BARM BRACK (IRISH WHISKEY TEA LOAF)
Traditional Irish tea bread served around Halloween once used to foretell marriage by baking a ring in the loaf and waiting for someone to get it. Whoever gets it is supposed to be the next to marry. I only make it once a year around Halloween and I have family members that ask for a second mini loaf to freeze for later in the year. Never gave the recipe out until now. I like it with coffee or tea in the morning very sweet and heavy.

Steps:
- First soak the raisins and sugar in the tea (or tea and whiskey) overnight.
- Preheat the oven to 300 degrees F (150 degrees C).
- Add Flour, baking powder, and eggs to the tea mixture.
- Spoon the dough into a greased loaf pans. You should be able to fill 3 loaf pans, 8x4 inches (20x10 cm). (I prefer to make them in ready to give away little loaf pans which makes about five per batch).
- Place loaf pans in the oven and bake for 1 hour and 45minutes.
- Leave Bram Brack to cool in the pans for 10 minutes, then turn out onto a cooling rack and glaze the top with the melted honey. ( If you go with the small give away kind let cool then leave in tin drizzle honey on the top and cover with a little room on top and then give them away when ready.).
WHISKEY SPIKED PEACH ICED TEA
Steps:
- Bring water to a boil in a small saucepan; remove from the heat, add tea bags, and let steep 5 minutes. Remove tea bags and stir in sugar until dissolved. Transfer to a pitcher, add peach nectar, and stir to combine. Chill in the refrigerator for at least 1 hour.
- Fill tall glasses with ice and then pour peach tea over, leaving some room at the top for the whiskey. Stir in 1 shot of whiskey to each glass and garnish with a peach slice and fresh mint sprig.
PEACH ICED TEA WHISKEY RECIPE BY TASTY
Here's what you need: boiling water, black tea bags, whiskey, fresh peaches, sugar, water, lemon, fresh peach, lemon, fresh mint

- In a large pitcher, pour hot water over tea bags letting steep 5 minutes.
- Bring syrup ingredients to boil, then reduce heat to medium.
- Strain syrup through a fine strainer to remove fruit pieces.
- Add syrup and whiskey to tea, then chill until ready to serve.
- Serve over ice, with sliced peaches, sliced lemons and a mint sprig.
- Enjoy!

- Bring 8 cups water to boil in large saucepan. Remove from heat, add tea bags, and let steep 5 minutes. Discard tea bags. Mix in sugar. Cool completely. Mix in all remaining ingredients except ice block. Place ice block in large punch bowl. Pour tea mixture over.
BLACK TEA AND WHISKEY COOLER
Florida A&M, or FAMU, the historically Black college and university founded in 1887 in Tallahassee, canceled its homecoming celebrations for 2020 because of the Covid-19 pandemic. This whiskey cooler from Shameeka Ayers, an alumna, is Florida sunshine beamed into a glass. The orange and green are inspired by FAMU's colors; Ms. Ayers calls the drink the Three Strike, inspired by the school's "Strike, Strike and Strike Again" chant. The black tea adds depth and is refreshing year-round. The Uncle Nearest whiskey honors Nathan "Nearest" Green, the enslaved African who taught Jack Daniels how to distill.

- Prepare the tea: Place a kettle over high and bring 2 1/2 cups water to a boil. Remove from heat and transfer 2 cups water to a heatproof vessel.
- Add the tea and let steep for 10 minutes. Let the hot tea cool to room temperature. (This yields 2 cups of tea, so you will have some left over; save it for unsweetened iced tea or additional cocktails.)
- Use a muddler to slightly pound the mint leaves in a cocktail shaker. You'll smell the fragrance as the oils release.
- Fill the shaker halfway with ice, then add the whiskey, peach nectar, orange liqueur, vanilla extract and 6 ounces of the prepared tea. Shake for 30 seconds. Strain each serving into a highball glass halfway filled with ice and garnish with a mint sprig.
WHISKEY AND JASMINE GREEN TEA CHILLERS
We love the combo of whiskey and jasmine in this refreshing cocktail.

- Bring 4 cups water to a boil in a medium saucepan. Add the sugar, and stir until it has dissolved. Let cool for 2 minutes. Add the tea bags, stir and let steep for 3 minutes. Remove the tea bags, and squeeze the liquid back into the pot. Transfer the tea to a container, and refrigerate until cool, about 10 minutes.
- Fill 4 highball glasses, Collins glasses or 12-ounce mason jars with ice. Add 2 to 3 ounces of the whiskey and 8 ounces of the tea to each. Garnish with lemon slices and dried jasmine flowers if using.

- Place to boiling water and tea-bags into a bowl and set aside to infuse the flavours for 5 minutes. Reomve the tea-bags from the water and add the sugar, lemon juice and passionfruit pulp and stir until the sugar has completely dissolved set aside or refrigerate and allow the mix to cool completely.
- Put the whiskey, soda and tea mixture into a 2 litre (aprox 8 cups) jug and stir to combine. Fill the glasses with ice and pour over the iced tea.
- Serve.

- Pour boiling water into a mug or teacup and place the tea bag in to steep for about 1 minute (or longer according to preference).
- Remove and discard the tea bag. Pour in the whiskey, milk and sugar as desired. Stir, drink, and relax!
