CHOCOLATE CHIP BANANA MUFFINS (WHITE WHOLE WHEAT FLOUR)
Don't throw away those bananas that are turning brown and soft. They're perfect for making these muffins moist with lots of banana flavor.

Steps:
- Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray, or place paper baking cup in each muffin cup.
- In large bowl, beat bananas, brown sugar, milk, oil and egg with electric mixer on medium speed, or mix with spoon. Stir in flour, baking powder and salt just until flour is moistened. Fold miniature chocolate chips into batter.
- Divide batter evenly among muffin cups; sprinkle each with 1/2 teaspoon sugar. Bake 13 to 18 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan.

Steps:
- 1. Preheat the oven to 180C.
- 2. Line a muffin tray with 12 paper muffin cases.
- 3. Mash the bananas well.
- 4. Beat together the eggs and oil.
- 5. Put the flour, baking powder and sugar together in a large bowl, and stir through. Mix in the mashed bananas and beaten egg and oil mixture.
- 6. Fold in the white chocolate chunks and coconut. Spoon evenly into baking cases in muffin tin.
- 7. Bake in the oven for 20 minutes or until the muffins come away from the side of the pan when touched.
- 8. Rest the muffin tray on a wire rack for five minutes then remove the muffins and leave on the rack for another five minutes before serving.

- Preheat oven to 350º Grease muffin cups, or line with muffin papers. Sift first 4 ingredients together in a bowl. Combine banana's, sugars, butter, milk and egg till smooth, some banana lumps are fine! Add wet ingredients to dry ingredients. In blender,( or magic bullet,) blend banana chips and ½ cup chopped white chocolate. Blend on high until mixture is smooth and powdered. Add banana/chocolate mixture to batter. Fold last ½ cup of chocolate chunks into batter . Bake for 15-20 minutes, or insert a toothpick into the center of a muffin and it comes out clean.
