2 pounds boneless skinless chicken breasts, cut into 1/2-inch cubes
2 medium onions, chopped
2 garlic cloves, minced
4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
2 cans (14-1/2 ounces each) chicken broth
4 cans (4 ounces each) chopped green chiles
2 jars (8 ounces each) roasted sweet red peppers, drained and finely chopped
2 teaspoons salt
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon pepper
1/2 teaspoon hot pepper sauce
2 cups sour cream
1 cup heavy whipping cream
Optional: Chopped roasted sweet red peppers, ripe avocado and green onions

Steps:

  • In a 6-qt. stockpot, heat oil over medium-high heat. Add chicken and onions in batches; cook and stir 4-5 minutes or until chicken is no longer pink and onions are tender. Add garlic; cook 1 minute longer. Stir in beans, broth, green chiles, red peppers, seasonings and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, 25-30 minutes or until thickened., Remove from heat. Stir in sour cream and whipping cream. If desired, serve with toppings.

1 pound dried navy beans
6 cups turkey or chicken broth
1 cup chopped onion
4 garlic cloves, minced
1 teaspoon white pepper
1/2 teaspoon crushed red pepper flakes
1/4 to 1/2 teaspoon curry powder
1/4 teaspoon ground cumin
2 pounds turkey or chicken breast, cooked and cubed
1 can (15-1/4 ounces) white sweet corn
1 cup heavy whipping cream
Chopped green and sweet red peppers, optional

Steps:

  • Place beans in a large saucepan or Dutch oven; cover with water. Bring to a boil and boil for 2 minutes. Remove from the heat and soak for 1-4 hours or until beans are softened. Drain and rinse beans; return to the pan. Add broth, onion, garlic and seasonings. , Cover and simmer for 1-1/2 hours or until beans are tender. Add turkey and corn; simmer for 15 minutes. Add cream just before serving; heat through. If desired, garnish individual servings with peppers.

300g salted butter , chopped, plus extra for the tin
200g white chocolate , finely chopped
500g plain flour
4 tsp baking powder
1 tsp bicarbonate of soda
500g white caster sugar
300ml natural yogurt
4 tsp vanilla extract
1 large orange , zested and juiced
6 large eggs
4 tbsp milk
200g cranberries
150g white caster sugar
200g white chocolate , finely chopped
500g salted butter , softened
750g icing sugar , sifted if lumpy
280g cream cheese
meringue kisses

Steps:

  • Heat oven to 180C/160C fan/gas 4. Rub a little butter over the base and sides of two 20cm cake tins (use cake tins rather than sandwich tins as the higher sides work better), then line the base and sides with baking parchment. Melt 150g butter with 100g of the chocolate in a bowl set over a small saucepan of gently simmering water - make sure the base of the bowl doesn't touch the water. Stir the butter and chocolate every min or so until it has melted. Set aside to cool a little.
  • Meanwhile, measure 250g flour, 2 tsp baking powder, ½ tsp bicarb and 250g sugar in a large bowl. Make a well in the middle and add 150g yogurt, 2 tsp vanilla extract, half the orange zest and juice, 3 eggs and 2 tbsp milk. Whisk everything together, then stir in the melted butter and chocolate.
  • When the cake mixture is smooth (this makes a very wet pourable batter), divide it equally between the two cake tins. Bake on the middle shelf for 25-30 mins, they will look golden and evenly risen when cooked. Check they are done by pushing a skewer into the centre of the cakes - it should come out clean. If there is any wet cake mixture on the skewer, return the cake to the oven for a few more mins, then check again.
  • Leave the cakes to cool in their tins for 5 mins, then transfer to a cooling rack. Wash out the tins and repeat steps 1 and 2, to make two more sponges in total. You can make them a day or two before icing, then wrap them in a double layer of cling film once cool. They can also be frozen for up to two months.
  • To make the compote, simmer the cranberries and sugar in a small pan for 4-5 mins until jammy, then leave to cool.
  • For the icing, melt the chocolate, either in 20-30 secs bursts in a microwave or in a bowl over simmering water. Set aside to cool a little. Roughly mash the butter and icing sugar together, then beat until smooth with an electric whisk or mixer. Add the chocolate and cream cheese and beat again until smooth.
  • To assemble the cake, place one sponge on a cake board the same size as the sponge, then sandwich the other sponges on top with a little icing and the cranberry compote. Use the cake with the neatest edge, flipped upside down, on top to give your cake a good shape.
  • Pile about half the remaining icing on top of the cake and use a palette knife to spread it thinly over the top and down the sides of the cake. This is a crumb coat, it catches any crumbs, ensuring the final layer looks clean and professional. Chill the cake for 10-20 mins to firm up the icing or leave it somewhere cool for longer. Spread the remaining icing over the top and sides of the cakes, giving it nice sharp edges. We've left some of the cake exposed for the 'naked' cake look, or cover it completely if you like. Will keep for three days.

