1/2 pound dried navy beans, picked over
Sour cream, for serving
2 tablespoons olive oil
Grated Cheddar or Monterey Jack cheese, for serving
2 cups chopped yellow onion

2 tablespoons minced jalapeno
2 tablespoons minced garlic
2 1/2 pounds ground turkey
2 tablespoons Emeril's Southwest Essence, recipe follows
1 2/3 tablespoons chili powder
2 teaspoons kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano, crumbled
1 bay leaf
3 tablespoons cornmeal
3 cups low-sodium chicken broth
2 (10-ounce) cans Ro'tel Diced Tomatoes and Green Chiles (original), undrained
2 (4-ounce) cans diced green chiles, undrained
1 tablespoon finely chopped fresh cilantro stems
1/4 cup heavy cream
2 tablespoons finely chopped fresh cilantro leaves
1 tablespoon ground coriander
2 tablespoons chili powder
1 teaspoon cayenne pepper
2 teaspoons ground cumin
2 tablespoons paprika
1 tablespoon garlic powder
1 teaspoon crushed red pepper
1 tablespoon salt
1 tablespoon dried oregano
1 teaspoon black pepper

Steps:

  • In a large kettle, soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with enough water to cover by 2 inches. Cook beans at a bare simmer until just tender, about 1 hour, and drain in a colander.
  • In a skillet, heat the oil and saute the onion and jalapeno until soft and beginning to caramelize, 4 minutes. Add the garlic and cook, stirring, for 2 minutes. Add the ground turkey, Southwest Essence, chili powder, salt, cumin, oregano, and bay leaf and cook, stirring occasionally, until turkey is browned and cooked through, 6 minutes. Add the cornmeal and cook, stirring, for 2 minutes. Add the chicken broth, canned tomatoes, canned chiles, and cilantro stems and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 45 minutes, stirring occasionally. After it has cooked for 30 minutes, add the cooked beans. Add the heavy cream and cilantro leaves and cook, stirring occasionally, for 15 minutes longer.
  • Serve the chili in deep bowls, garnished with dollops of sour cream, grated Cheddar cheese, and green onions to taste.
  • Combine all ingredients thoroughly.

1 box (9 oz) frozen shoepeg white corn, thawed

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. Heat 12-inch nonstick skillet over medium-high heat. Add turkey; cook 6 to 8 minutes, stirring occasionally, until no longer pink. 1 tablespoon vegetable oil
2 pounds boneless turkey breast
2 onions, chopped
4 cloves garlic, minced
1 (15 ounce) can cannellini (white) beans, drained
1 (29 ounce) can white hominy, drained
3 (14 ounce) cans low-sodium chicken broth
3 (15 ounce) cans cannellini (white) beans, drained
¼ cup chopped fresh cilantro
1 ½ tablespoons ground cumin
1 teaspoon Cajun seasoning
3 serrano chile peppers

Steps:

  • Heat the vegetable oil in a large skillet over medium heat, and pan-fry the turkey breast until the meat is no longer pink, about 10 minutes per side. Transfer the turkey breast into a bowl to cool; shred it with 2 forks. Set the turkey meat aside. In the same skillet, cook the onions and garlic over medium heat until the onion is translucent, about 5 minutes; scrape the onions and garlic, along with any drippings, into the bowl with the turkey.
  • Place 1 can of cannellini beans, the hominy, and the chicken broth into a slow cooker. With an immersion blender, blend the mixture until smooth. Transfer the shredded turkey, onions, garlic, 3 more cans of cannellini beans, the cilantro, cumin, and Cajun seasoning into the slow cooker, and stir to combine. Wearing gloves, cut off the serrano chile stems, split the chiles, and scrape the seeds and membranes from 2 of the chiles with a spoon. Mince all 3 chiles. For milder flavor, seed and remove membranes from all the chiles. Mix the serrano chiles into the soup.
  • Cover the cooker, and cook on Low setting for 4 to 6 hours or High setting for 2 to 3 hours.

I came up with this recipe by trying to mix ingrediants together that were not only tasty and good for you but easy to make for my family after work. My husband and four year old LOVE it! I serve it with garlic and cheese Bisquick drop bisquits. I don't add any salt to this chili because the broth and sausage are salty enough.

1 lb lean turkey sausage, cut into dime size pieces
extra virgin olive oil
1/4 teaspoon sage
1 teaspoon dried parsley
1 teaspoon dried celery flakes
1 small onion, chopped fine
1 (15 1/2 ounce) can great northern beans
2 (19 ounce) cans cannellini beans
2 (15 1/2 ounce) cans chicken broth
1 bunch broccoli
garlic, to taste
pepper, to taste

Steps:

  • Heat olive oil in large soup pot.
  • Cook onions until translucent.
  • Add sausage and brown well.
  • Add garlic, sage, parsely and celery.
  • Deglaze pot with chicken broth until all sausage pieces are scraped from bottom of pot.
  • Add remaining chicken broth and simmer.
  • Add 1 can of northern beans and 1 can of cannelini beans. (Strained slightly in can. Leave some of the juice.).
  • Take the remaining can of cannelini beans, strained slightly and pour into bowl. Use your hands and "mash the beans." It's messy but adds a some starchy thickness to the chili.
  • Add smashed beans to the pot and stir well.
  • Chop just the florets of the brocolli into small pieces and add to the pot.
  • Simmer until ready to serve. (About 20 minutes.)
  • You can substitute chopped spinich for the brocolli and/or add cheese when serving.

