HAWAIIAN WEDDING CAKE COOKIES

Number Of Ingredients 7

1/2 cup butter, softened
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup finely chopped macadamia nuts, toasted
2 tablespoons finely chopped candied pineapple
Additional confectioners' sugar

Steps:

  • In a small bowl, cream the butter, confectioners' sugar and vanilla until light and fluffy. Gradually add flour and mix well. Stir in nuts and pineapple. Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets. , Bake at 350° for 14-16 minutes or until lightly browned. Remove to wire racks to cool completely. Roll cooled cookies in additional confectioners' sugar.

3 1/2 cups all-purpose flour, plus some for dusting
1/2 teaspoon salt
2 teaspoon baking powder
2 sticks unsalted butter, room temperature
1 1/2 cups granulated sugar
2 extra-large eggs
1 1/2 teaspoons vanilla extract
Royal icing, fondant, or cookie glaze, for decorating

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, whisk together flour, salt, and baking powder. In a large mixing bowl, combine the butter and sugar with a hand mixer until fluffy, about 2 minutes. Add the eggs, 1 at a time. Add the vanilla and mix well. Add the flour mixture and mix with a spatula until a ball of dough forms. Transfer dough to a well floured work surface and cut in half. Place waxed paper over half of the dough and roll out to about 1/4-inch thick. Transfer the other half of the dough to the refrigerator to keep cold until ready to use. Using cookie cutters, cut the dough into various shapes and put on a parchment lined cookie sheet. Repeat with the other half of the dough. Bake for 11 to 13 minutes. Leave on the cookie sheet to cool. Decorate with royal icing, fondant, or cookie glaze.

Shape into 1-inch balls; place 2-inches apart on ungreased cookie sheets. Bake at 350 degrees for 14-16 minutes or until lightly browned. Remove to wire rack to cool completely. Roll in addirional powdered sugar. Makes 1 1/2 dozen.

That is what it was called when my friend gave it to me, but I think they are secretly just sugar cookies. But they were delicious! I didn't want to be stuck with all of the cookies, so we brought them around to our friends and neighbors to enjoy!

COOKIES
3 1/2 c flour
1/2 Tbsp salt
2 tsp baking powder
2 stick unsalted butter, room temperature
2 eggs
1/2 tsp vanilla extract
ICING:
milk
powdered sugae

Steps:

  • 1. COOKIES:
  • 2. Preheat oven to 350 degrees.
  • 3. Whisk together flour, salt, and baking powder in a medium bowl.
  • 4. In a seperate, larger, bowl, combine butter and sugar with an electric mixer until fluffy, about 2 minutes.
  • 5. Add eggs one at a time, mixing well in between.
  • 6. Transfer half of dough onto a well-floured surface. Roll one half of dough untill about 1/4 inch thick (I don't expect you to break out the ruler, don't worry). Store other half in fridge.
  • 7. Using cookie cutters, cut dough into shapes (or wedding cakes) and put on other cookie sheet. The recipe my friend gave me didn't say to grease the sheet, so I didn't, but some of the cookies stuck. I got them up easily ehough with a knife though, so it is up to you.
  • 8. Repeat step 7 with other half of dough.
  • 9. Bake 11-13 minutes. I baked them 9, and the ones on the dark pan were slightly burnt, but nothing to cry about. I suggest you put it on for short intervals, and check them in between.
  • 10. ICING:
  • 11. Put confectioners sugar and milk into a bowl, and mix. These instructions are very vague because amounts depend on how many cookies you make.
  • 12. To make them more fun, put a little icing into small bowls and make funky colors. We (me and my decorating team, A.K.A the kids + friends) ended up with orange, purple, green, light/pinkish red, green, and a pretty blue/green color.
  • 13. ENJOY YOUR DELICIOUS SUGAR COOKIES IN DISGUISE!!! (or are they?????)