¼ cup cold water
1 cup white sugar
4 tablespoons all-purpose flour
½ teaspoon salt
1 ½ cups milk
¾ teaspoon vanilla extract
1 cup flaked coconut
½ cup heavy whipping cream
3 egg whites
¼ teaspoon cream of tartar
1 (9 inch) pie crust, baked
2 tablespoons flaked coconut

Steps:

  • Sprinkle gelatin over cold water; set aside to soften.
  • Combine 1/2 cup sugar, flour, and salt in a saucepan. Gradually stir in milk. Cook over low heat, stirring until it boils. Boil for 1 minute, and remove from heat. Transfer to a large bowl. Stir in softened gelatin. When partially set, beat with a rotary mixer until smooth. Blend in vanilla and 1 cup coconut.
  • Whip the cream until stiff. Gently fold into coconut mixture.
  • In a clean bowl, beat egg whites until frothy. Beat in cream of tartar and 1/2 cup sugar. Continue beating until egg whites form stiff peaks. Fold into coconut mixture. Pile filling into cooled pie shell. Sprinkle with additional coconut. Chill pie for at least 2 hours or overnight.

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. In a small saucepan, bring water to a boil. Remove from heat; stir in candy coating until blended. 8 egg yolks

2 ounces candied orange peel (or use a mixture of lemon and orange)
1 1/4 cups currants
3 cups golden raisins
1 1/2 cups candied maraschino cherries (chopped)
1 1/2 cups candied pineapple, finely chopped
2 cups chopped pecans
1 1/2 cups slivered almonds (or use 3-1/2 cups chopped pecans)
1/2 cup fresh orange juice
8 egg whites, room temperature
3 cups all-purpose flour

Steps:

  • Place the orange peel, currants, raisins, cherries and chopped candied pineapple in a large bowl.
  • Pour the orange juice over the fruit and let sit for 24 hours, mixing/tossing a couple times during the 24 hours period.
  • Line bottom of one 9 x 5-inch AND two 3 x 8-inch loaf pans with parchment paper or two sheets of wax paper.
  • Set oven to 275 degrees.
  • Place a pan of cold water directly onto the bottom of your oven.
  • In a large bowl cream butter with confectioners sugar until very smooth.
  • Add in the egg yolks and almond or vanilla extract; beat until combined.
  • Stir in the soaked fruit and the juice along with nuts.
  • Using a wooden spoon stir in the flour.
  • In a clean dry bowl beat the egg whites until firm peaks form; fold into the batter.

Steps:

  • Line a 9-in. square pan with foil and grease the foil with 1 teaspoon butter; set aside. , In a large heavy saucepan, combine the confectioners' sugar, milk and remaining butter. 1/2 cup butter
3/4 cup prepared dairy eggnog
1 (12 ounce) package premium white chocolate chips
1/2 teaspoon grated nutmeg
1 (7 ounce) jar marshmallow creme
3 tablespoons Captain Morgan's spiced rum (or 1 teaspoon rum extract)

Steps:

  • Bring the sugar, butter and eggnog to a full boil in a heavy medium-size saucepan.
  • Continue to boil for 8 to 10 minutes over medium heat, or 234°F on a candy thermometer, stirring constantly to prevent scorching.
  • Remove from heat and stir in the white chocolate chips and the grated nutmeg, stirring until the chocolate is melted.

