1 pound lean ground beef
½ cup chopped onion
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes with juice, divided
1 tablespoon Worcestershire sauce
1 ½ teaspoons chili powder
1 teaspoon paprika
1 teaspoon dried oregano
¾ teaspoon ground cumin
½ teaspoon ground black pepper
2 cups refried beans
¼ teaspoon ground cumin
1 (18 ounce) jar beef gravy
1 (10 ounce) can enchilada sauce
4 large flour tortillas
2 cups shredded Cheddar cheese, divided
1 cup sour cream, divided
¼ cup chopped onion, divided
¼ cup chopped tomatoes, divided
1 cup chopped lettuce, divided

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place a skillet over medium heat. Cook and stir ground beef, 1/2 cup chopped onion, and garlic in the hot skillet until beef is browned and crumbly, breaking it apart as it cooks, about 8 minutes; drain excess grease. Mix in half the can of diced tomatoes, Worcestershire sauce, chili powder, paprika, oregano, 3/4 teaspoon of cumin, and black pepper. Bring meat mixture to a boil over medium-high heat and cook for 5 minutes, stirring often.
  • Heat refried beans and 1/4 teaspoon cumin in a saucepan over medium-low heat. Keep beans warm. Mix remaining half of diced tomatoes, beef gravy, and enchilada sauce in a separate saucepan; bring to a boil.
  • Place tortillas onto a microwave-safe plate and cover with a damp paper towel; microwave tortillas until they are soft and warm, about 30 seconds. Place a warmed tortilla onto a work surface and spoon 1/4 the beef mixture in a line down the center of the tortilla. Layer 1/4 the bean mixture on top of beef layer and spread 1/4 cup of Cheddar cheese over the bean layer. Fold right and left edges of the tortilla over the ends of the filling and roll up tortilla to make a burrito. Place burrito seam side down into a 9x13-inch baking dish. Repeat with remaining tortillas to make 4 burritos.
  • Pour gravy sauce over the burritos in the baking dish; top with remaining 1 cup Cheddar cheese.
  • Bake burritos in the preheated oven until the cheese has melted, 15 to 20 minutes. To serve, place each burrito on a serving plate and spoon sauce from baking dish over the burritos. Top each burrito with 1/4 cup sour cream, 1 tablespoon chopped onion and chopped tomato, and 1/4 cup of chopped lettuce.

1 tablespoon vegetable oil
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 white onion, chopped
One 28-ounce can whole peeled tomatoes in sauce
One 28-ounce can tomato sauce
1/2 teaspoon ground cumin
1/2 teaspoon ground oregano
1/2 teaspoon black pepper
1 pound melting white American cheese, preferably Land o' Lakes
1/4 cup pickled jalapenos
2 cups milk
1 teaspoon vegetable oil
4 ounces sirloin or skirt steak, sliced into bite-size pieces
Kosher salt and black pepper
1 large flour tortilla
1/2 cup canned refried beans, warm
1/2 cup cooked Mexican or Spanish rice, warm
2 tablespoons chopped white onion
1 tablespoon chopped fresh cilantro
1/4 cup shredded mozzarella cheese
For serving, optional: Sour cream; guacamole; shredded lettuce

Steps:

