This patriotic cake is so simple and so versatile! To make this cake easy to take, you can frost and decorate it right in the pan.

1 box Betty Crocker™ Super Moist™ yellow cake mix
Water, vegetable oil and eggs called for on cake mix box
1 container Betty Crocker™ Rich & Creamy vanilla frosting or Betty Crocker™ Whipped vanilla frosting
1/3 cup fresh blueberries
1 pint (2 cups) fresh strawberries, stems removed, strawberries cut in half

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Make and bake cake mix as directed on box for 13x9-inch pan. Cool 10 minutes. Run knife around sides of pan to loosen cake; remove from pan to cooling rack. Cool completely, about 1 hour.
  • Place cake on tray. Frost top and sides of cake with frosting.
  • For flag design, arrange blueberries on upper left corner of frosted cake to create stars; arrange strawberries in rows over frosted cake to create stripes. Serve immediately. Store covered in refrigerator.

Nonstick cooking spray, for the pan
2 1/2 cups all-purpose flour
1/3 cup stone-ground white cornmeal
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 cups granulated sugar
2 sticks (1 cup) unsalted butter, at room temperature
5 large eggs, at room temperature
1 tablespoon pure vanilla extract
1 cup buttermilk
3 tablespoons rainbow or red, white and blue sprinkles
3 sticks (1 1/2 cups) unsalted butter, at room temperature
1/4 teaspoon kosher salt
3 ounces chopped white chocolate, melted and cooled slightly
6 cups confectioners' sugar
1 1/2 teaspoons pure vanilla extract
1 cup blueberries
One 16-ounce container strawberries
1 tablespoon apple jelly or apricot jam, melted

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Coat a 9-by-13-inch rectangular baking pan with nonstick cooking spray. Line the bottom of the pan with parchment paper and coat again with the spray.
  • Combine the flour, cornmeal, baking powder, baking soda and salt in a small bowl. Whisk together and set aside.
  • Beat the granulated sugar and butter in a large bowl with an electric mixer on medium-high speed until smooth and fluffy, about 3 minutes. Beat in the eggs, 1 at a time until combined, then beat in the vanilla. Reduce the speed to low and beat in one-third of the flour mixture until just combined. Beat in half the buttermilk and then repeat, adding the flour in 2 more increments and alternating with the second half of the buttermilk. Stir in the sprinkles. Transfer to the prepared pan and spread the batter evenly. Bake until the cake is golden brown and the top springs back to a light touch, 30 to 35 minutes. Cool 15 minutes in the pan.
  • Run a small knife around the edges of the cake to release the sides and turn the cake out onto a baking sheet. Remove the parchment paper and then flip again onto a serving platter or cutting board so the top of the cake is back on top. Cool completely before frosting.
  • For the frosting: Beat the butter and salt in a large bowl with an electric mixer on medium speed until fluffy. Add the white chocolate and beat until fluffy. Gradually beat in the confectioners' sugar and vanilla. Increase the speed to medium-high and beat until very smooth and fluffy.
  • Transfer 1/2 cup of the frosting to a pastry bag fitted with a small rosette tip. Frost the top and sides of the cake with the remaining frosting.
  • For the garnish: Place the blueberries in 6 rows of 6 berries each in the top left-hand corner of the cake. Trim and halve the strawberries lengthwise and make 4 rows of strawberries across the cake. Pipe stars between the blueberries and use the remaining frosting to pipe a border around the bottom of the cake. Brush the berries with the melted jelly. Cut and serve.

For the cake:
1 cup boiling water
3/4 cup natural unsweetened cocoa powder
1 tablespoon instant coffee granules
1/2 cup whole milk
1 1/2 teaspoons pure vanilla extract
2 cups all-purpose flour, plus additional flour for dusting pan
1 1/4 teaspoons baking soda
1/2 teaspoon salt
2 sticks (1/2 pound) unsalted butter, softened, plus additional butter for greasing pan
1 cup packed light brown sugar
1 cup sugar
4 large eggs
For the frosting:
2 (8-ounce) packages cream cheese, at room temperature
2 sticks (1/2 pound) unsalted butter, at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/2 cups confectioners' sugar, sifted
For the decorations:
1 1/2 pints raspberries (about 3 cups total)
1/2 pint blueberries (about 1 cup total)
Equipment: 13- by 9-inch metal baking pan, stand mixer fitted with the paddle attachment, pastry bag, star-shaped pastry tip (such as Wilton #2110)

Steps:

