Number Of Ingredients 10

1-1/2 cups whole wheat flour
1-1/2 to 2 cups all-purpose flour
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
1-1/2 cups fat-free milk
1/4 cup packed brown sugar
2 tablespoons honey
2 tablespoons plus 1-1/2 teaspoons butter, divided
1/2 cup ground flaxseed
1/2 cup whole flaxseed

Steps:

  • In a large bowl, combine the whole wheat flour, 1 cup all-purpose flour, yeast and salt. In a large saucepan, heat the milk, brown sugar, honey and 2 tablespoons butter to 120°-130°. Add to dry ingredients; beat until smooth. Stir in ground and whole flaxseed until blended. Stir in enough remaining all-purpose flour to form a firm dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a large bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface. Shape into a loaf; place in a 9x5-in. loaf pan coated with cooking spray. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 35-40 minutes or until golden brown. Remove from pan to a wire rack. Melt remaining butter; brush over bread. Cool.

5-Minute Flax Wheat Bread image

This flaxseed bread is so easy to make, a kid could put it together. Healthy and wholesome, you'll never have to swear off bread again!

3 cups whole wheat flour
2 tsp yeast
1 tsp salt
1 cup ground flaxseed
1 1/2 cups lukewarm water

Steps:

  • Sift the dry ingredients together in a large bowl to remove any lumps. Add in the water in small portions, stirring to combine with a spatula.
  • Finish folding the dough by hand, or simply continue working it with a spatula. Place the dough into a large bowl, cover it with plastic wrap or a lid, and leave it on the counter to rise overnight.
  • The next day, the dough should be bubbly, fluffy, and a little sticky. Flour your hands and form either one large or two smaller bread loaves. Place the loaves on a floured baking sheet, cover them with a towel, and let them rise for about an hour.
  • Preheat the oven to 450°F and make sure you have two racks in place. Pour 2 cups of hot, boiled water into a deep baking dish. Place this baking dish on the lower rack (the water helps the bread to rise and crisp). Place the bread on the top racks. After 10 minutes, remove the dish with the water. Continue baking for another 20-30 minutes depending on the size of your bread loaves. Enjoy!

  • Place all ingredients (except sunflower seeds) in the pan of the bread machine in the order recommended by the manufacturer. Select Basic White Cycle; press Start. Add the sunflower seeds when the alert sounds during the Knead Cycle.

WHOLE WHEAT NO-KNEAD BREAD WITH FLAX SEEDS AND OATS



Whole Wheat No-Knead Bread With Flax Seeds and Oats image

I found this recipe on the food blog Kiss My Spatula. This was the first bread I've ever made, and it was easy and turned out great! The crust is the best part --super crunchy and crackle-y. It's best to eat on the first day, but can be wrapped up in foil and kept up to two days, reheated slightly before serving. The crust looses much of its crunch after the first day, however. I didn't have a Dutch oven, which is suggested in the recipe, so I used stock pot, which worked fine.

3/4 cup whole wheat flour
1/2 cup steel cut oats
4 tablespoons flax seeds
2 1/4 cups bread flour
1 1/2 teaspoons table salt or 3/4 tablespoon kosher salt
1 1/3 cups water
1 tablespoon white distilled vinegar
1/4 teaspoon instant yeast

Steps:

  • Whisk flour, steel cut oats, flax seeds, yeast, and salt in large bowl. Add water and vinegar. Using rubber spatula, fold mixture, scraping up dry flour from bottom of bowl until shaggy, sticky ball forms. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees.
  • Lay 12X18-inch sheet of parchment paper inside 10-inch skillet and spray with nonstick cooking spray. Dough is ready when its surface is dotted with bubbles. Transfer dough to lightly floured work surface and knead 10 to 15 times. Shape dough into ball by pulling edges into middle. Transfer dough, seam-side down, to parchment-lined skillet and spray surface of dough with nonstick cooking spray. Cover loosely with plastic wrap and let rise at room temperature until dough has doubled in size and does not readily spring back when poked with finger, about 2 hours.
  • About 30 minutes before baking, adjust oven rack to lowest position, place 6-8 quart heavy-bottomed Dutch oven (with lid) on rack, and heat oven to 475 degrees. Lightly flour top of dough and, using razor blade or sharp knife, make one 6-inch-long, 1/2 inch-deep slit along top of dough.
  • Carefully remove pot from oven and remove lid. Pick up dough by lifting parchment overhang and lower into pot (let any excess parchment hang over pot edge). Cover pot and place in oven. Reduce oven temperature to 425 degrees and bake covered for 30 minutes. Remove lid and continue to bake until loaf is deep brown and instant-read thermometer inserted into center registers 210 degrees, 20 to 30 minutes longer. Carefully remove bread from pot; transfer to wire rack and cool to room temperature before slicing.

1/2 cup milk
1/2 cup water
1 tablespoon butter or margarine, softened
1 3/4 to 2 cups Gold Medal™ all-purpose flour
1 teaspoon salt
1 package regular active or fast-acting dry yeast (2 1/4 teaspoons)
3 tablespoons honey
1 cup Gold Medal™ whole wheat flour
1/4 cup old-fashioned or quick-cooking oats
1/4 cup ground flaxseed
Additional butter or margarine, melted, if desired

Steps:

  • In 1-quart saucepan, heat milk, water and 1 tablespoon softened butter over medium heat to 120°F to 130°F (butter will not melt). In large bowl, mix 1 1/2 cups of the all-purpose flour, the salt and yeast. Add milk mixture and honey. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in whole wheat flour, oats, flaxseed and enough remaining all-purpose flour to make dough easy to handle.
  • On lightly floured surface, knead dough about 5 minutes or until smooth and springy. Grease medium bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap and let rise in warm place 1 to 1 1/2 hours or until double in size. Dough is ready if indentation remains when touched.
  • Grease bottom and sides of 8x4-inch loaf pan with shortening or cooking spray. On lightly floured surface, roll dough into 12x8-inch rectangle. Roll up rectangle tightly, beginning at 8-inch side. Pinch edge of dough into roll to seal. Pinch each end of roll to seal; fold ends under loaf. Place seam side down in pan. Cover and let rise in warm place 45 to 60 minutes or until double in size.
  • Heat oven to 375°F. Uncover loaf. Bake 30 to 35 minutes or until loaf is golden brown and sounds hollow when tapped. Remove from pan to cooling rack. Brush top of loaf with melted butter. Cool completely, about 2 hours.

This is a light wheat bread made with flax seed. It's a moist bread that is also great toasted. I fix this in my dough cycle in the bread machine and shape it, let it rise and bake it in my regular oven.

1 egg, room temperature
2 tablespoons unsalted butter, cut up
2 1/2 cups bread flour
3/4 cup whole wheat flour
1/3 cup flax seed, ground up
3 tablespoons brown sugar
3/4 teaspoon salt
1 teaspoon bread machine yeast

Steps:

  • Warm up milk.
  • Place all ingredients in your bread machine as directed by the manufacturer.
  • After the dough cycle has finished, remove bread and place on lightly floured surface and punch down and let rest for about five minutes.
  • Roll out flat on flour covered board and then fold each end in and then again in the middle and place in a greased 8x5 glass loaf pan.
  • Cover and let rise in a warm place for approximately 30 minutes.
  • Bake in an oven preheated at 350 degrees for about 35 minutes.
