1/2 cup cold unsalted butter, cut into pieces
1/4 cup sugar, plus
1 1/2 teaspoons sugar
2 teaspoons beaten eggs
1 cup all-purpose flour, plus
2 tablespoons all-purpose flour
1 cup milk
1/2 vanilla bean, split lengthwise
3 large egg yolks
1/3 cup sugar
2 tablespoons cornstarch
1 tablespoon cold unsalted butter, cut in pieces
1 1/2 ounces white chocolate, chopped
white chocolate curls (optional)
6 ounces white chocolate, chopped
1 cup heavy cream, chilled
4 ripe bananas
1/2 lemon, juice of
1 1/2 tablespoons banana liqueur or 1 1/2 tablespoons rum
1 1/2 tablespoons white Creme de Cacao or 1 1/2 tablespoons Amaretto
unsweetened cocoa powder, for dusting top of pie

Steps:

  • To make the sugar dough: Combine the butter and sugar in a food processor until just blended (or cut the ingredients together with a pastry blender).
  • Add the egg pulsing or tossing to combine.
  • Add the flour and mix until it is just incorporated, no longer.
  • Gather the dough into a ball, flatten it into a disk, and wrap in plastic wrap or wax paper and chill for at least 30 minutes.
  • Preheat the oven to 350°F, place the oven rack in the lower third of the oven.
  • Roll out the dough on a floured surface until it is about 1/8 inch thick.
  • Gently fit it, without stretching, into a buttered 10-inch Tart pan (preferably with a removable bottom and fluted sides).
  • If you do not have a tart pan, you can use 10 inch or deep 9 1/2 inch pie pan.
  • Trim off the excess dough, leaving a 3/4 inch overhang.
  • Tuck in the overhanging dough, pressing the edges of the crust against the sides of the pan and forming a high, fluted border.
  • Line the dough with a sheet of buttered foil (buttered side down) and weigh down with weights or beans.
  • Bake the shell until the sides are set, about 12 minutes.
  • Carefully remove the weights and foil and gently prick dough all over with a fork.
  • Continue to bake until pale gold and baked through, about 5 minutes.
  • Cool the pie shell completely on a wire rack.
  • Making the White Pastry Cream: Bring the milk and vanilla bean to a boil.
  • Meanwhile, whisk the egg yolks and sugar in a bowl until pale and light, about 1 1/2 minutes.
  • Whisk in the cornstarch until smooth.
  • Remove the saucepan from the heat, and whisk 1/4 cup of the hot milk into the egg yolk mixture.
  • Repeat once or twice.
  • Scrape the warmed egg yolk mixture into the saucepan with the remaining milk and return to a boil, whisking the entire time, boil for one minute.
  • Remove the pastry cream from the heat, and whisk in the butter and white chocolate until smooth.
  • Strain the custard into a clean bowl.
  • Place a sheet of wax paper or plastic wrap directly on the surface of the cream and refrigerate until cooled.
  • Shortly before serving time, whip the cream until nearly stiff.
  • Thinly slice the bananas and toss with the lemon juice.
  • Fold the bananas and the liquers into the chilled pastry cream and gently fold in the whipped cream until blended.
  • Fill the cooled pie shell with the filling.
  • Gently scatter the chocolate curls over the filling, covering the tart completely.
  • Very lightly dust the chocolate curls with cocoa powder and serve.
  • To make the chocolate curls: Melt the white chocolate in a double broiler until smooth.
  • Pour the chocolate onto a marble slab or the back of a smooth baking sheet.
  • With a spatula, spread out the chocolate into an even 1/8 thick layer.
  • Set aside to cool to room temperature.
  • Push a chef's knife blade away from you through a 4 inch width of chocolate, forming a loose curl.
  • Continue to form chocolate curls with the remaining chocolate.
  • With a large spatula, very gently transfer the curls to a baking sheet and refrigerate until needed.

1 (9 inch) pie crust, baked
6 egg yolks, beaten
5 tablespoons white sugar
¼ cup sifted cornstarch
2 cups milk
1 vanilla bean, halved
2 tablespoons butter, diced
3 ounces white chocolate, melted
8 ripe bananas
1 lemon, juiced
1 pint whipping cream
1 fluid ounce white chocolate liqueur
1 fluid ounce banana liqueur
12 ounces white chocolate
2 teaspoons unsweetened cocoa powder, for garnish

Steps:

  • To Make White Chocolate Pastry Cream: In a medium bowl, whisk together egg yolks and sugar until pale yellow. Whisk in cornstarch. In a medium saucepan, heat milk and vanilla bean to just below the boiling point. Slowly whisk a small amount of hot milk into egg yolk mixture, then stir egg yolk mixture back into pan. Bring to a boil over low heat, stirring constantly.
  • Stir in butter, then strain mixture through a sieve. Place plastic wrap over the surface of mixture to keep a skin from forming. Allow to cool slightly, then stir in melted white chocolate. Chill pastry cream.
  • Slice bananas and toss with the lemon juice to keep from discoloring. Set aside.
  • In a large bowl, whip chilled whipping cream until stiff peaks form. Fold into pastry cream, then fold in bananas and liqueurs. Fill tart shell with banana cream filling.
  • Top generously with white chocolate curls, then dust with cocoa. Serve soon after assembling so crust doesn't get soggy.
  • To make white chocolate curls, carefully draw a vegetable peeler across the broad, flat surface of a room-temperature (about 80 degrees) chunk of white chocolate to make large, thin curls. Refrigerate until ready to use.