HEALTHY WHITE BEAN TURKEY CHILI



Healthy White Bean Turkey Chili image

I decided to get back on Weight Watchers and was googling recipes. I found one for white bean turkey chili, but decided to put my own spin on it. It is so good, hearty, and has a nice creamy and smoky taste. I only used one teaspoon of red pepper flakes because I was going to be serving it to my 2.5 year old. I was shocked she actually had like 4 hearty bites and was dipping her spoon in the liquid and slurping it up. This is a huge feat for my very picky eater. My hubby said it was a keeper. Also, I used two pounds regular ground turkey and one pound extra lean ground turkey. This recipe can also be OAMC and you could probably get 2 or 3 dinners out of it, depending on your family size. You could also use your slow cooker, just brown the turkey and your spices in a skillet, then transfer the rest of the ingredients into the slowcooker for the exception of the half and half. I would add that 30 minutes before serving. Enjoy! If you are counting points, there is 12 servings. We had hearty helpings, so I would say 6 to 8 servings if you are not restricting your portions.

  • Add oil after pot is hot.
  • Cook onions until soft, about 5 minutes.
  • Add the garlic and cook an additional 2 minutes.
  • Add the spices and cook for another 2 minutes. (If using fresh sage, do not add until the very end.).
  • Add the ground turkey and cook all the way through, until meat is white.
  • Stir in the chicken stock and half and half.
  • If you are using fresh sage, add it at this point.
  • Lower the heat to low, and let the flavor incorporate, about 30 to 45 minutes, stirring occasionally.
  • Serve with low fat cheddar or Mexican style cheese, low fat sour cream, chopped onion, and/or chopped fresh cilantro for garnish.

2 lb 99% lean ground turkey
1/2 tsp olive oil
1 small onion, chopped
3 garlic cloves, minced
1 tsp chili powder, to taste (if desired)
2 bay leaves
2 tsp cumin
1 tsp oregano
2 (15 oz cans) of white northern or navy beans, rinsed and drained
15 oz can pumpkin puree (not pumpkin pie filling)
.5 cup diced zucchini
2 cups low sodium, fat free chicken broth
chopped cilantro and chives for topping
salt and pepper to taste
low fat sour cream for topping (optional)

Steps:

  • 1. Heat a large heavy saute pan over high heat and lightly spray with oil. Add meat and cook, breaking it up until white, about 5 minutes. Add to crock pot. 2. Add oil to the saute pan, then onions, garlic, sauté about 3 - 4 minutes; add cumin and sauté another minute. 3. Add to crock pot. Add beans, pumpkin puree, zucchini, broth, chili powder (if desired), oregano, and bay leaves. CrockPot: cover and cook on high for 4 hours or low for 8 hours. Pressure Cooker: 7 minutes.

3 tablespoons oil (can use more)
2 large onions, chopped
3 tablespoons minced fresh garlic (or to taste)
2 -4 teaspoons dried chili pepper flakes (or to taste, if you like heat add in lots!)
1 jalapeno pepper (seeded and finely chopped) (optional)
2 teaspoons dried oregano
2 teaspoons cumin
1/4 cup chili powder (or to taste)
2 tablespoons tomato paste
1 1/2 lbs ground turkey
1 large bay leaf (or use 2 small)
1 tablespoon hersey's dark cocoa
1/4 teaspoon cinnamon
1 (28 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
3 (15 ounce) cans small white beans, rinsed and drained
2 cups beef broth
1 cup dark beer
salt and pepper
2 cups grated old cheddar cheese (or to taste)

Steps:

  • Heat oil in a Dutch oven over medium heat; add in onions and saute for 8-10 minutes or until lightly browned (adding in the garlic the last 3 minutes of cooking).
  • Add in the oregano, cumin and chili powder, chili flakes and jalapeno pepper (if using) cook for 1-2 minutes.
  • Add in tomato paste and stir for 1 minute.
  • Add in ground turkey; cook until no longer pink.
  • Stir in bay leaf and cocoa powder, then add in undrained diced tomatoes, tomato sauce, beef broth and beer; bring to a boil and simmer on top of the stove for about 15 minutes, stirring occasionally, then season with salt and pepper.
  • Set oven to 325 degrees.
  • Place in oven uncovered, and cook for about 1 hour, stirring occasionally (the longer you cook this in a low heat oven the richer and thicker it will be, you can even cook it for even 2 hours!).
  • After 1 hour cooking add in drained beans, and season with more salt if desired; return to oven and cook uncovered for another 35-40 minutes.
  • Sprinkle the cheddar cheese on top the last 5-6 minutes of cooking time.

