- In a small saucepan over low-medium heat, heat the milk and crushed candy cane until nearly simmering, stirring often. This will ensure that the candy cane dissolves in the milk.

- Heat milk and white chocolate in a large saucepan over medium heat, stirring until chocolate melts and mixture is smooth. Continue cooking, whisking constantly, until very hot, thick, and frothy, 3 to 4 minutes.

- Using a vegetable peeler, shave dark chocolate into curls; set aside.
- Place white chocolate in a medium heat-proof bowl; set aside.
- Place milk and cream in a medium saucepan set over medium heat until bubbles begin to form around edges of pan (about 4 minutes) DO NOT BOIL!
- Remove mixture from the flame.
- Immediately pour over white chocolate.
- When the chocolate begins to melt, gently stir to combine.
