The perfect fall muffin recipe. The combination of the pumpkin and white chocolate are reminiscent of pumpkin cheesecake. Yum! For a lighter muffin be sure to sift your flour and level off the measuring cup. Do not over-mix batter to ensure your muffins are tender.

1 ½ cups all-purpose flour, sifted
½ cup white sugar
¼ cup brown sugar
1 tablespoon pumpkin pie spice
2 teaspoons baking powder
½ teaspoon salt
½ cup pumpkin puree, or as needed
⅓ cup vegetable oil
⅓ cup milk
1 egg
1 teaspoon vanilla extract
¼ teaspoon lemon extract
¾ cup white chocolate chips
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line 9 muffin cups with paper muffin liners.
  • Whisk 1 1/2 cups sifted flour, white sugar, brown sugar, pumpkin pie spice, baking powder, and salt together in a large bowl. Stir pumpkin puree, vegetable oil, milk, egg, vanilla extract, and lemon extract together in another bowl.
  • Pour pumpkin puree mixture into flour mixture; stir until batter is just combined.
  • Stir white chocolate chips and 1 tablespoon flour together in a bowl until chips are coated. Fold chips into batter; spoon batter into prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 15 to 20 minutes.

  • Preheat the oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tray with paper liners.

1 cup brewed coffee
¼ cup water
½ teaspoon ground cinnamon
½ teaspoon ground allspice
¼ teaspoon ground nutmeg
2 tablespoons molasses
3 tablespoons butter
1 egg, beaten
1 ½ cups all-purpose flour
½ cup graham cracker crumbs
2 shredded wheat cereal biscuits, crushed
½ cup brown sugar
¼ cup crushed bran flakes cereal
3 tablespoons poppy seeds
¼ cup milk
2 tablespoons baking powder
1 apple - peeled, cored, and chopped
⅔ cup golden raisins
⅔ cup chopped white chocolate

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a 12 cup muffin pan with paper liners.
  • In a medium saucepan over medium-low heat, mix cocoa powder, quick-cooking oats, brewed coffee, water, cinnamon, allspice, nutmeg, molasses, and butter. Cook and stir until evenly moist and thickened. Cool slightly, and pour into a medium bowl.

1/2 cup caster sugar
100 g white chocolate, chopped
125 g butter, melted, cooled
1/3 cup milk
2 eggs, lightly whisked
1/4 cup passion fruit pulp
1 teaspoon vanilla extract
passionfruit icing
1 1/4 cups icing sugar
2 teaspoons hot water
1 1/2 tablespoons passion fruit pulp

Steps:

  • Preheat oven to 200°C Lightly grease a 12-hole 1/3-cup capacity muffin pan.
  • Combine flour, sugar and chocolate in a bowl. Make a well in the centre.
  • Whisk butter, milk, egg, passionfruit and vanilla in a jug and pour into well. Gently fold until just combined.
  • Three-quarter fill muffin holes with mixture. Bake for 15 to 20 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes. Turn onto a wire rack.

100g unsalted butter, softened
65g caster sugar
65g light brown sugar
2 large eggs, room temperature
125g Greek yogurt
1 tsp vanilla paste
5 tbsp milk
250g self-raising flour
1 tsp baking powder
200g raspberries (fresh or frozen)
75g white chocolate chips

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases.
  • Beat the butter and sugar together for 5 mins until pale and fluffy. Add the eggs gradually and beat in until combined. Stir in the yogurt, vanilla and milk. Fold in the flour, baking powder and a pinch of fine salt until you have a smooth batter. Finally, fold in 150g raspberries and white chocolate chips and fill the muffin cases three-quarters full.
  • Push 2 raspberries into the top of each muffin so they're sticking out slightly. Bake for 8 mins, then reduce the oven to 180C/160C fan/gas 4 and bake for 20-25 mins more until risen and golden, and a cocktail stick inserted into the centre comes out clean.