I came across this recipe in a magazine about a year ago...can't remember which one, but it is my new favorite recipe. Even if you are't a big fan of gound turkey...I am not...this recipe may change your mind...Not to mention that it is healthy AND can be prepared in a crock pot or on the stove top. I always double the recipe and freeze the second batch. Family tested and loved!

1 1/4-1 1/2 lbs ground white turkey meat
2 tablespoons olive oil, divided
2 onions, finely chopped
6 garlic cloves, finely chopped
1 tablespoon oregano
1 (28 ounce) can stewed tomatoes, chopped
2 cups chicken broth
1 (19 ounce) can cannellini beans (White Kidney Beans)
1 (4 1/2 ounce) can chilies, chopped
1 green bell pepper, chopped

Steps:

  • Brown ground turkey in 1 T. olive oil & set aside.
  • Saute onions, garlic & oregano in remaining 1 T. olive oil. Add tomatoes & chicken broth and bring to a boil. Reduce by 1/3.
  • Add cannellini beans & ground turkey and transfer to crock pot. Cook on high 3 - 4 hours or on low all day, 6 - 8 hours. Or for stove top, bring to a boil, reduce heat to simmer and cook 60 minutes.
  • 30 minutes before serving, add chopped chilies and bell pepper.
  • Freezes well.

2 tablespoons olive oil
2 cups chopped yellow onion
2 tablespoons minced jalapeno
2 tablespoons minced garlic
2 1/2 pounds ground turkey
2 tablespoons Emeril's Southwest Essence, recipe follows
1 2/3 tablespoons chili powder
2 teaspoons kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano, crumbled
1 bay leaf
3 tablespoons cornmeal
3 cups low-sodium chicken broth
2 (10-ounce) cans Ro'tel Diced Tomatoes and Green Chiles (original), undrained
2 (4-ounce) cans diced green chiles, undrained
1 tablespoon finely chopped fresh cilantro stems
1/4 cup heavy cream
2 tablespoons finely chopped fresh cilantro leaves
Sour cream, for serving
Grated Cheddar or Monterey Jack cheese, for serving
Chopped green onions, for serving

Steps:

  • In a large kettle, soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with enough water to cover by 2 inches. Cook beans at a bare simmer until just tender, about 1 hour, and drain in a colander. In a skillet, heat the oil and saute the onion and jalapeno until soft and beginning to caramelize, 4 minutes. Add the garlic and cook, stirring, for 2 minutes. Add the ground turkey, Southwest Essence, chili powder, salt, cumin, oregano, and bay leaf and cook, stirring occasionally, until turkey is browned and cooked through, 6 minutes. Add the cornmeal and cook, stirring, for 2 minutes. Add the chicken broth, canned tomatoes, canned chiles, and cilantro stems and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 45 minutes, stirring occasionally. After it has cooked for 30 minutes, add the cooked beans. Add the heavy cream and cilantro leaves and cook, stirring occasionally, for 15 minutes longer. Serve the chili in deep bowls, garnished with dollops of sour cream, grated Cheddar cheese, and green onions to taste.

1 small jalapeño pepper
1 medium green bell pepper
1 pound(s) (450 g) 93% lean ground turkey
3 tablespoon(s) moroccan rub
4 clove(s) garlic cloves, pressed
1 teaspoon(s) salt
2 can(s) great northern or cannellini beans, drained and rinsed
1 can(s) 14.5 oz tomato sauce
1 can(s) 14.5 oz petite diced tomatoes with garlic and onion, undrained

Steps:

  • Coarsely chop onion and jalapeño. Dice bell pepper. Combine onion, peppers, turkey, rub, pressed garlic and salt in Deep Covered Baker; mix well. Microwave, covered, on HIGH 5-7 minutes or until turkey is no longer pink, breaking into crumbles halfway through.
  • Carefully remove baker from microwave using Oven Mitts. Add beans, tomato sauce and tomatoes; mix well. Cover; microwave on HIGH 14-17 minutes or until simmering.

2c. onion, small dice
2 TB chopped garlic
1 can green chilies, small dice 8 oz.
1 pkg Carroll Shelby's chili mix
8 oz. boneless roasted turkey breast, shredded
1 qt. chicken broth
3 cans white beans, your choice - 14 oz.

Steps:

  • In a large pot, add vegetable oil and brown turkey. Add onion, garlic, and chilies and cook for 4 minutes, then add the rest of the ingredients to pot. Bring to a boil, then turn to a simmer. Let simmer for 30 minutes. Season with salt and pepper and serve with either rice, noodles or corn bread.
