I grew up eating a very yummy, but very fattening version of banana bread. Since starting Weight Watchers, I wanted to recreate the same type of bread without all the fat as well as incorporating whole grains. I actually prefer to make these as muffins so I have the perfect portion size every time. Each muffin or serving is 2 WW points.

4 medium bananas, very ripe
1 tablespoon canola oil
3 tablespoons unsweetened applesauce
1 egg, beaten
3/4 cup whole wheat flour
1/2 cup all-purpose white flour
1/4 cup wheat bran
1/4 cup rolled oats
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350 and prepare muffin tins with liners or grease 2 loaf pans.
  • In a large bowl, mash the bananas with the baking powder. Set aside.
  • In another bowl, combine the flours, wheat bran, baking soda, salt, cinnamon and nutmeg. Set aside.
  • Stir the egg, applesauce and canola oil into the banana mixture.
  • Add dry ingredients to wet in three batches. Folding to combine.
  • Stir in oats.
  • For muffins- measure out 1/4 c of batter for each muffin- bake for 25-30 minutes.
  • For loaves, split between loaf pans- bake for 40-50 mins or until an inserted toothpick comes out clean.
  • Allow to cool for 10 mins on a wire rack before serving.

When I substituted some of the butter with applesauce in a previous recipe, it actually made the bread more moist. I put one loaf in the freezer, but had to take it out within 24 hours because the first was devoured!

4 very ripe bananas
1 1/2 cups all-purpose flour
1 cup white sugar
2 tablespoons butter, softened
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
2 tablespoons applesauce

Steps:

  • Mash bananas in a bowl.
  • Add all other ingredients and mix well.
  • Pour into 2 greased loaf pans (or you can pour it all into one, but it rises enough that you can split it in half).
  • Bake at 350 degrees for 50 to 60 minutes, or until toothpick inserted into center of cake comes out clean.

FANTASTIC LOW-FAT BANANA BREAD

You will not even notice that this is a low fat recipe, it is that good! One loaf yields 24 slices with 60 calories each and 1 gram of fat for every slice. Add in chopped nuts if desired but that will increase the the calories. Make a fat-free glaze using 1/2 cup powdered sugar mixed with 2-4 teaspoons fat-free milk then drizzle over warm bread. The batter can also be baked in four 4 x 2-inch mini loaf pans, for 30-35 minutes, these freeze very well! 2 eggs can be replaced with the egg substitute.

1 1/4 cups sugar
1/4 cup applesauce
1/4 cup margarine or 1/4 cup butter
1/2 cup egg substitute
1 cup mashed ripe banana (about 3-4 medium)
1/2 cup low-fat buttermilk
1 teaspoon maple extract or 1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnuts (optional)

Steps:

  • Set oven to 350 degrees (set oven rack to second-lowest position).
  • Grease bottoms only of two 8 x 4-inch loaf pans (if desired you can line the bottoms only of the pans with parchment paper, although baking time will need to be increased).
  • In a large bowl using an electric mixer at medium speed mix togther the sugar, applesauce, egg substitute, margarine or butter and maple extract until well blended.
  • Add in the mashed bananas and buttermilk; beat until smooth.
  • In a small bowl mix together flour with baking soda and salt; add to the creamed mixture; stir with a wooden spoon until JUST blended (do not over mix!).
  • Add/mix in nuts (if using).
  • Divide the mixture between the two pans.
  • Place both pans directly in the MIDDLE of the oven on the oven rack leaving a couple inches between the pans.
  • Bake for about 1 hour or until the loaves test done.
  • Cool 10 minutes in pan then loosen the sides of loaves and remove from pans.
  • Cool completely before slicing.

⅔ cup white sugar
¼ cup margarine, softened
2 eggs
1 cup mashed bananas
¼ cup water
1 ⅔ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
  • In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
  • Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
  • Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.

1/2 cup natural applesauce
3/4 cup all-purpose flour

  • In a mixer, mash bananas, add Splenda and mix.
  • Mix in rest of indgredients.
  • Pour ingredients into a bread pan sprayed with non-stick spray.

  • Remove from pan and cool on a wire rack.
  • *If using a dark coated pan, bake at 325 degrees and bake a little longer; cake tester to should come out clean when done.