2 lbs. white almond bark
2 cups rice krispies
2 cups capt. crunch peanut butter cereal
2 cups pretzel sticks, broken in half or thirds, or crispy chowmein noodles
1 1/2 cups salted peanuts

Steps:

  • 1. Place all dry ingredients into a large bowl.
  • 2. Melt white chocolate almond bark in the top of a double boiler. Take off of heat as soon as the last chunk melts to avoid scorching.
  • 3. Carefully, pour melted almond bark over cereal/nut mixture. Drop by spoonful onto parchment paper or aluminum foil. Allow to cool completely.

1 tablespoon olive oil
2 teaspoons garlic powder
1 tablespoon ground cumin
2 teaspoons dried oregano
1/2 teaspoon white pepper
1 teaspoon kosher salt
1 (10 ounce) can original rotel
1 (10 ounce) can hot rotel
2 (15 ounce) cans great northern beans, drained
1 (4 ounce) can chopped green chilies
32 ounces low sodium chicken broth
1 rotisserie chicken, shredded
1 cup sour cream
1/2 cup heavy cream

Steps:

  • Sauté onions in olive oil until softened, about 10 minutes. Add spices & sauté briefly.
  • Add Rotel, beans, green chiles & chicken broth. Bring to a boil, then reduce heat to a simmer.
  • Add shredded chicken and simmer uncovered for 30 minutes, stirring occasionally.
  • Reduce heat to low and add sour cream & heavy cream. Be careful not to allow soup to boil again once they have been added.
  • Serve with tortilla chips, diced avocado & a sprinkle of chopped fresh cilantro, if desired.

⅔ cup milk
¼ cup butter
2 (6 ounce) packages white chocolate, chopped
¼ teaspoon almond extract
¾ cup toasted sliced almonds
¼ cup chopped dried apricots
¼ cup dried cherries
¼ cup sweetened dried cranberries

Steps:

  • Line a 9-inch square pan with a piece of aluminum foil long enough to extend over the sides of the pan by several inches and generously grease the foil with butter.
  • Mix confectioners' sugar with milk and 1/4 cup butter in a large, heavy saucepan over medium heat, stirring until combined; bring to a full rolling boil. Boil fudge for 5 minutes without stirring. Reduce heat to low and stir in white chocolate until melted and combined.
  • Remove from heat and stir in almond extract, sliced almonds, dried apricots, dried cherries, and dried cranberries. Spread fudge into the prepared pan and refrigerate until set, about 2 hours. Lift the fudge out of the pan using the foil and peel foil from fudge. Discard foil; cut fudge into 1-inch pieces. Store in refrigerator.

1 (15 oz) can cannellini beans, drained and mashed
2 (4.5 oz) cans chopped green chiles
1 tsp. salt
3/4 tsp. dried oregano
1 tsp ground cumin
1/2 tsp chili powder
1/2 tsp ground black pepprt
1/8 tsp ground cloves
1/8 tsp ground red pepper
Toppings: Cilantro, diced tomato, sour cream

Steps:

  • saute chicken, onion and garlic in hot oil in a Dutch oven over medium high heat for 10 minutes (or until chicken is done). Stir in broth, and the next 10 ingredients, bring to a boil. Cover, reduce heat, and simmer 30 minutes. Serve with desired toppings.

Change up the holidays by serving this traditionally warm-weather cocktail at your next Christmas party. To make it snowy white, we added a touch of coconut milk. Cranberry ice cubes add a touch of cheer.

1 1/2 cups frozen cranberries
1 cup tequila blanco
2/3 cup fresh lime juice (from about 6 limes), plus 4 lime slices, for serving
6 tablespoons orange-flavored liqueur, such as triple sec
3 tablespoons unsweetened coconut milk
3 tablespoons superfine sugar
1/2 cup light corn syrup
2 tablespoons extra-fine shredded unsweetened coconut
Kosher salt

Steps:

  • Divide the cranberries among the sections of a standard (12-cube) ice cube tray. Fill the tray sections with water and freeze until frozen, at least 4 hours and up to overnight.
  • Add 1/2 cup of the tequila, 1/3 cup of the lime juice, 3 tablespoons of the orange liqueur, 1 1/2 tablespoons of the coconut milk and 1 tablespoon of the superfine sugar to a large cocktail shaker. Fill with plain ice cubes and shake vigorously until well mixed and very cold.
  • Pour the corn syrup onto a small shallow plate. Mix 1 tablespoon of the superfine sugar with the shredded coconut and 1 tablespoon salt on another shallow plate. Dip the rim of a margarita (or other wide-mouth) glass in the corn syrup, then dip the rim in the sugar mixture until well coated. Repeat with 3 more glasses. Pour the shaken margarita mixture into 2 of the prepared glasses. Add 3 of the cranberry ice cubes to each and garnish with a single lime slice.
  • Repeat with the remaining cocktail ingredients, dividing it between the remaining 2 prepared glasses and adding 3 cranberry ice cubes and a lime slice to each.