  • For the salsa: Heat the vegetable oil in a large saucepan over medium heat. Add the peppers and onion and cook until the onion is translucent, 8 to 10 minutes.
  • Meanwhile, blend together the tomatoes and tomato sauce in a large blender until smooth. Once the peppers and onions are cooked, stir the tomato sauce mixture into the saucepan. Bring to a boil then reduce to a simmer and stir in the cumin, oregano and black pepper. Simmer for 10 minutes; taste for seasoning and add salt if needed. Keep warm. Makes about 5 cups.
  • For the queso sauce: Put the cheese and jalapenos in a heat-safe blender. Bring the milk to a boil over medium-high heat in a medium saucepan. Carefully pour the hot milk into the blender and blend until smooth. Return to the saucepan and keep warm over low heat.
  • Makes about 2 cups.
  • For the burrito: Heat the vegetable oil in a medium skillet over medium-high heat. Add the sliced steak and brown on one side. Loosen the meat with a spatula or spoon and brown the meat on the other side. Season with salt and pepper and remove from the skillet.
  • Put the tortilla on a microwave-safe dish and cover it with a damp paper towel. Heat in the microwave until quite hot and pliable, about 20 seconds. Discard the paper towel.
  • Put the refried beans, steak, rice, onion, cilantro, and cheese horizontally across the center of the tortilla, leaving a 2-inch border at both ends. Fold the left and right sides inwards perpendicular to the filling, then roll the burrito from front to back, pulling the filling tightly until the bottom of the burrito is now on top. Top with up to 1 cup of the salsa and about the same amount of queso sauce. Serve with sour cream, guacamole, and shredded lettuce if desired. Remaining salsa and queso sauce can be kept for up to 1 week, refrigerated.

1 (10 3/4 ounce) can cream of mushroom soup
1 lb lean ground beef
1 onion, chopped
1 red bell pepper, chopped
1 (1 1/4 ounce) package taco seasoning mix
1/2 cup mushroom, finely chopped
1 (16 ounce) can refried beans
1 (10 count) package flour tortillas
4 cups shredded cheddar cheese
sliced black olives (optional)
sliced jalapeno (optional)

Steps:

  • Stir together sour cream and condensed soup.
  • Pour half of this in the bottom of a large casserole or 9x13-inch baking dish, spreading it evenly across the bottom.
  • Brown and cook through the ground beef with the onion and bell pepper; drain any fat.
  • Stir in taco seasoning, mushrooms and refried beans, mixing well.
  • Spoon mixture onto tortillas, rolling tortillas up and placing them seam-side-down in the casserole dish.
  • Top with remaining soup/cream mixture and sprinkle with the cheese.
  • Place a few sliced black olives or jalapeno slices on top of the cheese, if desired.
  • Bake at 350F for 30-35 minutes or until cheese is melted and dish is heated through.

1 tablespoon adobo sauce
1 tablespoon barbecue seasoning
1 rotisserie chicken, meat shredded, skin and bones discarded
3 tablespoons olive oil
2 scallions, white and green parts finely chopped separately
2 cups prepared white rice
Zest of 1 lime
Kosher salt and black pepper
One 21.5-ounce can honey-chipotle beans, such as Bush's
1 cup shredded Cheddar-Monterey Jack cheese blend
4 large tortillas, warmed to make them pliable
1 cup shredded Cheddar-Monterey Jack cheese blend
1/2 cup chopped white onion
1/4 cup chopped fresh cilantro
4 lime wedges

Steps:

  • For the burrito: In a large pan on medium-high heat, add the adobo sauce, barbecue seasoning, chicken, 2 tablespoons of the oil and the scallion whites. Saute until everything is combined and coated and the chicken is warmed through, 6 to 8 minutes. Remove to a large bowl.
  • In a medium bowl, toss the rice with the lime zest and scallion greens; season with a pinch of salt and a few grinds of black pepper.
  • Drain the beans over a bowl and reserve 1 cup of the liquid for the topping. Add the beans to the bowl with the chicken mixture, then add the rice mixture and cheese and mix to combine.
  • Add a couple of spoonfuls of filling to each tortilla. Fold one of the tortillas by first overlapping the line of filling with the flap closest to you. Tuck in both sides and, while holding them, fold the tortilla over itself, keeping the ingredients tucked tightly in the center. Fold the remaining tortillas.
  • Preheat the oven to broil.
  • On a griddle or in a large pan on high heat, add the remaining tablespoon of oil. Add each burrito seam-side down and sear until golden brown, 2 to 3 minutes (you may have to do this in batches if using a pan instead of a griddle). Flip and sear the other side, another 2 to 3 minutes. Transfer the burritos to an ovensafe serving dish.
  • For the topping: Drizzle the reserved 1 cup bean liquid over the burritos, top evenly with the cheese and place under the broiler until the cheese is just melted, 3 to 5 minutes. Serve topped with the white onions, cilantro and a squeeze of lime.

