Wheat Germ Molasses Muffins image

A co-worker gave me this recipe over 10 years ago and it is just as good and nutritious today as it was then.

Number Of Ingredients 9

2 cup(s) unbleached white flour
1 cup(s) wheat germ
1 tablespoon(s) baking powder
1 - egg
3/4 cup(s) milk
1/4 cup(s) canola oil
1/4 cup(s) molasses
1/4 cup(s) brown sugar, firmly packed
- cooking spray

Steps:

  • Combine flour, wheat germ, and baking powder - sit aside.
  • Mix egg, oil, molasses, and sugar- beat well with hand-mixer. Add flour mixture and mix at low-speed with hand-mixer only until flour is damp.
  • Lightly coat muffin tin cups with cooking spray. Fill muffin tins 2/3 full.
  • Bake in preheated 375 oven for 25 minutes.

2 cups plain yogurt
1 egg, beaten
⅓ cup molasses
1 cup raisins
½ cup wheat germ
1 cup quick cooking oats
3 tablespoons butter, melted
1 ½ cups whole wheat flour
1 ¼ teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups.
  • Beat together the yogurt, egg, molasses, raisins, wheat germ, oats, and butter in a large bowl until evenly mixed. Sift the flour, baking soda, cinnamon, ginger, cloves, and salt on top of the molasses mixture. Fold the flour mixture into the molasses until a batter has formed. Pour batter into muffin cups, filling to the top.
  • Bake in preheated oven until a toothpick inserted into the middle of a muffin comes out clean, about 25 minutes.

1/2 cup brown sugar
1 1/4 cups nonfat milk
1/3 cup butter or 1/3 cup margarine, melted
1 cup flour
1/4 teaspoon salt
4 teaspoons baking powder
1 cup wheat germ

Steps:

  • Preheat oven to 425 degrees.
  • In large bowl, beat together the egg, sugar, milk and butter.
  • Mix into the milk mixture the flour, salt and baking powder.
  • Batter may be lumpy.
  • Fold in one cup wheat germ.
  • Spoon mixture into greased muffin tins.
  • Bake for 20 minutes.

3/4 cup sunflower seeds
1 cup wheat germ
1/2 cup soy flour
1 cup whole wheat flour
1/2 cup powdered milk
1/2 cup sesame seeds, ground
1 teaspoon salt
2 1/2 teaspoons baking powder
1/2 cup oil
1 cup molasses
1 1/2 cups milk
2 eggs
2 tablespoons nutritional yeast (optional)
1/2 cup raisins (optional)

Steps:

  • Preheat oven to 375°F.
  • Mix together dry ingredients- oats, sunflower seeds, wheat germ, soy flour, flour, milk powder, ground sesame seeds, salt, baking powder.
  • Mix together wet ingredients- oil, molasses, milk, eggs.
  • Stir the wet and dry ingredients together until just moistened.
  • Bake for about 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

1 ½ teaspoons baking soda
¼ teaspoon salt
1 ¼ cups skim milk
½ cup molasses
1 egg, beaten
2 tablespoons vegetable oil
2 cups bran flakes cereal
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 12 cup muffin pan.
  • In a medium bowl, sift together flour, baking soda, and salt.
  • In a separate medium bowl, mix skim milk, molasses, egg, and vegetable oil. Mix in the bran cereal. Thoroughly stir in the flour mixture. Transfer to the prepared muffin pan.

I developed a love for wheat germ muffins when my mother worked at Woodward's. We tried to recreate them. This recipe comes very close. Don't worry...it freezes very well.

3 1/4 cups all-purpose flour
3 1/4 cups cake-and-pastry flour
2 3/4 cups wheat germ
4 tablespoons baking powder
3 teaspoons salt
2 1/2 cups white sugar
2 1/4 cups milk
1 3/4 cups butter, melted
5 large eggs
5 ml vanilla

Steps:

  • Mix all dry ingredients together.
  • mix all liquids together and add to dry ingredients.
  • Scoop into paper lined muffin tin.
  • Bake at 350 degree oven for 25 minutes or until golden brown.
