WHITE HOUSE GARDEN HERB-ROASTED CHICKEN WITH BRAISED GREENS
Steps:
- Mix the herbs, mustard and olive oil in a nonreactive baking dish. Add the chicken, season with salt and pepper and turn to coat evenly. Cover and marinate in the refrigerator at least 1 hour or overnight.
- Preheat the oven to 450 degrees F. Place the chicken on a foil-lined baking sheet and roast until the meat is cooked through and the skin is crisp, 30 to 40 minutes.
- Meanwhile, saute the bacon in a deep pan or Dutch oven over medium heat until rendered, about 5 minutes. Add the onion and cook until translucent, 6 to 7 minutes. Add the greens, in batches, and saute until wilted, about 4 minutes. Add the chicken stock, cover and gently braise over low heat until tender, about 40 minutes. Season with salt and pepper and serve with the chicken.

- Bone the chicken breasts leaving a joint of wing attached. Flatten the breasts with a cleaver, then stuff each one with 3 tablespoons butter. Carefully seal the edges with toothpicks. Dip the stuffed breasts in flour then into the eggs beat with milk, and roll in bread crumbs. Then re-dip the breasts in flour, egg and milk mixture, then bread crumbs again. Fry in 3 inches hot vegetable shortening (375°F) for 8-10 minutes, or until golden brown. Remove the toothpicks and serve immediately.

I got this recipe from cooks.com. I have made this dish before, but had forgotten about it. This recipe is delicious and so easy peasy.

- Cook rice and put in bottom of buttered pan. Place chicken pieces over rice. Mix together soup, mayonnaise and lemon juice. Pour over chicken. Sprinkle grated cheese over sauce. Bake for 25 minutes at 350 degrees.
WHITE HOUSE CHICKEN (OREGANO CHICKEN)
From a community cookbook that I removed and had in a pile. It says it's from The White House. Not sure what year but here it is. Note: 3-4 hrs. marination. Can bake or grill this easy recipe.* I have another version of this recipe called Chicken Oregano where you just rub the spices and lemon juice on a whole chicken, about 2 1/2 lbs.,inside and out, and then place in a 7 X 10 inch baking dish with 1 cup of water and 1/2 stick of butter. Bake at 400 degrees F. until golden brown and then lower oven to 350 degrees F. and bake for about 30-40 minutes longer, basting frequently. That recipe was from Katherine Beeson of the Azalia Garden Club, Marion, SC. I found the recipe again as a favorite of Mrs. Richard Nixon from Favorite Recipes of our First Ladies, 1971. It is called Barbacued Chicken in that book.