2 tablespoons water, divided
2 egg whites
1 cup corn syrup
1 ½ teaspoons vanilla extract
1 cup pecans

Steps:

  • In a medium saucepan over medium heat combine 1 cup sugar with 1 tablespoon water. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Stir in egg whites and vanilla.
  • In a separate saucepan combine remaining 2 cups sugar, corn syrup and 1 tablespoon water; heat to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball. Stir this mixture into the other pan with sugar and

1/3 cup butter, softened
1/3 cup butter-flavored shortening
3/4 cup sugar
1 egg
4 teaspoons milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
8 ounces white baking chocolate, chopped

Steps:

  • In a large bowl, cream the butter, shortening and sugar until light and fluffy. Beat in egg, milk and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture. , Divide dough in half. On a lightly floured surface, roll out one portion to 1/8-in. thickness. Cut into desired shapes with floured 2-in. cookie cutters. Place 1 in. apart on ungreased baking sheets. Repeat with remaining dough. , Bake at 350° for 7-9 minutes or until edges begin to brown. The year I made this I made 3 batches and served it to company on a deep red platter surrounded by holly sprigs. It looked like something from a magazine. I might add that I made them separately to insure that the fudge came out right. I cut into 2 inch squares so that is the yield I listed.

2 1/2 cups confectioners' sugar
2/3 cup milk
1/4 cup butter
12 ounces white chocolate (coarsely chopped)
1/2 teaspoon almond extract
3/4 cup dried cranberries or 3/4 cup dried apricot, coarsely chopped
3/4 cup toasted sliced almonds

Steps:

  • Line an 8 inch square pan with foil, grease foil.
  • Mix sugar and milk in a 3 quart saucepan over medium heat, add butter and stirring constantly, bring to a boil. Without stirring, boil for 5 minutes.
  • Over low heat, add chocolate and almond extract. Stir, then whisk until chocolate melts and mixture is smooth.
  • Stir in dried cherries and toasted almonds.
  • Pour mixture into pan. Refrigerate 2 hours until firm.
  • Invert pan, peel off foil and cut in 1 inch squares.
  • Tip: To toast almonds, spread in single layer on cookie sheet. Bake in 350 oven for 5-10 minutes, shaking pan occasionally until they begin to brown.
  • Very tasty and pretty.

3/4 cup cream of coconut
1/4 cup unsalted butter, melted
3 large eggs
3/4 cup lemon curd (Dickinson's)
4 ounces white chocolate, chopped
1/2 cup sour cream
1 cup whipping cream
1/4 cup powdered sugar
1 (6 ounce) package frozen grated coconut, thawed

Steps:

  • Preheat oven to 350°.
  • Combine the first 4 ingredients and 1/2 cup water in a big bowl; beat on low speed with an electric mixer 1 minute.
  • Increase speed to medium, and beat 1 1/2 minutes.
  • Spread batter into a greased and floured 13 x 9 inch baking pan.
  • Bake for 35 minutes or until a pick comes out clean.
  • Remove pan to a wire rack; spread lemon curd over hot cake.
  • Let cool completely in pan on a wire rack (cake will sink slightly in the center).
  • Microwave white chocolate in a small microwave safe bowl on HIGH for 1 minute or until melted, stirring after 30 seconds.
  • Stir in sour cream; cover and chill 30 minutes.
  • Beating whipping cream and powdered sugar in a big bowl on medium speed until stiff peaks form.
  • Add in white chocolate mixture, and beat at low speed just until combined.
  • Spread whipped cream topping over cake; sprinkle with coconut.
  • Cover and chill 8 hours; garnish each serving with a cherry and lemon zest.
  • Store in the refrigerator.
