
  • Melt 2 1/4 c white chocolate chips, cool slightly.
  • On medium speed, beat butter until fluffy. Beat in melted chocolate, vanilla, confectioners' sugar until smooth.
  • Chill until thickened (approx 15 mins).
  • Spoon jam or filling until freezer bag. Snip 1/4" hole in one corner. Insert bag tip 1" deep into center top of each cupcake. Squeeze 1 Tbs jam into each.
  • Transfer frosting into pastry bag fitted with decorative tip and pipe over cupcakes.
  • Optional topping:.
  • Sprinkle with edible glitter or red sprinkles and white chocolate shavings from chocolate bar. Melt remaining white chocolate and barely dip fresh cherries into mixture. Cool and set atop each cupcake.

  • I keep these in the frig because I think they taste best cold.

  • Place half of your icing sugar in a bowl and add around three quarters of a tablespoon of water in order to create a thick paste-you may need to add more water in order to create this consistency.
  • Then add the rest of your icing sugar- this may be hard to stir but keep stirring in order to incorporate all the icing sugar. You may need to add more water but keep the icing as thick as possible so when you pipe the icing, the piping stays in place. This should create a brilliant white icing to pipe.

3 one-pound boxes confectioners' sugar
3/4 teaspoon table salt
3 tablespoons pure vanilla extract
3/4 cup milk, plus more for thinning

Steps:

  • Cream butter and sugar in the bowl of an electric mixer fitted with the paddle attachment until well combined. Add salt, vanilla, and milk, and beat until frosting is smooth and creamy. If icing seems too thick, add an additional tablespoon of milk. Use immediately, or refrigerate for up to 2 days. Bring to room temperature before frosting cake. 2 (12 ounce) bottles belgian style white beer (recommended ( Hoegaarden)
5 tablespoons honey
3/4 cup unsalted butter, at room temperature
1 1/4 cups powdered sugar
1 large egg
1/2 teaspoon vanilla extract
1 medium orange, zest of
2 teaspoons ground coriander
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
1 cup powdered sugar
1 tablespoon orange juice
1 tablespoon whole milk
1 orange, zest of

Steps:

  • Put the beer and honey to a medium saucepan and reduce over medium heat until you have about 1/3 cup of liquid. You will occasionally have to skim the foam off the top of the beer. You will know you have hit 1/3 of a cup of liquid as the liquid will suddenly begin to aggressively foam due to the high concentration of sugar (This looks different from foaming due to carbon dioxide, the bubbles are much larger with the sugar foaming).
  • Let this reduction cool to room temperature.
  • Cream the butter and sugar together.
  • Add the egg and blend thoroughly. Then add the vanilla, orange zest, coriander, and beer reduction and blend again.
  • Mix the flour and baking soda together then slowly add to the batter.
  • Preheat oven to 350°F
  • Scoop mounds of cookies onto an aluminum cookie sheet lined with parchment. Make sure you do not overcrowd the cookies; you should be able to fit about 12 cookies on a half sheet pan.
  • Bake for 15-20 minutes. Let the cookies cool on the cookie sheet until they are cool enough (about 10 minutes) to transfer to wire racks to cool completely.
  • Icing:
  • Using the icing ingredients whisk the vanilla into the sugar.
  • Mix the orange juice and milk together.
  • Add milk and orange juice mixture to sugar until you reach the consistency of a thick paste. Add orange zest if desired.
  • Using a butter knife put a dollop of icing on each cool cookie and spread it over the top.
  • Cook's notes: This recipe has no salt in it. Because of the beer, adding salt can make the cookies too salty.
  • The cookies should be a little crispy on the outside, and cake like on the inside.

This was on the same page with the caramel icing that I got from my HS home economics teacher. Just thought that others might like this recipe, too. This should be enough to frost a pan of brownies or one layer of cake -- if you need more just double the recipe -- or 1/2 again more, for a little less more!! LOL Enjoy!

4 Tbsp baker's cocoa
1 c granulated sugar
1/3 c milk
1/4 c butter
confectioners sugar to consistency (aprox one 1-lb box plus 1 cup, less or more to suit your needs)
1/4 tsp vanilla extract

Steps:

  • 1. Bring cocoa, sugar, milk, and butter slowly to a boil -- stirring constantly -- boil for 2 or 3 minutes
  • 2. Remove from heat and cool slightly
  • 3. Add sifted confectioners sugar until consistency to spread NOTE: adding less confectioners sugar yields a pourable fudge sauce
  • 4. If you desire to make white icing just leave out the cocoa

I chose a Duncan Hines mix and modified the directions a little bit along with a Wilton Buttercream Icing recipe. The end result was AWESOME!

1 (18 1/4 ounce) box classic white cake mix (I used Duncan Hines)
1 1/3 cups half-and-half
2 tablespoons margarine
3 large egg whites
1 cup vegetable shortening
1 teaspoon clear vanilla
4 cups sifted confectioners' sugar (32 oz)
4 tablespoons half-and-half

Steps:

  • CAKE.
  • Preheat oven to 350°.
  • Blend the mix, half and half, margarine, and eggs at medium speed until fully mixed.
  • Pour the batter into greased pans. For this recipe I used two 8-inch round cake pans.
  • Bake for 20- 25 minutes or until cake tests done.
  • Cool the cake while in pans for 10 minutes, then remove and allow them to continue to cool. After cooled then add frosting.
  • FROSTING: Mix shortening, vanilla, sugar (sifted), and half and half at medium speed until fully mixed. If the frosting is too thin, add more sugar, if it is to thick add more half and half.
  • Then ice cake to desired taste.
  • Top with your own choice. I topped mine with strawberry pie filling. It was PERFECT!

2 cups confectioners' sugar
2 tablespoons butter, softened
1 teaspoon vanilla
1 tablespoon milk (orange juice works so great too)

Steps:

  • Mix the confectioners' sugar, butter, and vanilla together. Adding half the milk (or orange juice) to start with, stir in to make a thick glaze, adding just a drop at a time more until you get a nice thick glaze. Spread or pour immediately over cooled cinnamon rolls, pastries, pound cakes, or Danish. Glaze will form a crust and harden as it cools, but you can spread over warmed cakes and serve that way as well.