  • Make the cake:
  • Position a rack in the middle of the oven and preheat to 350°F.
  • Butter the bottom and sides of a 13- by 9-inch metal baking pan and line the bottom with wax or parchment paper. Butter the paper and dust the pan with flour, knocking out any excess.
  • In a medium bowl, whisk together the boiling water, cocoa powder, and instant coffee granules until smooth. Whisk in the milk and vanilla.
  • In a second medium bowl, sift together the flour, baking soda, and salt.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the butter with both sugars and beat on medium until light and fluffy, about 3 minutes. Add the eggs, one at a time, and beat on medium until fully incorporated. Reduce the speed to low and add the flour and cocoa powder mixtures in batches, beginning and ending with the flour mixture. (The batter may look curdled.) Pour the batter into the prepared pan, smoothing the top, and bake the cake until a wooden toothpick inserted in the center comes out clean and the cake begins to pull away from the sides of the pan, 35 to 40 minutes. Let the cake cool in the pan on a rack for 10 minutes, then invert the cake onto the rack, remove the wax or parchment paper, and let it cool completely. DO AHEAD: The unfrosted cake, can be cooled, wrapped securely in plastic wrap, and stored at room temperature up to 24 hours, before assembling and serving.
  • Make the frosting:
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the cream cheese and butter and beat until creamy and smooth, 3 to 5 minutes. Beat in the vanilla extract. With the mixer on low, add the sifted confectioners' sugar in three batches, mixing until fully incorporated. Increase the speed to medium-high and beat until the frosting is smooth. Chill the frosting in the refrigerator for 30 minutes before assembling the cake.
  • Assemble and serve the cake:
  • Frost the top and sides of the cake with 2 1/2 cups of the frosting. Transfer the remaining frosting to a pastry bag fitted with the star tip.
  • Using a toothpick or small knife, outline a 4 1/2-inch-long by 3 1/2-inch-wide rectangle in the top left corner of the cake. This area will be reserved for blueberries.
  • Starting with the longer side of the cake that is closest to you, pipe a line of frosting along the top edge of the cake then arrange two horizontal rows of raspberries directly above the line of frosting. Pipe a second line of frosting above the raspberries and arrange two more horizontal rows of raspberries directly above the frosting. Repeat this process two more times, making sure to exclude the top left corner that is reserved for the blueberries. Arrange the blueberries in horizontal rows in the top left corner of the cake.
  • Slice and serve the cake immediately or store it, covered securely in plastic wrap, in the refrigerator until ready to serve.

Get into the Fourth of July spirit with this patriotic cake. Fresh strawberries and blueberries, amped up with their respective jams, and rich buttercream frosting form the red, white, and blue buttermilk layers.

2 sticks unsalted butter, room temperature, plus more for pans
3 cups unbleached all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon coarse salt
2 cups sugar
4 large eggs, room temperature
1 1/2 teaspoons pure vanilla extract
1 1/4 cups buttermilk
1 cup very thinly sliced strawberries
1/4 cup strawberry jam
1 cup small fresh blueberries
6 tablespoons blueberry jam
1 recipe Swiss-Meringue Buttercream for Wavy Flag Cake

Steps:

  • Preheat oven to 350 degrees. Butter two 8-by-2-inch round cake pans; line with parchment rounds and butter parchment. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  • With a mixer on medium speed, beat butter until softened, 2 minutes. Add sugar; continue beating until pale and fluffy, 4 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
  • Reduce speed to low and slowly add flour mixture in 2 batches, alternating with buttermilk and beginning and ending with flour mixture; beat just until incorporated.
  • Divide batter evenly between prepared pans. Bake, rotating halfway through, until cakes are golden brown and a tester inserted into centers comes out clean, 35 to 45 minutes. Transfer pans to a wire rack; let cool 15 minutes. Turn out cakes onto racks and let cool completely.
  • In a bowl, combine strawberries with strawberry jam. In another bowl, combine blueberries with blueberry jam.
  • With a large serrated knife, trim cake tops level; split each cake in half horizontally. Fill a small pastry bag with 1/2 cup buttercream; cut a 1/4-inch tip. Transfer one layer to a cake stand or platter. Pipe a circle of buttercream around outside of cake (to keep blueberry mixture from spreading out), then spread blueberry mixture evenly inside circle. Place another cake layer on top; spread evenly with 1 cup buttercream. Place a third cake layer on top; pipe a circle of buttercream around outside of the cake, then spread strawberry mixture evenly inside circle. Place remaining cake layer on top. Spread buttercream over top and sides of cake to form a crumb coat; refrigerate until firm, about 30 minutes. Spread remaining buttercream over top and sides of cake, using an offset spatula to smooth sides and create swirls on top.
