I made this for Russ and me the other night and was very pleased with the result. We ate it over horseradish mashed potatoes. I cooked this in our electric frying pan (skillet), but you could do it on the stove top on low.

2 tablespoons oil
3 onions, sliced
3 garlic cloves, crushed
100 g pancetta, cut into small dice
2 red chilies, chopped finely
800 g diced beef (we used a blade roast)
2 green capsicum, sliced (bell peppers)
1 (400 g) can chopped tomatoes
1/2 cup white wine
1 cup water
3 teaspoons sweet paprika
1 teaspoon smoked paprika (if you don't have it use sweet)
1 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Heat the oil and cook the onions, garlic and pancetta until the onions are soft (about 10 minutes).
  • Add the chilies and beef and cook until the beef changes colour and browns a little.
  • Add the remaining ingredients and cook on a low setting (just simmering) for 1 ½ hours or until very tender. Add a little extra water if it ever looks like catching.

Low fat, stove top cooking. Goes well with mashed potatoes, jacket baked potatoes, rice, pasta or noodles.

500 g lean stewing beef (In NZ I use topside steak)
1 large onion (roughly chopped)
2 garlic cloves (peeled and finely chopped)
2 cups mushrooms (roughly chopped)
2 tablespoons tomato paste
1 tablespoon paprika
1 1/2 cups water
1/2 teaspoon beef stock powder
1 tablespoon cornflour
2 tablespoons water

Steps:

  • Remove any fat from the meat and cut into cubes.
  • Brown in a little hot oil. Do this in batches to keep from 'stewing'.
  • Return all meat to pan and add onion, garlic, mushrooms, tomato paste, paprika, stock powder and first measure of water.
  • Cover and simmer gently for 1-11/2 hours or until the meat is tender.
  • Mix the cornflour with the 2 Tbsp water and stir into the beef.
  • Heat for a few minutes until thickened.
  • Serve sprinkled with chopped parsley if liked.

This has got to be one of the best marinades I have used. Best part....it has no oil!!! The ingredients balance out each other so nicely that it is such a pleasure to taste. I make it up alot in the summer when the mint from my garden is plentyful. This recipe could be used on pork tenderloin quite successfully. This is 7 points per serving

2 tablespoons orange juice
2 tablespoons soy sauce
2 tablespoons brown sugar (or Splenda)
1 tablespoon lime juice
1 tablespoon garlic and red chile paste
1 tablespoon ginger, minced
1 tablespoon of fresh mint, chopped
1 tablespoon garlic, minced
4 skinless chicken breasts, trimmed of fat (or 2 pork tenderloin)

Steps:

  • Combine the ingredients in a zip lock bag. Add chicken and marinate for up to 3 days.
  • Note: The recipe originally was double the amount. You could make up the full recipe and add half to the chicken and half to a pork tenderloin and freeze for a later date.

This delicious sauteed beef is weight watcher friendly & has 6 FPs per serve. I like to serve it with no yolk noodles.

8 ounces beef round steak, cut into thin strips
1 cup onion, thinly sliced
1 cup mushroom, thinly sliced
1 garlic clove, crushed
1/2 cup nonfat beef broth
1 tablespoon tomato paste
2 tablespoons paprika
1 teaspoon grapeseed oil
1/2 cup nonfat sour cream

Steps:

  • Heat a non-stick fry pan.
  • Add oil and saute the beef til browned, remove and set aside.
  • Add the onions, garlic and mushrooms. Saute for 3 minutes.
  • Add the paprika and saute a further minute.
  • Return the beef to the pan, add the beef broth and tomato paste. Bring to boil and simmer lightly 5 minutes.
  • Remove the pan from the heat add the sour cream.
  • Over low heat, gently bring to a simmer but do not boil.
  • Season to taste with salt and pepper.
