WHITE BEAN BURGERS WITH SPINACH

White Bean Burgers With Spinach image

This recipe came from Better Homes and Gardens and DH and I liked it very much. The burgers had great flavor and consistency. DH said so far, this has been the best meatless burger recipe we have made to date. Instead of using the country Italian bread, we just used hamburger buns. We chopped the parsley. We did not top with the Easy Tomato Sauce.

WHITE BEAN BURGERS

These have a delicate texture and a wonderful savory taste. They're a little tricky to turn, as they can fall apart. Don't make them too thick and use an offset spatula, and it will be easier for you. They should be cooked on a flat griddle or pan; don't try to grill them on a barbecue.

Time 2h30m

Yield 6 patties

Number Of Ingredients 13

2 cans white beans, drained and rinsed
2 tablespoons extra virgin olive oil
1 small onion, finely chopped
Salt to taste
2 to 3 large garlic cloves (to taste), green shoots removed, minced
2/3 cup finely grated carrot
3 tablespoons freshly squeezed lemon juice
1/4 cup finely chopped parsley
2 teaspoons minced fresh sage or thyme
1/2 cup fresh bread crumbs
1 egg, beaten
Freshly ground pepper to taste
Whole grain hamburger buns and the condiments of your choice

Steps:

  • Heat 1 tablespoon of the olive oil in a medium-size skillet and add the onion. Cook, stirring, until tender, about 5 minutes. Add a pinch of salt, the garlic and the grated carrot, and continue to cook for another minute or two, until fragrant and the carrot has softened slightly. Remove from the heat.
  • In a food processor fitted with the steel blade, puree the beans with the lemon juice. Transfer to a bowl and stir in the onion mixture, the parsley, sage or thyme, the bread crumbs and the egg. Season to taste. Shape into patties, ½- to ¾-inch thick. Set on a parchment-covered baking sheet and cover with plastic wrap. Refrigerate for 1 to 2 hours.
  • Heat the remaining oil in a large, heavy skillet or on a griddle over medium heat and brown the patties for 4 minutes on each side, being very careful when you turn them over. An offset spatula works well for this. Serve on whole grain buns, with the condiments of your choice.

SPINACH BEAN BURGERS

Spinach Bean Burgers image

We like bean burgers and I decided to do these to try to incorporate more spinach into my kids food without completely hiding it so that they will try to accept it more easily in dishes that it doesnt hide well in.

Categories     Lentil

Time 20m

Yield 8 burger

Number Of Ingredients 9

3 cups navy beans, cooked
2 cups lentils, cooked
3/4 cup breadcrumbs
2 tablespoons dry onion flakes
2 tablespoons garlic powder
2 eggs
2 tablespoons red pepper flakes
3 cups fresh spinach, chopped
4 tablespoons canola oil

Steps:

  • Add navy beans, lentils, breadcrumbs, minced onion, garlic powder, and eggs to food processor. Process 1 minute or until thoroughly mixed.
  • Removed from food processor into large bowl and mix the spinach in with a large spoon, or with your hands. If you have some who don't like spicy food, go ahead and shape a couple burgers now. Then add red pepper flake and mix thoroughly.
  • Add oil to large fry pan and preheat. While heating pan, shape mix into burgers. These do not shrink like ground beef, so make them the size you would like the finished result to be.
  • Fry 3-5 minutes per side until golden brown.
  • Serve with your favorite hamburger toppings.
