APRICOT-CHIPOTLE-CREAM CHEESE STAR
Dress up cream cheese with chipotle chiles and apricot preserves in an impressive appetizer that goes from start to finish in just 15 minutes.

Steps:
- In food processor, place cream cheese, Cheddar cheese, onion powder and mustard. Cover; process, scraping side of bowl if necessary, until well mixed. Add pecans. Cover; process with on-and-off pulses 2 or 3 times until mixed.
- Using parchment paper, cut out a star shape 7 inches in diameter. Spoon the cheese spread evenly onto the shape, using a table knife to shape the star. Turn onto a serving plate; remove the parchment paper.
- In small bowl, mix preserves, gingerroot and chiles. Spoon over cheese star. Serve with crackers.

- In a small bowl, mix the apricot preserves and brandy together, then set aside.
- Beat the cream cheese to a creamy consistency and blend in the sour cream and almond extract, blending until very smooth.
- Add the apricot-brandy mixture and blend well.
- Fold in the almonds.
- Cover and chill.
- SUGGESTED DIPPERS: Vanilla Wafers, Pound Cake Cubes, Muenster Or Monterey Jack Cheese Cubes Or Sticks, Chocolate Chunks.

Steps:
- In 8-cup measure, combine cheese, flour, dry mustard and onion powder.
- Toss to coat.
- Stir in half-and-half and Worcestershire sauce.
- Microwave at%50 (Medium) for 5 to 7 minutes, or until mixture can be stirred smooth, stirring twice with whisk.
- Set aside.
- Cut to 1 to 1 1/2-inch slice from top of bread.
- Cut around inside of loaf, leaving 1/2 inch of bread around outside.
- Remove center, leaving at least 1 inch of bread on bottom.
- Cut center and top into pieces for dipping.
- Spoon warm cheese mixture into bread shell.
- Sprinkle with paprika.
- Serve with bread cubes and apples slices for dippers.

- Preheat an oven to 350 degrees F (175 degrees C).
- Combine cranberries with sugar in a 2 quart baking dish with a lid, stirring well to coat all the berries. Bake in the preheated oven, covered, for about 30 minutes, until the cranberries pop and release their liquid.
- Remove from oven and stir in the apricot jam and pecans. Refrigerate overnight to blend the flavors. To serve, allow the cream cheese to come to room temperature, and pour dip over the block of cream cheese on a serving dish. Serve with buttery round crackers or small pretzels.
