Steps:
- Cook and drain pasta according to package directions.
- In large skillet saute green onions. Add 1 cup of broth. Combine 1/2 cup broth with cornstarch and set aside.
- Add crab meat and red peepers and creole seasoning. Bring to a boil. Add cornstarch stock and simmer until thickened. Add half and half and simmer 3 minutes.
- Serve sauce over fettucine.

WEIGHT WATCHERS CRAB, RICOTTA & BASIL CANNELLONI
I love this recipe. Only 5 WW points. It is low in fat and tastes great. Chicken can be used instead of crab but will be slightly bland and will need to be minced. If you wish to do this add in some sage or garlic.

Steps:
- Preheat oven to 180°C
- Combine crab, shallots, ricotta, nutmeg, basil and egg in a bowl. Season with salt and pepper.
- Use a teaspoon to spoon filling into the cannelloni shells. Pour 1/2 cup pasta sauce over the base of a 1.5L (6 cup) capacity oven proof ceramic dish. Arrange cannelloni on top.
- Pour over the remaining pasta sauce and sprinkle with mozzarella. Cover with foil and bake for 20 minutes. Remove foil. Bake for a further 10 minutes or until pasta is tender and cheese is golden. Serve.

Steps:
- In a 10-inch nonstick skillet, heat 2 teaspoons butter until bubbly and hot; add broccoli, mushrooms, and onion and cook, stirring quickly and frequently, until vegetables are tender crisp.
- Using a slotted spoon remove the vegetables from skillet and set aside. In same skillet, heat last 2 teaspoons of butter until hot. Sprinkle butter with flour and stir quickly to combine; cook, stirring occasionally, for 1 minute.
- Gradually stir in milk; cook over medium heat, stirring constantly, until mixture is smooth and thickened.
- Add cheese and cook, stirring frequently, until just melted. Return sauteed vegetables to skillet; add crabmeat, shrimp and linguine and toss to combine.
- Reduce heat to low and cook until thoroughly heated. Sprinkle with salt and pepper and stir to continue.

Steps:
- Cook fettuccine according to package directions.
- Meanwhile, over medium heat melt the butter in a small saucepan.
- Add garlic and green onion, cook until onion and garlic are lightly cooked, about 2 to 3 minutes.
- Add the flour and salt, stir to blend.
- Lightly brown the flour, add chicken broth, half-and-half, parsley and creme fraiche.
- Stir in Emeril's Essense and crab, stir to blend.
- Turn heat down to low and simmer, stirring frequently until crab is thoroughly warmed and sauce thickened.
- Serve sauce over cooked fetuccine and grate Parmesan Reggiano cheese over all.
- Serve immediately.
