Bob W's Ham and Sausage Muffins image

Came by this in a book called A Skillet full..I made a few minor changes to this..It is a big hit with my boys...

Number Of Ingredients 13

3 tablespoon(s) real butter
2 clove(s) garlic,minced
1/2 cup(s) bell pepper,choped fine
1/2 cup(s) onion,diced fine.
1 cup(s) chopped ham.
1 cup(s) cooked sausage,chopped
1/2 cup(s) bacon, cooked,chopped.
1 cup(s) yellow cornmeal
1 1/4 cup(s) flour
2 teaspoon(s) baking soda
1 teaspoon(s) salt
2 large eggs
2 cup(s) buttermilk.

Steps:

  • In a cast iron skillet cook peppers,garlic, and onion till soft..Remove and set a side.. In a large mixing bowl shift cornmeal,flour,soda and salt.. In another mixing bowl beat eggs and stir in buttermilk..
  • add egg mixture to flour mix stirring untill blended..Do not over stir.. Now fold in ham,bacon,sausage,peppers,onions,and garlic and any butter left in skillet..
  • Spray a muffin pan with cooking spray. Fill muffin pan abought 2/3 full..Bake in pre-heated oven at 400 for 30-35 minutes.Makes abought 24 muffens.
