WESTERN DRESSING
This dressing can also be used as a marinade for meats. From "Cooking a la Heart"- Delicious heart healthy recipes from the Mankato Heart Health Program. When I was little, the only time I had salad was at my grandma's house, and it could only be with Western dressing. Ok, that still holds true. But still, I figure a home made version of the dressing would be pretty cool! Oh, and have you ever tried just putting some ketchup on a bowl of salad? It's great- (Just don't put too much on- less than a tablespoon is perfect for a bowl).

- In a jar with a tightly-fitting lid, combine ketchup, oil, sugar, lemon juice and pepper.
- Cover and shake vigorously.
- Add vinegar, and onion, if desired.
- Shake again.
- Refrigerate.
- Shake well before each use.

HOMEMADE WESTERN STYLE SALAD DRESSING
I found a recipe on cooks.com and tried it. It had a flavor very close to the name brand stuff in the store, but I thought it was a bit too thin.The second time I made it, I had to substitute rice vinegar for the cider vinegar and I messed around with it until it was to my liking. I think I prefer it with rice vinegar, although if you don't like rice vinegar you might not like this dressing made with it. Use cider vinegar (1/4 cup) instead. Xanthan gum is an emulsifier and is derived from corn so people with corn allergies probably can't have it. But, it gives it that "store bought" consistency and does not affect the flavor. Xanthan gum can usually be found in supermarkets, either in the "gluten free" section or baking aisle. Bob's Red Mill makes it. Co-ops and natural foods stores should carry it as well.

- I just whisk this up in a pint sized mason jar, but you could also use a blender, hand mixer or stick blender. Combine wet ingredients. In a small bowl (if mixing by hand) combine dry ingredients, then add to wet ingredients and whisk vigorously until well combined. If you like it thicker, add a little more xanthan gum (*a little goes a long way so be careful!). Store in the refrigerator.
- *I had a bit of trouble with the xanthan gum clumping when whisking by hand. I will try dissolving it in the vinegar first next time, or making it in the blender.

WESTERN DRESSING STEAK MARINADE
I know some of you will think I am *crazy* but this is really one of the best ways to grill steak! Yes the red WESTERN DRESSING! It doesn't leave a sweet taste, just really tenderizes the steaks and leaves a great flavor. I promise you will like it! I was skeptical at first too, but now this is fixed at least once a week at my house in the summer! We *love* it! Prep time is for marinating.

- Cut steak into serving size pieces (or leave whole, depending on steak used).
- Put steak and salad dressing in zip lock bag; let marinate for several hours to overnight (the longer the better),Turn the bag occasionally.
- When ready to cook, grill over hot coals and sprinkle with season salt of your choice.
- Grill until it is to your liking (mine is medium well).
- Serve and ENJOY!
