Easy, cheesy, sausage and rice stuffed bell peppers - just five ingredients and ready in 20 minutes for the perfect weeknight meal!

8 bell peppers (tops cut off and seeds and membranes removed)
1 pound mild or spicy ground Italian sausage (for alternative protein options, see notes)
3 cup uncooked Spanish style rice (or white rice, see note)
1 ½ cups water
1 15-ounce can fire roasted diced tomatoes
1 cup shredded Mexican blend cheese
cilantro or green onions for topping (optional)

Steps:

  • Preheat oven to 375 degrees. Grease a large baking dish and arrange bell peppers standing up. (If they want to tip over you can always cut off the very bottom 1/8 of an inch or so to flatten them out and help them stand!) Transfer to preheated oven and allow to cook for 10-15 minutes until tender. (Move ahead with Step 2 while peppers are baking!)
  • In a large pan over medium-high heat, cook sausage for 5-6 minutes, breaking apart with a spatula or spoon as it cooks, until well browned. Use a slotted spoon to transfer sausage to a platter, cover to keep warm, and set aside.
  • Add rice, water, and tomatoes to the pan, give it a good stir, and bring to a boil. Reduce to LOW, cover, and cook for 20 minutes, stirring occasionally.
  • Stir sausage and 1/2 cup of the cheese into the pan. Spoon mixture into the baked peppers and top with remaining cheese.
  • Bake for 5 minutes or until cheese is melted. Top with green onions or cilantro if desired and serve.

1 pound lean ground beef (, 90% lean)
1 medium onion (, diced (about 1 1/2 cups))
2 ribs celery (, diced (about 3/4 cup))
2 cloves garlic (, minced)
1 large Select One tomato (, chopped)
2 tablespoons tomato paste
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon kosher salt
1 15- ounce can black beans
1 7- ounce can roasted green chiles
1 cup frozen corn (, defrosted)
1 1/2 cups cooked long grain rice
1/4 cup cilantro leaves (, chopped plus more for garnish)

1 cup spicy cheese such as Chipotle Gouda or Pepper Jack

Steps:

  • Preheat the oven to 350°F.
  • Brown the ground beef in a large fry pan over medium high heat for 5 minutes or until cooked almost through. Add the chopped onion, celery, and garlic and cook until vegetables are softened, about 5 minutes. Stir in the diced tomato, tomato paste, cumin, chile powder and kosher salt and cook for another 4-5 minutes. Stir in the black beans, green chiles, corn, cooked rice and chopped cilantro.
  • Meanwhile, cut off the tops of the peppers and spoon out the ribs and seeds, then rinse. Lightly sprinkle the inside of the peppers with kosher salt and place in a microwave safe dish with ¼ cup water. Cover with plastic wrap and microwave for 5 minutes or until they start to soften.
  • Transfer to a 3 quart baking dish and fill the peppers with the hot meat and rice mixture. Sprinkle the tops with cheese and bake for 20 minutes or until peppers are tender and cheese is browned. Garnish with additional chopped cilantro. Serve hot.

1 lb lean ground beef
1/4 cup chopped onion
1 (1 1/4 ounce) package taco seasoning mix
1 egg, beaten
2 cups cooked rice
4 -6 bell peppers
1 (19 ounce) can diced tomatoes
1 (15 -16 ounce) jar salsa
shredded cheddar cheese
sour cream

Steps:

  • Combine beef, onion, seasoning mix and egg in a large bowl.
  • Add rice and mix well.
  • Cut peppers in half lengthwise; remove seeds and membrane.
  • Spread tomatoes on the bottom of an ovenproof 12 X 9 inch baking dish. The liquid from the tomatoes will reduce during cooking so if (like me) you like lots of sauce, add about a cup of water. This also helps make the peppers softer.
  • Place peppers, cut side up, on top of the tomatoes.
  • Spoon beef mixture into peppers, mounding as necessary.
  • Top each pepper with salsa.
  • Bake in preheated 375°F oven for 40-45 minutes or until beef is cooked thoroughly and peppers are soft.
  • Cover each pepper with cheese and return to oven, under the broiler, until the cheese melts- less than a minute, so watch carefully!
  • Serve with sour cream and additional salsa.

2 lbs ground beef
1 medium onion, chopped
1 small green pepper, chopped
2 garlic cloves, minced
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 (10 ounce) can ro-tel tomatoes and green chilies
1 (14 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
3 3/4 cups water
1 tablespoon cumin
3 cups cooked rice (instant)
4 medium green peppers
1 1/2 lbs cheddar cheese or 1 1/2 lbs monterey jack cheese
1 (10 ounce) can ro-tel tomatoes and green chilies

Steps:

  • In a large kettle, cook beef, green pepper, garlic, salt, and pepper until beef is browned; drain. Add Ro-Tel, tomatoes, tomato sauce, water, and cumin.
  • Simmer uncovered, for 10 minutes. Stir in rice; simmer, uncovered, for 5 minutes. Remove from the heat; cover and let stand 5 minutes.
  • Remove tops and seeds from the peppers; cut in halves lengthwise. Place in a large pot of boiling water; boil for 4 minutes. Drain peppers and stuff with meat mixture. Place any remaining meat mixture in an ungreased 9x13x2 inch baking dish; top with stuffed peppers, pressing down gently.
  • Cover and bake at 350 for 1 hour.
  • In a saucepan, heat remaining Ro-Tel and cheese, stirring until cheese is melted. Serve over peppers.