1 pkg. (4 oz.) BAKER'S White Chocolate, broken into pieces
2 Tbsp. butter or margarine
1 ready-to-use graham cracker crumb crust (6 oz.)
2 large bananas, sliced
1 pkg. (3.3 oz.) JELL-O White Chocolate Flavor Instant Pudding
1-3/4 cups cold milk
1/2 tsp. vanilla
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Microwave chocolate and butter in microwaveable bowl on HIGH 1 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Drizzle over bottom of crust; top with bananas.
  • Beat pudding mix, milk and vanilla with whisk 2 min.; pour over bananas in crust.
  • Refrigerate 4 hours or until firm. Top with COOL WHIP just before serving.

5 Low fat graham crackers (5 individual whole crackers)
5 Low fat ginger snaps (5 cookies)
3 Tablespoons Light butter
3/4 cups Instant nonfat dry milk
2 1/2 cups water (best if filtered or bottle
2 package s Jell-O Sugar Free Fat Free White Chocolate Instant Pudding/Pie Mix
1 medium or large banana
2 Tablespoon Cool Whip per slice (optional)

Steps:

  • Finely crumble graham crackers and ginger snaps together. Slowly add melted butter into the crumbs and mix thoroughly. Spread evenly into 9-inch pie pan. Bake for 5 minutes at 350 degrees F and let cool while preparing pudding.
  • In large bowl combine dry milk and water and mix. Add Jell-O to milk and whip for 1 minute with electric whip on medium or 2 minutes with hand whip. Let set for 5 minutes. Slice banana about 1/4 thickness.
  • Spoon in 1/2 the pie mixture into the pie pan. Layer banana slices across filling and then add the remaining Jell-O Mix.

Recipe adapted from one originally created by Bernice V. Janowski of Stevens Point, Wisconsin who won $200 in the Custard and Cream Pies category in a recipe contest sponsored by Better Homes and Gardens in 1997.

1 9-ounce package chocolate wafers (such as Nabisco Famous Chocolate Wafers)
1/3 cup unsalted butter, melted
3 egg yolks
½ cup granulated sugar
¼ cup cornstarch
¼ teaspoon salt
2 ½ cups whole milk
4 ounces white chocolate chips
1 ¼ teaspoon vanilla, divided
3-4 medium bananas
1 cup heavy cream
2 tablespoons sifted powdered sugar
For optional garnish: Dark chocolate and white chocolate curls (see note below recipe for some tips on creating the chocolate curls) and extra slices of banana

Steps:

  • In the bowl of a food processor, process the chocolate wafer cookies until they are fine crumbs. In a small bowl, place 1½ cups of the chocolate crumbs and hold the remaining crumbs aside in a separate bowl.
  • In a medium bowl, combine the 1½ cups of chocolate crumbs with the melted butter and stir to mix well. Press crumbs evenly into the bottom and up the sides of a 9-inch pie plate to form a solid crust. Place in the refrigerator to chill while you begin making the custard for the pie.
  • In a medium bowl, lightly beat the egg yolks. Set aside.
  • In a heavy bottomed saucepan, combine sugar, cornstarch, salt and milk. Stirring constantly heat over medium heat until the mixture just starts to get bubbly and thick. Cook for 2 minutes, stirring constantly.
  • Remove the pan from the heat. While whisking, gradually add a few spoons of the hot custard mixture to the bowl with the egg yolks, being sure to whisk quickly so the yolks do not start to cook or curdle. Keep whisking and slowly add more of the hot custard mixture to the yolks, until you have about a cup of custard in the bowl with the yolks.
  • Add the egg yolk mixture back into the pan and stir. Heat the mixture in the pan back up over medium heat, again stirring constantly. Once it starts to bubble, reduce heat to low and cook for 2 more minutes. Remove from heat and stir in white chocolate chips and 1 teaspoon of the vanilla, stirring until the chocolate melts completely. Allow the white chocolate custard to cool slightly.
  • Slice two of the bananas and place in a single layer over the chilled crust. Spoon half of the custard filling over the bananas and spread into an even layer. Sprinkle the remaining chocolate crumbs over the custard. Then slice the remaining bananas and place over the chocolate crumbs, then spoon the remaining custard over the bananas. Cover and chill for at least 4 hours so the custard cools and the pie sets.
  • When ready to serve, in the bowl of a stand mixer and with the wire whip attachment, combine heavy cream, remaining ¼ teaspoon vanilla and powdered sugar. Whip at high speed until stiff peaks form. Spread whipped cream over the pie. Garnish with shaved chocolate and additional banana slices.
