Chicken Sausage, Mushroom and Pasta Casserole -- Weight Watchers Recipe - (4.4/5) image

Number Of Ingredients 13

2 sprays cooking spray
12 ounces uncooked whole-wheat pasta, rotini suggested (about 3 cups)
1 teaspoon olive oil, extra-virgin
1/2 cup Panko breadcrumbs
2 tablespoons Parmesan cheese, grated, Parmigiano-Reggiano suggested
1 teaspoon dried oregano
8 ounces cooked chicken sausage, Italian-variety, thinly sliced
1 medium yellow pepper, thinly sliced
1 medium uncooked, onion, chopped
1 pound fresh mushroom, sliced
2 tablespoons water
4 cups marinara sauce
1 cups part-skim mozzarella cheese, shredded

Steps:

  • Preheat oven to 350°F. Coat a 9- X 13-inch baking dish with cooking spray. Cook pasta according to package directions; drain pasta and return to pot. Meanwhile, heat oil in a large nonstick skillet over medium heat. Add breadcrumbs and reduce heat to medium-low; cook, stirring often, until toasted, about 4 minutes. Remove breadcrumbs to a small bowl; stir in Parmesan and oregano and set aside. In same skillet, cook sausage over medium-high heat, stirring frequently, until browned, about 5 minutes; remove to a plate and drain any fat from skillet. Add pepper and onion to skillet; cook over medium-high heat, stirring frequently, until vegetables start to brown and soften, about 5 minutes. Add mushrooms and water to skillet; cook, stirring frequently, until vegetables are tender, about 8 minutes. Add vegetables, sausage and marinara sauce to pot with drained pasta; toss to coat. Spoon into prepared baking dish and sprinkle with mozzarella and reserved breadcrumbs. Bake until heated through and cheese melts, about 25 minutes. Slice into 8 pieces and serve. Yields 1 piece per serving (about 1 1/2 cups). Make ahead tips: Assemble the casserole as directed but set aside the mozzarella cheese, 1/2 cup of the sauce and the breadcrumbs. Wrap the casserole tightly with plastic wrap and refrigerate up to 2 days. When ready to bake, let the casserole come to room temperature and then drizzle with the reserved sauce. Sprinkle with the cheese and breadcrumbs and bake as directed above. Place your casserole under the broiler for a minute after it's finished cooking, if you prefer your casseroles well-browned.

This is the first Weight Watchers recipe I've used, and, boy, am I glad I did! The stew is SO tasty and easy. Even better, the recipe can be modified according to what you have on hand. For instance, I used spinach instead of broccoli rabe and a small white onion since in the place of the red, and instead of the Italian sausage, I used kielbasa. I also added lots of red pepper flakes and some cayenne, too. So have fun with this recipe! I can hardly wait to hear what you think of it.

1 tablespoon olive oil
1/2 lb Italian turkey sausage, casing removed
1 red onion, minced
3 garlic cloves, minced
1 teaspoon dried basil leaves, crumbled
salt, to taste (use seasoned salt if you like)
black pepper, to taste
1 bunch spinach or 1 bunch kale
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can white beans, drained and rinsed
2 tablespoons grated parmesan cheese (optional)

Steps:

  • In a stockpot or large nonstick skillet, heat the oil.
  • Crumble the sausage into the skillet, and cook, breaking apart with a wooden spoon, until browned, about 8 minutes. (NOTE: If you're using kielbasa, just saute briefly until it browns).
  • Add the onion, garlic, basil, salt, and pepper, stirring as needed, until fragrant, about 2 minutes.
  • Stir in the broccoli rabe, tomatoes and beans; cook until the broccoli rabe is wilted, about five minutes. (If you're using fresh spinach, it will wilt! I promise.
  • Just cover it with the bean and sausage mixture and let it cook for about 5 minutes).
  • Top with cheese if desired and serve.

6 oz fully cooked sausage
1 package of sliced white mushrooms
1 zucchini, halved and sliced
1 (15 1/2oz) can red kidney beans, rinsed and drained
1 (14 1/2oz) can diced tomatoes
1 (8oz) can tomate sauce
1/4 cup of water
1 tsp garlic and herb seasoning
2 cups baby spinach

Steps:

  • 1. Spray a large nonstick skillet with nonstick spray and wet over high heat. Add the sausages, mushrooms, and zucchini; cook, stirring until lightly browned, about 5 minutes. 2. Stir in all the remaining ingredients except the spinach and bring to a boil. Reduce the heat and simmer about 2 ninutes. Add the spinach, stirring gently until it wilts, about 1 minutes. Server over barley.