SAUCE (MAY DOUBLE) :
8 oz. can tomato sauce
1/2 can water
1 pkg. taco seasonings dry mix

Steps:

  • Brown meat and onion. Add taco seasoning and water (per package instructions). and refried beans. Simmer 20 minutes. Assemble ingredients: Grated cheese, tomato, lettuce and meat in tortillas, fold sides. Pour sauce and grated cheese. Can microwave 2 minutes or bake at 350 degrees for 20 minutes.

10 frozen beef & been green chili burritos
2 (28 ounce) cans mild enchilada sauce
1 bunch green onion
1 (2 1/2 ounce) can diced black olives
2 lbs shredded cheddar cheese

Steps:

  • Microwave burritos on a plate 5 at a time for 4-5 minutes.
  • Place burritos in a dark baking pan.
  • Pour 2 cans enchilada sauce over burritos.
  • Cover with shredded cheese, green onion and black olives.
  • Bake in oven at 350°F for 15-20 minutes or until cheese is completely melted or sauce is bubbling.

This has evolved from a recipe I found in community cookbook. Very tasty and spicy depending on the salsa used. I use so many peppers because I like the colors, but you could just use your favorite.

0.5 (15 ounce) can black beans (rinsed & drained)
0.5 (15 ounce) can kidney beans (rinsed & drained)
0.5 (15 ounce) can whole kernel corn (rinsed & drained)
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/2 green bell pepper, diced
1/2 red onion, diced
1 teaspoon cumin
1 teaspoon chili powder
4 burrito-size flour tortillas
1 cup salsa
1 cup shredded cheese

Steps:

  • Preheat oven to 375 degrees.
  • Cook rice.
  • Combine rice, beans, peppers, onion, cumin, and chili powder in large bowl.
  • Line 9"x13" glass baking dish with half of salsa.
  • Fill 4 tortillas with filling mixture. Sprinkle some cheese in each (optional).
  • Wrap using burrito fold (fold ends in then fold over).
  • Place finished burritos in pan.
  • Cover with remaining salsa.
  • Cover the dish with foil and bake for about 30 minutes.
  • Remove foil and sprinkle the rest of the cheese over the burritos.
  • Bake for another 10 minutes or until cheese is melted.

1 cup(s) water
2-3 package(s) burrito seasoning mix
2 can(s) diced green chiles
1 - small onion, grated
2 clove(s) garlic, minced
1 package(s) large flour tortillas
1 package(s) (12 oz.) shredded mexican blend cheese

Steps:

  • Place Roast in slow cooker and add next five ingredients.
  • Cook on low for 12 hours.
  • Shred Beef with a fork.
  • Place a generous amount of shredded beef mixture in the center of a flour tortilla.
  • Fold top and bottom about an inch and roll open end.
  • Place in a 9x13 inch casserole, top with all the cheese and cover loosely with aluminum foil.
  • Bake at 350 degrees for five minutes or until cheese melts. Serve with beans and rice and a dollop of sour cream and/or guacamole!

"WET" SHREDDED PORK BURRITO RECIPE

Steps:

  • Put pork in the slow cooker on low for about 7 hours with a can of enchilada sauce (spiciness to your preference), pull out pork with a slotted spoon and shred with a cake mixer for fast shredding, heat up tortillas and fill with meat and a little bit of juice (you can add rice, beans, onions, etc to your liking), roll burrito and place on oven safe dish, add more juice and shredded cheese, bake until melted, add more juice if desired. Serve with Rice, beans, chips, salsa. Enjoy!
